RASPBERRY CREAM CHEESE JELLO SALAD

Steps:

• Open can of pears and drain 1 cup of the pear juice into a bowl. Set bowl aside and throw away the rest of the juice.
• Add 1 cup of water to pear juice and microwave the liquid for 2-3 minutes or until water is boiling.
• Add box of raspberry jello to the boiling liquid and stir until all jello has dissolved. Set bowl in fridge and allow it to cool for about 7-10 minutes (you don't want the jello to set, you just want it to cool down).
• Dump pears and softened cream cheese into a large blender. Add in cooled jello and Cool Whip. Blend until completely combined.
• Pour jello into 9 x 13 inch pan and set in the fridge until jello is completely set (should take 3-4 hours - you could also let it set up overnight).
• Serve topped with whipped cream and fresh raspberries.

Steps:

• Mix in a large bowl the dry cheesecake pudding powder, cool whip and strawberry yogurt.
• Fold in the fruit being careful not to smash and chill in the fridge for 30 minutes.

Steps:

• In a medium bowl, stir together the graham crumbs and sugar.
• Stir in the melted butter.
• Press the mixture into the bottom and up the sides of a springform pan the mixture will not go up all the way up to the top of the sides).
• Place in the fridge while making the filling.
• Sprinkle the jello into the boiling water. Stir the mixture for the jello to dissolve. Set aside as you make the rest of the filling.
• In a large bowl, beat the cream cheese until soft.
• Mix in the powdered sugar, followed by the lemon juice.
• Ensure that the jello mixture is cooled to room temperature. With the mixer on low speed, beat the jello into the cream cheese mixture a little at a time. Turn off the mixer and scrape down the sides of the bowl as necessary.
• Carefully fold the thawed whipped topping into the mixture until it's evenly mixed.
• Spoon the filling overtop of the crust and smooth the top.
• Place in the fridge for 6 hours, or until set.
• When ready to serve, carefully run a thin, sharp knife around the edges of the springform pan. Carefully unclamp the edges of the springform pan.
• Optionally, top the cheesecake with whipped cream and berries.

EASY CHEESECAKE SALAD

Steps:

• Mix milk and pudding together in a bowl. Set aside.
• Mix cream cheese and sour cream together in a large bowl. Fold in whipped topping. Stir in milk-pudding mixture. Top salad with pie filling. Chill until ready to serve.

• Dissolve gelatins in boiling water.
• Chill until slightly thickened.
• Stir in fruit and nuts.
• Pour half of mixture into a 13" x 9" x 2" pan or decorative mold.

Steps:

• With a hand or stand mixer, cream together the cream cheese and powdered sugar until smooth.
• In a separate bowl, dissolve the Jell-o into the milk. With the mixer running on the lowest speed, slowly and gradually pour the milk mixture into the cream cheese mixture. Mix on low until completely combined. Fold in the whipped topping. Mixture will be slightly thin but creamy. Fold in the strawberries and marshmallows.
• Refrigerate for at least 3 hours for the fluff to firm up.
• Before serving, transfer the strawberry fluff to a serving bowl and top with additional strawberry slices, marshmallows, and graham cracker pieces, if desired.

LIGHT AND FLUFFY LEMON JELLO CHEESECAKE

Steps:

• Mix Graham cracker crumbs, 1 tablespoon sugar, and melted butter or margarine.
• Press Graham cracker crumb mixture into the bottom of a 9"x13" pan. (You do not need to grease the pan.).
• Mix lemon Jello with 2 cups boiling water until Jello is dissolved.
• Add cream cheese to Jello mixture, breaking cheese up with a potato masher or the beaters of an electric mixer.
• In a chilled bowl (glass or metal work best) whip with electric mixer chilled evaporated milk with 1 tablespoon sugar until small peaks form. (Getting peaks to form is much easier if the bowl and milk are cold.).
• Add Jello mixture to evaporated milk and continue to beat until well blended.
• Pour over Graham cracker crust.
• Chill until firm.

FRUIT SALAD CHEESECAKE

Steps:

• In a small saucepan, cook pineapple and sugar over medium heat for 5 minutes or until heated through. Place cold water in a bowl; sprinkle with gelatin. Let stand for 1 minute. Stir into the warm pineapple mixture. Reduce heat to low; add cream cheese. Cook and stir until cream cheese is melted and mixture is blended. Remove from the heat; cool completely., In a small bowl, combine macaroon crumbs and butter. Press onto the bottom of a greased 9-in. springform pan; set aside. Stir the grapes, oranges, cherries and nuts into cream cheese mixture. Fold in the whipped topping. Pour into prepared pan. Cover and refrigerate overnight. Remove sides of pan before serving.
