1 pound Hot or Mild Italian Sausage
1/2 medium onion, chopped small, about 2/3 cup
3 cloves garlic
3 (14) ounce cans crushed tomatoes
20 ounces refrigerated tortellini
4 ounces baby spinach, roughly chopped
1/2 cup heavy cream
1/2 cup Parmesan or Pecorino Romano cheese, shredded ((optional))

Steps:

  • Cook and crumble the sausage in a large skillet over medium-high heat. When the sausage has almost browned, add the onion and garlic. Continue cooking for 2-3 minutes until the garlic is fragrant and the onion begins to soften.
  • Add the tomatoes and the tortellini to the skillet. Stir and reduce heat once the sauce comes to a simmer. Cover with lid and simmer softly until the tortellini is tender about 8-10 minutes.
  • Add the spinach and stir for 1-2 minutes until it wilts. Stir in the cream. Sprinkle each serving with cheese if desired. Enjoy!

1 lbs fresh tortelloni (or tortellini)
4 tbsp sun-dried tomato pesto (I used Scala or Delallo in the US)
1-2 cloves garlic
4 basil leaves or 1/2 tsp dried basil
250ml/1 cup double/heavy whipping cream
30g/1 cup fresh spinach
50g/1/2 cup Parmesan Cheese or other hard cheese like Asiago or Pecorino
salt to taste

Steps:

  • Set a large pot of salted water boiling and cook the tortelloni according to package instructions.
  • Meanwhile in a large and deep pan heat the sun-dried tomato pesto together with minced garlic over low heat and fry while stirring for no longer than 30 seconds. Then add the heavy cream and whisk to combine. Bring to a simmer, then add the spinach and let it wilt for a minute, then stir in the grated cheese. Take off the heat and keep warm.
  • Drain the tortelloni while reserving 1/2 cup of pasta water. Add the tortelloni directly to the sauce and toss gently to combine. If the dish is a bit dry add a splash of the reserved pasta water to loosen it until the right consistency. Serve immediately with additional grated Parmesan and black pepper.

1 (14.5 ounce) can diced tomatoes with garlic and onion
1 cup chopped fresh spinach
½ teaspoon salt

2 tablespoons all-purpose flour
¾ cup milk
¾ cup heavy cream
¼ cup grated Parmesan cheese

Steps:

  • Bring a large pot of water to a boil. Add the tortellini, and cook until tender, about 10 minutes.
  • While you get the tortellini going, combine the tomatoes, spinach, salt, pepper, basil and garlic in a large saucepan over medium heat. Cook and stir until the mixture begins to bubble.
  • In a medium bowl, whisk together the flour, milk and cream. Stir this mixture into the saucepan along with the Parmesan cheese. Heat through, then reduce heat to low, and simmer until thick, about 2 minutes.
  • Drain the tortellini, but do not rinse, then pour them into the saucepan with the sauce. Stir to coat, and serve.

1 (12 ounce) package frozen cheese tortellini
⅓ cup sun-dried tomatoes packed in oil, drained and oil reserved
2 boneless, skinless chicken breasts, cut in bite-sized pieces
salt and ground black pepper to taste
3 cloves garlic, thinly sliced
1 (10 ounce) can diced tomatoes
1 cup whipping cream
⅔ cup dry white wine
1 cup frozen chopped spinach, thawed and drained
2 tablespoons chopped fresh basil
1 cup heavy whipping cream
⅓ cup grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top but skin is nearly soft, about 2 minutes. Drain well.
  • Slice sun-dried tomatoes thinly. Heat 1 tablespoon reserved tomato oil in a large skillet over medium-high heat. 1/8 cup fresh parsley, chopped for topping
1/8 cup parmesan cheese, Freshly-grated for topping

1 chicken bouillon cube, mashed
4 teaspoons dried basil
2 teaspoons chopped fresh parsley

  • Prepare tortellini as directed on package.

  • Cook tortellini according to package directions. (Don't drain without reserving some of the cooking water!)
  • In a large, deep skillet, heat 1 teaspoon olive oil from jar of sundried tomatoes (I have a nonstick skillet - if you feel like you need to add more oil, feel free). Heat over medium heat.
