Meyer Lemon Cheesecake with Creamy Lemon Curd image

This luscious New York style Meyer lemon cheesecake is topped with a creamy and froth lemon curd that isn't too sweet or too tart!

1.5 cups graham cracker crumbs
6 Tablespoons melted butter
butter (for coating the pan)
2 pounds cream cheese (softened)
1 cup granulated sugar
1 Tablespoon cornstarch
1/4 teaspoon salt
1/2 cup sour cream
1/4 cup lemon juice
2 lemons (zested)
1 teaspoon pure vanilla extract
4 eggs
3 lemons (zested)
1 cup lemon juice
1/2 cup granulated sugar
4 eggs
4 egg yolks
8 Tablespoons unsalted butter
salt (to taste)

Steps:

  • Zest the lemons into a medium sized glass bowl and set a fine-mesh strainer on top.
  • Whisk the eggs, egg yolks and sugar in a small glass bowl that fits over a pot filled with a few inches of water. Bring it to a low simmer and place the bowl on top.
  • Whisk the eggs constantly, trying not to splash the mixture up onto the sides*. Whisk until mixture has thickened, coats the tines of the whisk, and reaches about 170°F.
  • Remove the lemon curd from heat and stir in butter one tablespoon at a time, stirring each time until fully incorporated.
  • Stir in the lemon juice and immediately transfer the mixture to the fine-mesh strainer. Strain into a bowl and let cool for at least 10 minutes before covering and transferring to the fridge to chill.
  • Preheat oven to 375°F.
  • Rub the inside of a 9-inch springform pan with butter until lightly coated. Stir together the graham crackers and melted butter and use the bottom of a measuring cup to press it into the bottom of the pan.*
  • Bake for 8-10 minutes or until fragrant and golden brown. Let cool completely.
  • Change the oven temperature to 350°F and set the wire rack into the lower third of the oven.
  • Place two long sheets of aluminum foil in a cross shape on your work surface. Wrap the foil up around the bottom edges of the springform pan to help prevent water from getting in.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese lowest speed you can until it is smooth. Add in the sugar. Beat in eggs one at a time, allowing each to fully incorporate before adding another.
  • Fold in vanilla, lemon juice, cornstarch, salt and sour cream and until combined.
  • Pour in the cheesecake filling into the cooled and prepared springform pan and use a rubber spatula to smooth out the top. Set inside of a baking dish and surround the pan with 1-2 inches of hot tap water. Place into the oven and bake for 55 - 60 minutes, or until the outside edges are firm but the center still slightly jiggles like jell-o.
  • Turn off the oven, crack the oven door and allow to cool in the oven for one hour.
  • Remove the cheesecake from the oven and water bath. Gently run a thin knife around the edges to release the cheesecake from the springform pan's ring, and then transfer to a wire rack to cool completely. Chill in the refrigerator for at least 4 hours before the next step.
  • Just before serving, remove the cheesecake from the springform pan mold and use a small knife or offset spatula to top it with the chilled lemon curd. The cheesecake will stay good uncovered and refrigerated for up to 5 days.

2 pounds cream cheese, at room temperature
1 1/4 cups granulated sugar
Generous pinch kosher salt
1/2 cup sweetened condensed milk
1 1/2 cups heavy cream
1 tablespoon grated fresh ginger
1 teaspoon ground ginger
1 teaspoon vanilla extract
Zest of 2 lemons, minced, plus zest of 1 lemon plus 1 tablespoon lemon juice
6 large eggs
1/3 cup all-purpose flour
1 cup prepared lemon curd
2 tablespoons limoncello liquor
2 tablespoons sour cream
Powdered sugar, for dusting
Fresh basil, chiffonade, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Grease one side of 2 to 3 sheets of parchment paper. Lay them butter-side up inside a 10-inch springform pan, arranging so that they cover all sides, and crimping the edges to ensure they stay in place. Place the springform pan on a sheet tray.
  • In a mixer fitted with the paddle attachment, combine the cream cheese, granulated sugar and salt. Cream on medium-high speed until smooth, about 1 minute. Scrape down the sides.
  • Turn the mixer down to medium and add the condensed milk. Beat to combine, then scrape down the bowl. Add the heavy cream, fresh ginger, ground ginger, vanilla and minced lemon zest. Fully combine, then scrape down the sides.
  • Turn the mixer to medium-high and add the eggs one at a time, being sure that each is fully combined before adding the next.
  • Add the flour, then beat again, scraping down the sides.
  • Pour the cheesecake into the center of the springform pan and tap it lightly on the counter to remove any air bubbles.
  • Bake for 30 minutes, then rotate. Continue to bake until dark golden brown, another 30 to 35 minutes. Allow to cool to room temperature, then refrigerate until completely set, 6 hours.
  • Remove the cheesecake from the pan, then peel down the paper. (You can leave the paper in place for a rustic look.)
  • Mix together the lemon curd, limoncello, sour cream, lemon juice and remaining lemon zest in a bowl.
  • Pour evenly over the top of the cheesecake, then sprinkle with the powdered sugar and garnish with the basil. Cut into slices and serve.

Add butter; cook over medium heat, whisking constantly, until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 170°. Do not allow to boil. Remove immediately to a small bowl; cool completely., Gently spread curd over cheesecake. Refrigerate overnight, covering when completely cooled. Remove rim from pan. 1 stick cold butter, cut into pea size pieces
1/4 cup sugar
1 1/4 cup all-purpose flour, plus extra for rolling dough
1 egg yolk
Pinch salt
2 to 4 tablespoons cold water
3/4 cup freshly squeezed Meyer lemon juice
3 Meyer lemons, zested
1 1/3 cups sugar
5 eggs
Pinch salt
1 1/2 sticks butter, cut into pats
1 pint blueberries
2 tablespoons sugar
2 tablespoons Meyer lemon juice
Special equipment: 1 pound dried beans, 10-inch tart pan

Steps:

  • Preheat the oven to 425 degrees F.
  • For the dough:
  • Put the butter, sugar, flour, egg yolk and salt in a food processor and pulse for 30 to 60 seconds or until the mixture has a grainy consistency, or what I like to call the "Parmesan cheese" stage. Add half of the water and pulse the food processor 2 to 3 times. The dough should start to come together, add the remaining water if needed. Check the consistency of the dough by clenching a small handful in your fist. If the dough stays together it is the proper consistency. If not, pulse the dough with a little more water. When the dough has reached the proper consistency, dump it out on a clean work surface. Using the heel of your hand, schmear the dough straight forward and roll it back with your fingertips. Repeat this process 1 to 2 more times, dust with flour if needed. Form the dough into a disk, wrap in plastic wrap and refrigerate for at least 30 minutes.
  • On a lightly floured work surface, roll the dough out to 1/8 to 1/4-inch in thickness. Lay the dough in the tart pan. Push the dough into the sides of the tart pan by rolling a small scrap of dough into a ball and pushing it into the dough. Roll over the top edge of the tart pan with the rolling pin to cut the extra dough from the pan and create a crisp edge. Cover the dough with aluminum foil and gently poke the foil into the side edges to fit the pan. This will help to keep the sides of the tart tall and straight as it cooks. Fill the tart shell with the dried beans and place in the preheated oven. Bake for 10 to 12 minutes, remove the foil and beans and bake for 2 to 3 minutes more. Remove the tart shell from the oven and cool. The dough should be golden and crisp.
  • Preheat the oven to 300 degrees F.
  • In a bowl, combine the lemon juice, zest, sugar, eggs and salt and whisk to a homogeneous consistency. Place in saucepan and bring to a medium heat. Cook, whisking, constantly until the mixture has thickened, about 12 to 15 minutes. Remove from heat and whisk in the butter, 2 pats at a time until it's incorporated and has a silky consistency.
  • Pour the lemon curd into the prepared tart shell and bake in the preheated oven until the lemon curd has set, about 15 minutes. Let cool completely before cutting.
  • To garnish: In a small bowl, mix together blueberries, sugar and lemon juice. Serve alongside tart slices.

A press-in crust is ideal for any level baker because no rolling is required. Using Meyer lemons adds sweetness to the tangy curd in this sunny dessert.

5 Meyer lemons (about 1 1/2 pounds)
1 cup plus 1 tablespoon granulated sugar
3 large eggs plus 2 large egg yolks
1 tablespoon whole milk
1 stick (8 tablespoons) cold unsalted butter, diced
Nonstick cooking spray, for the tart pan
2 cups all-purpose flour (see Cook's note)
1 stick (8 tablespoons) unsalted butter, diced and cold
1/2 cup confectioners' sugar
1 large egg

Steps:

  • For the candied lemon peels: Set a wire rack into a rimmed baking sheet. Use a vegetable peeler to peel 1/2-inch strips from 3 of the lemons; reserve. Juice all 5 lemons (you should have about 1/2 cup); cover and refrigerate the juice. Put the reserved strips of peel into a medium saucepan and cover with cold water. Bring the water to a boil, and cook for 10 minutes. Drain the peels and repeat the process 2 more times. Pat the peels completely dry.
  • Add 1/2 cup granulated sugar and 1/4 cup water to a medium saucepan and bring to a simmer over medium heat. Add the peels and cook until they start to turn translucent, 6 to 7 minutes. Use tongs to remove them from the saucepan and lie them flat on the prepared rack. Let dry at room temperature, 6 hours and up to overnight. Toss the peels with 1 tablespoon granulated sugar in a small bowl.
  • For the shortbread crust: Position an oven rack in the bottom third of the oven and preheat the oven to 350 degrees F. Spray a 9-inch tart pan with cooking spray.
  • Add the flour, butter and confectioners' sugar to a food processor. Pulse until the mixture resembles coarse meal with some pea-sized pieces. Add the egg and pulse until the dough comes together. Press the dough into the bottom and up the sides of the prepared tart pan. Prick the dough all over with a fork. Bake until the crust is golden brown, 20 to 25 minutes. Let cool slightly on a rack, about 30 minutes.
  • For the lemon curd: Meanwhile, whisk the reserved lemon juice, eggs, yolks, milk and remaining 1/2 cup granulated sugar in a medium saucepan over medium heat until well combined. Add the butter and stir continuously until the mixture is thick and coats the back of a spoon, 10 to 12 minutes. Strain the curd if any lumps form, then pour into the crust and smooth with a spatula.
  • Bake until the curd is set, 15 to 17 minutes. Let cool slightly on a rack, about 30 minutes, then transfer to the fridge to cool completely, about 1 hour more. Decorate with the candied peels and serve cold.

20 vanilla wafer cookies
10 gingersnap cookies
3 tablespoons sugar
1 tablespoon lemon peel, grated
1/4 cup unsalted butter, melted (1/2 stick)
1 tablespoon unflavored gelatin
3/4 teaspoon unflavored gelatin, additional
1/4 cup cold water
2 lemons, the peel only (removed with a vegetable peeler)
fresh ginger, peeled (1 1-inch piece)
3/4 cup sugar
2 tablespoons sugar (additional)
salt, generous pinch
3 large egg yolks
3/4 cup milk (do not use lowfat or nonfat)
12 ounces cream cheese, room temperature
1/3 cup fresh lemon juice
1 1/2 cups whipping cream, chilled
of fresh mint, sprigs (garnish)

Steps:

  • LEMON CURD (makes about 1 cup).
  • In small cup, sprinkle gelatin over water. Allow to soften 10 minutes.
  • In processor, mince lemon peel with sugar until lemon peel is as fine as sugar. Transfer to heavy small saucepan.
  • Add in lemon juice and yolks, then butter; mix.
  • Stir over medium heat until very thick, about 5 minutes; do not boil.
  • Transfer to bowl. Add gelatin and stir to dissolve.
  • Cool completely, stirring frequently, about 1 hour.
  • CRUST.
  • Position rack in center of oven and preheat to 350 degrees farenheit.
  • Lightly oil 9-inch-diameter springform pan.
  • Add vanilla wafers and gingersnaps with sugar and lemon peel to food processor and finely grind. Add butter and blend well.
  • Make bottom crust by sprinkling crumbs over the bottom of pan and pressing down.
  • Bake until golden brown, about 12 minutes. Cool.
  • FILLING.
  • In small bowl, sprinkle gelatin over cold water; allow to stand 10 minutes to soften.
  • In processor, mince lemon peel and ginger with sugar and salt until lemon peel and ginger are the consistency of sugar.
  • Add yolks and blend until light and fluffy.
  • In heavy medium saucepan, scald milk.
  • With processor running, add milk through feed tube and blend well.
  • Return mixture to saucepan. Stir over medium-low heat until mixture thickens, about 12 minutes; mixture should leave path on back of spoon when finger is drawn across; do not boil.
  • Add gelatin mixture to custard and stir until dissolved.
  • Strain into bowl, pressing on solids with back of spoon.
  • Refrigerate until thickened but not set, stirring frequently, about 20 minutes.
  • Add cream cheese and lemon juice to processor and blend until smooth. Add custard and blend until smooth. Transfer to large bowl.
  • In medium bowl, whip cream until it forms soft peaks. Gently fold into filling.
  • Pour half of filling over crust. Using a tablespoonfuls, spoon half of curd over filling. Swirl mixtures together using tip of knife.Pour remaining filling over.
  • Using tablespoonfuls, spoon remaining curd over. Swirl mixtures together using tip of knife.
  • Refrigerate cheesecake at least 4 hours or overnight.
  • After running a knife around sides of cake, release pan sides.
  • Garnish with mint.

  • Using electric mixer, beat cream cheese in large bowl until smooth and fluffy. Gradually beat in sugar, then salt. Beat in eggs, 1 at a time. Beat in sour cream, grated lemon peel, and lemon juice. Pour filling into pan.
  • Place wrapped cake pan in large roasting pan. Pour enough hot water into roasting pan to come halfway up sides of cake pan. Bake cake until filling is slightly puffed and moves only slightly when pan is shaken gently, about 1 hour 25 minutes. Remove cake pan from water bath; remove foil. Cool cake in pan on rack 2 hours. Chill uncovered until cold; cover and keep chilled at least 1 day and up to 2 days.
