10 tablespoons (1 1/4 sticks) unsalted butter, room temperature
1 1/2 cups granulated sugar
1/2 cup brown sugar, firmly packed
2 large eggs, room temperature
2 teaspoons vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
2 cups semi-sweet chocolate chips
8 ounces cream cheese, room temperature
1/4 cup sugar
1 large egg, room temperature
1/2 cup sour cream
1 1/2 teaspoons cornstarch
1/2 teaspoon vanilla extract

Steps:

  • Preheat the oven to 325 degrees F.
  • For the chocolate chip cookie dough: In an electric mixer fitted with the paddle attachment, beat the butter, granulated sugar and brown sugar together until creamy, about 5 minutes. Mix in the eggs and vanilla. In a separate bowl, whisk together the flour, baking soda and salt. With the mixer on low, add the dry ingredients and mix until fully incorporated. Fold in the chocolate chips.
  • Press half of the cookie dough mixture into the bottom of a 9-by-13-inch baking pan. Transfer the remaining cookie dough to another bowl, cover, and refrigerate while you make the filling. Rinse the mixing bowl and paddle attachment for reuse.
  • For the cheesecake filling: In an electric mixer fitted with the paddle attachment, beat the cream cheese and sugar together until smooth and fluffy, 5 minutes. Add the egg, sour cream, cornstarch and vanilla, and mix until combined.
  • Spread the cream cheese mixture evenly over the chocolate chip layer in the baking pan. In pieces, scatter the remaining cookie dough over the top until the surface is almost covered¿this will become a crust when baked
  • Bake until set and starting to turn golden brown on top, 45 minutes¿if it jiggles, bake longer. Transfer to a wire rack and cool completely. Chill in the refrigerator for at least 4 hours or up to overnight. Cut into squares for serving.

Steps:

  • Preheat oven to 350°F.
  • Line a 9-inch square baking dish with parchment paper.
  • Spread ½ of the cookie dough onto the bottom of the baking dish and press down firmly.
  • Beat the cream cheese until light and fluffy with a stand mixer or hand mixer.
  • Beat in the sugar until combined.
  • Beat in the egg and vanilla until smooth.
  • Pour the filling on the top of the cookie dough base and spread it evenly.
  • Crumble the rest of the cookie dough over the top.
  • Bake for 30 to 35 minutes.
  • Remove from the oven and allow to cool completely before cutting into bars.

3/4 cup sugar
1/3 cup packed brown sugar
1 large egg, room temperature

1-1/2 cups miniature semisweet chocolate chips
3/4 cup chopped pecans
FILLING:
2 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract

Steps:

  • In a large bowl, cream shortening and sugars until light and fluffy. Beat in egg and vanilla. Combine the flour, salt and baking soda; gradually add to the creamed mixture until blended. Fold in the chocolate chips and pecans. , Set aside a third of the dough for topping. Press remaining dough into a greased 13-in. x 9-in. baking pan. Bake at 350° for 8 minutes., Meanwhile, in a small bowl, beat cream cheese and sugar until smooth. Beat in eggs and vanilla. Spoon over crust. , Drop teaspoonfuls of reserved dough over filling. 5 tablespoons butter, melted

3 tablespoons sugar

  • Heat the oven to 350ºF.
  • Line a 9x9-inch baking pan with foil, leaving extra foil extending over the edges.

  • 1. Preheat the oven to 325°F Line an 8-inch square baking pan with parchment paper allowing a little overhang. Spray with cooking spray and set aside.

If you're not familiar with caramel bits, they can be found right in the chocolate chip section in your supermarket. They are made by Kraft. They come in an eleven-ounce bag and cost around three dollars. They are super adorable (well, as adorable as little balls of caramel can be). They are just like Kraft wrapped caramel candies, but in little ball form - perfect for baking.

1 cup brown sugar

  • Preheat oven to 350 degrees.
  • Prep a 9 x 13 pan by lining it with parchment paper. Set aside.
  • Cream together the butter, sugars, salt and vanilla. Beat in the egg, then the baking soda and flour.
  • Stir in the chocolate chips, caramel bits and toffee pieces.
  • Divide mixture in half. Spread half of the dough evenly into the prepared pan. I use my fingers to do this. Set aside.
  • In a medium bowl, cream together the cream cheese and white sugar until fully blended. Beat in the egg and vanilla. Mix until completely smooth.
  • Pour and spread cheesecake layer over the pressed cookie dough layer.
  • Using your hands, press pieces of the remaining dough into flat discs. Lay on top of the cheesecake layer. You don't have to have the entire cheesecake layer totally covered. In fact, leaving a bit of the cheesecake layer peeking through in spots looks good once the bars bake and cool.
  • Bake for 20 - 30 minutes or until the bars are cooked through and top is lightly brown.
  • Allow to cool completely before removing from pan by way of the parchment paper.
  • Once cooled and removed from pan, cut into twelve equal bars.
  • Store in refrigerator.
  • NOTE: If you use the caramel bits in this recipe, allow the bars to come almost to room temperature (after refrigerating) prior to serving. The caramel bits harden up a bit in the fridge.

1 teaspoon baking powder
½ teaspoon baking soda
8 ounces cream cheese (softened to room temperature)
½ cup salted butter (softened)
2 large eggs (room temperature)
1 teaspoon vanilla extract
3 tablespoons heavy cream
2 cups powdered sugar
½ cup miniature semi-sweet chocolate chips (plus more to top the cookies if desired)

Steps:

  • In a medium bowl, add the flour, baking soda, baking powder, and cornstarch. Whisk together, then set aside.
  • In a large mixing bowl, beat together the butter and cream cheese until light and fluffy (about 2 minutes on medium speed).
  • Add vanilla extract and eggs and beat together until combined. Use a rubber spatula to scrape the sides of the mixing bowl.
  • Add in powdered sugar and continue beating to combine and make a fluffy batter.
  • Turn the mixer on low and gradually add the dry ingredients and the heavy cream and mix to combine.

1/2 cup unsalted butter
1/2 cup butter flavor shortening
1 cup brown sugar
1/2 cup granulated sugar
2 teaspoons vanilla extract
3/4 teaspoon salt
1 tablespoon cider vinegar
1 large egg
1 teaspoon baking soda
2 cups all-purpose flour
2 cups semi-sweet chocolate chips
1 (8 ounce) package cream cheese, at room temp
1/2 cup sugar
1 egg
1/2 teaspoon vanilla extract

Steps:

  • In a large mixing bowl, cream together the butter, shortening, sugars, vanilla, salt and vinegar. Beat in the egg, then the baking soda and flour. Stir in the chocolate chips. Divide the dough into two equal portions and set aside.
  • In a medium mixing bowl cream the cream cheese with the sugar until thoroughly combined. Beat in the egg and vanilla.
  • In a 9x13 pan, spread 1/2 of the cookie dough mixture evenly across the bottom. (This is somewhat tricky to do. I find it easier to add dollops of cookie dough throughout the pan and then spread all the dollops together. Spread the cream cheese mixture on the top of the cookie dough. With the remaining cookie dough, flatten chunks of dough between your hands into discs, and then place on top of the cream cheese mixture. (The dough discs don't have to touch, just place them near each other so they cover the surface as well as possible.).
  • Bake at 350 for 35-45 minutes, or until the top is brown and cooked through. Cool completely and store in the refrigerator.

Use your hands to press chunks of the remaining cookie dough into flat discs and layer them over the cheesecake filling. Don't stress making it look perfect or covering the entire pan.
  • Bake for 28-33 minutes, just until the bars are cooked through and the top has lightly browned. Allow them to cool completely, before lifting them from the pan with the parchment paper. Slice into bars and store in the refrigerator. Enjoy!
