Southern Pecan Cheese Wafers image

If you have never had Southern Pecan Cheese Wafers you are missing out! This cheese crackers recipe is nothing like you have ever bought at the store. It is a really fun cocktail appetizer and goes great with drinks and a cheese plate!

1 cup butter (softened (2 sticks))
1 teaspoon Worcestershire sauce
2 cups flour (spooned and leveled)
1/2 teaspoon salt
1/2 to 3/4 teaspoon cayenne pepper
1/4 teaspoon smoked paprika (optional)
1 pound sharp cheddar cheese (freshly shredded*)
60-70 pecan halves

Steps:

  • In a large bowl or stand mixer, beat the butter and 1 teaspoon Worcestershire sauce until smooth and creamy.
  • Add 2 cups flour, 1/2 teaspoon salt, cayenne pepper, and smoked paprika, if you're using it. Beat well, scraping the sides.
  • Add the cheddar cheese and beat well, scraping the sides and bottom of the bowl.
  • Cover the dough and chill well, at least 2 or 3 hours or up to 3 days.
  • Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
  • Roll the dough into 1-inch balls and place on the baking sheet 1 inch apart. Press the top of each ball with a fork (if the fork sticks, coat with flour).
  • Place a pecan half on top of each wafer.
  • Bake at 350 degrees for 18-20 minutes, until the edges are quite brown.
  • Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely. Store covered on the counter. Best served within 2 days.
  • Re-heating: I made these a day in advance as Thanksgiving appetizers. They lose a bit of their crunch by day 2, so I spread them out on baking sheets and baked at 350 for about 5 minutes until they got crispy again. Worked great!

1/3 cup butter or margarine, softened
1 pkg. (8 oz.) KRAFT Shredded Sharp Cheddar Cheese, at room temperature
1 tsp. LEA & PERRINS Worcestershire Sauce
1 cup flour
1/8 tsp. ground red pepper (cayenne)

Steps:

  • Heat oven to 375°F.
  • Beat butter, cheese and Worcestershire sauce in large bowl with electric mixer on medium speed until well blended. Add flour and pepper; mix well.
  • Roll dough to 1/8-inch thickness on lightly floured surface; cut into a variety of shapes with small cookie cutters. Place on ungreased baking sheets.
  • Bake 10 to 12 min. or until edges are lightly browned. Cool completely on wire racks. Store leftover wafers in airtight container at room temperature.

Everyone simply loves these because they are extra crunchy from the addition of rice cereal. I strongly suggest serving these round wafers alongside a dish of pepper jelly and a block of softened cream cheese or log of goat cheese. Smear a little cheese on a wafer and top with a dab of the jelly to form a perfect bite. Repeat often. Luckily this recipe makes about 4 dozen wafers, so you might have just enough to go around. 2 cups (8 ounces) freshly grated extra-sharp Cheddar cheese
1/2 cup butter, at room temperature
1 cup all-purpose flour
1/2 teaspoon ground cayenne pepper or to taste

  • Preheat the oven to 350°.

  • Mix margarine and Rice Krispies (I use a stand mixer with a paddle attachment).
  • Then mix in cheese.
  • Combine flour and seasonings in another bowl.
  • Add to the cheese mixture gradually.
  • Roll mixture into marble-size balls. (I used a 1 inch cookie scoop.).
  • Flatten with fork onto parchment paper covered cookie sheet.
  • Bake at 350 degrees for 15 to 20 minutes. Don't overbake them!

  • In a medium bowl, beat together butter, cheese and cayenne pepper until thoroughly blended.
  • Add flour, beating until blended.
  • Shape dough into log about 9 1/2 inch long and 1 1/2 inches in diameter.
  • Roll log in sesame seeds, coating completely.
  • Wrap and refrigerate until firm, several hours or overnight.

They go well with coffee, fruit drink or a cocktail. Note: Put only 1/2 teaspoon cayenne powder if you don't like it very hot.

1 cup pecans
2 sticks (1 cup) plus 1 tablespoon unsalted butter
1 pound extra-sharp Cheddar
2 cups all-purpose flour
1 teaspoon cayenne pepper
parchment paper for lining baking sheets

Steps:

  • Preheat oven to 350°F.
  • In a shallow baking pan toast pecans in one layer in middle of oven until a shade darker and fragrant, about 10 minutes. Transfer nuts while still hot to a bowl and toss with 1 tablespoon butter and salt to taste. Cool nuts completely and finely chop.
  • Coarsely grate Cheddar and transfer to a large bowl. Cut remaining 2 sticks butter into 16 pieces and scatter over cheese. Let cheese and butter soften. Add nuts, flour, and cayenne and with an electric mixer beat mixture until it forms a dough.
  • Divide dough into 8 pieces. On a sheet of wax paper roll each piece of dough into a 1-inch-diameter log and wrap logs tightly in wax paper and foil. Chill logs at least 8 hours and up to 1 week. Dough keeps, frozen, 2 months. Preheat oven to 350°F.
  • Working with 1 log at a time, with a sharp knife cut log crosswise into 1/8-inch-thick slices and arrange slices 1/2 inch apart on parchment-lined baking sheets. Bake wafers in batches in middle of oven until pale golden and just firm to the touch, 10 to 12 minutes. Cool wafers on baking sheet 2 minutes. With a metal spatula transfer wafers to a rack to cool. Turn wafers over and sprinkle with salt to taste. (Crevices on undersides hold salt without letting it roll off.) Wafers keep in an airtight container at room temperature 4 days.

1 cup cheddar cheese (shredded)
3 tbsp unsalted butter (softened)
3 tbsp vegetable oil
1 cup all-purpose flour (sifted)
1/2 tsp dry mustard
1/4 tsp cayenne pepper
to taste paprika

Steps:

  • In the bowl of a food processor, process the cheese and butter for about 30 seconds, or just until combined. With the motor running, slowly pour the oil through the feed tube.
  • Then add the flour, mustard, and red pepper. Process for 30 seconds, or just until the mixture resembles coarse crumbs. (To keep the wafers flaky and tender, avoid overprocessing.) Remove the dough from the food processor, press into a ball, roll in plastic wrap, and refrigerate 30 minutes.
  • Preheat oven to 350°F and set out 2 ungreased baking sheets. Shape the dough into 40 balls, 1/2 inch in diameter, and place them 2 inches apart on the baking sheets. Using the back of a fork, lightly flatten each ball twice, making a criss-cross pattern, until the dough resembles a coin about 1/8-inch thick.
  • Bake 15 minutes, or just until crisp but not browned. Transfer to wire racks, dust lightly with paprika, and let cool. Store in an airtight container up to 2 weeks or in the freezer up to 3 months at 0°F.

  • Preheat oven to 350 degrees. Combine the flour, cayenne, and salt in a large shallow bowl. With a pastry blender, cut in the butter until the mixture is the texture of coarse meal. Add the cheese and rub into the flour-butter mixture gently with your fingertips until a small bit of dough, when pinched together, will hold its shape. Roll into 3/4-inch balls, place 1 1/2 inches apart on ungreased baking sheets, then flatten into rounds 1/4-inch thick by pressing with a flat-bottomed glass that has been dipped into flour. (You'll have to keep dipping the glass into flour to keep the dough from sticking to it.) Bake uncovered 10 to 12 minutes until pale tan. Transfer the wafers at once to wire racks to cool, then store airtight.
