EASY DINNER ROLLS STUFFED WITH CHEESE
Easy Dinner Rolls, these are a must for a delicious dinner, especially during winter and the holiday time! Made in under an hour you can beat them! These easy dinner rolls are extra delicious filled with melted mozzarella and dipped in a tasty marinara!

Steps:
- Combine 3/4 cup flour, sugar, dry yeast and salt in a large mixer bowl and stir until blended.
- Combine milk, water and butter in a small microwave-safe bowl. Microwave on HIGH in 15 second increments until very warm but not hot to the touch (120° to 130°F. Butter won't melt completely). Add to flour mixture, stirring together, then let sit for 5 minutes. It should be come frothy and bubbly.
- Add in the Italian seasoning, garlic powder, and 1/4 cup flour; beat 2 minutes at high speed using an electric mixer. Stir in just enough of the remaining flour (1 to 1-1/4 cups) so that the dough will form into a ball.
- Knead* on lightly floured surface until smooth and elastic and springs back when lightly pressed with 2 fingers, about 6 to 8 minutes. Cover with a towel; let rest for 10 minutes.
- Cut dough into 12 equal pieces; shape into balls using your hands. As you are shaping place piece ofS mozzarella cheese in the center of each roll and shape the dough around it.
- Place in greased 8-inch round or square pan. Cover with towel; let rise in warm place until doubled in size, about 30 minutes.
- Bake in preheated 375ºF oven for 20 minutes or until golden brown. Remove from pan by running a knife around the edges and invert onto wire rack; brush tops with additional melted butter, if desired.
- Serve warm with some warmed marinara sauce topped with freshly chopped parsley.

- Preheat oven to 375 Spread 1/2 cup sauce in bottom of baking dish.
- In large bowl, thoroughly combine egg, seasonings, ricotta cheese, parm cheese, 1/2 cup mozz cheese and 1/2 can onions.
- Spoon equal amounts of cheese mixture on 1 end of each beef slices. Roll up beef slices jelly roll style and arrange. seam side down, in baking dish.
- Pour remaining sauce over beef rolls. Bake for 40 minutes or until heated through. Top beef rolls with remaining mozz and onions. Bake uncovered, 3 minutes longer.

Delicious cheese stuffed dinner rolls/ buns made with 30 % white whole wheat flour and stuffed with mozzarella cheese

Steps:
- Melt butter in microwave safe bowl for 30 sec.
- In a kitchen aid stand mixer bowl all every thing including melted butter and water and with paddle attachment mix well together to form a sticky dough. Then with dough hook knead the dough for about 7 minutes to form soft pliable dough.
- Set aside in well greased container for about 90 minutes to double in volume.
- While the dough is doubling cut 8ounce cheese into 12 pieces and set aside.
- Once the dough(762g) is doubled divide it into 12 equal pieces ( 63.5g) pieces.
- Slightly flatten the dough balls and place the cheese and cover it well and make a smooth ball. set aide for doubling in baking sheet lined with parchment paper for 45 minutes. Once the dough is doubled again.
- Brush with olive oil and add topping and bake it in a preheated oven of 375F for 25-30 minutes or until it changes golden brown color.
- Enjoy the warm dinner rolls they are delicious with melting cheese.

STUFFED CHEESEBURGER BUNS
These were always on a table at many of our family gatherings. It is the American version of the Calzone. A soft yeast roll stuffed with a delicious mixture of ground beef and cheese. I found this recipe in Taste of Home and it brought back good memories of a stuffed meat pie. Prep time does not include dough rising.

Steps:
- In a mixing bowl, dissolve yeast in warm water.
- Let set for 5-10 minutes.
- Add milk, sugar, shortening, egg, salt, and 2 cups of flour.
- Stir in remaining flour until a soft dough forms.
- Turn dough on a floured surface and knead for about 5 minutes.
- Place in a greased bowl, turning to distribute grease.
- Put dough in a warm place.
- Cover first with plastic wrap and then a towel.
- Let set until dough doubles@ 1 hour.
- While dough is resting cook beef mixture.
- Cook beef and onion until beef is browned.
- Drain and stir in tomato sauce.
- Set aside.
- Remove dough and punch down.
- Divide into 16 pieces.
- On a floured surface roll out dough into a five inch circles.
- Put 2 pieces of cheese on cirlces and top with 3 Tbl.
- of beef mixture.
- Fold dough over to make a half circle and pinch edges together to seal.
- Place on a greased baking sheet.
- Cover and let rise in a warm place about 30 minutes.
- Bake at 400 °F for 8-12 minutes or until golden brown.

Steps:
- Cut the tops off of the rolls and hollow them out leaving a thin shell.
- Grind all of the ingredients and bread in a meat grinder or food processor and stuff back into the rolls.
- Place the tops back on the rolls and secure with tooth picks.
- Bake on an ungreased cookie sheet at 350 degrees F. for about 45 minutes.
- Serve Hot.
