This is the simplest and best tasting vegan cheese sauce recipe we've found. We got it from our cousin Diana P. who got it from who knows where. We like it best for nachos. It works well for mac'n'cheese as well as enchiladas or any recipe that calls for a cheese sauce.

1/4 cup raw cashews
1 1/2 cups cold water
2 ounces pimientos (half of a 4 oz. jar)
2 tablespoons cornstarch
2 tablespoons nutritional yeast flakes
1 tablespoon lemon juice
1/2-1 teaspoon salt
1 (4 ounce) can diced green chilies (optional)

Steps:

  • Rinse cashews with hot water while combining the remaining ingredients (except chiles) in a blender.
  • Add cashews to blender and process on high for 1-2 minutes.
  • Cook in a sauce pan over medium heat, stirring constantly, until thick.
  • Add chiles and serve or use in other recipes that call for cheese sauce.

2 cups rolled oats
1/2 cup nutritional yeast
1/4 cup arrowroot powder or tapioca flour
2 teaspoons dehydrated onion
2 teaspoons salt
12 ounce jar roasted red peppers
1 Tablespoon lemon juice
1/4 teaspoon liquid smoke
4 cups warm water

Steps:

  • Add all ingredients into a high-speed blender. I've found that one like a Vitamix or Blendtec work the best because you're able to create enough speed and friction to actually warm up the cheese sauce.
  • Blend on high for 5 minutes or until thickened to your liking. Listen to your blender while it's working. If the motor starts to make a deeper sound like it's having to work harder, the cheese is getting thicker and it's time to check it.
  • Serve however you'd like - with chips, on burritos, over nachos, etc.

3 tbsp nutritional yeast flakes
2 tbsp tapioca flour (OR arrowroot flour/starch (*see notes))
1/2 tsp sea salt ((or to taste))
1/2 tsp onion powder ((optional))
1/4 tsp garlic powder ((optional))
Pinch of smoked paprika ((optional))

Steps:

  • Put all ingredients into a saucepan and stir with a whisk. Once everything is combined, turn on the heat and bring the mixture to a boil while stirring constantly.
  • Let simmer on low to medium heat for about one minute until the sauce is stretchy.

2 small russet potatoes, peeled and cubed
½ cup carrots, chopped
⅓ large yellow bell pepper, chopped
¼ large yellow onion, peeled and chopped
5 tablespoons prepared garlic hummus
⅓ cup coconut milk, or more as needed
½ tablespoon nutritional yeast
1 ½ teaspoons lemon juice
1 teaspoon garlic powder
black pepper to taste
2 pinches salt, or to taste

Steps:

  • Fill a pot with water and bring to a boil. Add potatoes, carrots, bell pepper, and onion and cook until potatoes are tender, 15 to 20 minutes. Cook 1 more minute. Drain.
  • Combine potatoes, carrots, bell pepper, onion, hummus, coconut milk, nutritional yeast, lemon juice, garlic powder, black pepper, and salt in a blender or food processor; blend until smooth and creamy.

I obtained this recipe from someone named Tracy over the vast Internet, at a website I cannot recall since I was doing a search through many at the time. Combining the below ingredients sounds wretched, but it was shockingly good! Could this be Kraft's secret?

2 cups water
1/3 cup carrot, peeled and cooked
1/3 cup white flour (I used half of that amount of cornstarch so that it would be gluten free)
1/4 cup nutritional yeast flakes
1 tablespoon lemon juice
2 teaspoons onion powder
2 teaspoons salt

Steps:

  • Blend all ingredients together in a blender.
  • Pour into pan and stir until boils and thickens.
  • Take off heat and pour into noodles, over broccoli or potatoes, etc.

  • In a medium pot, bring about 3 cups of water to a boil. Place potatoes, carrots, and onion in the pot and allow to cook until veggies are tender--approximately 15 minutes. Cooking time will vary based on how small the veggies are diced.
  • When veggies are tender, drain and place them in a blender. NOTE: reserve 1 cup of the broth, and add to blender. Add all the remaining ingredients, and blend until smooth.
  • I have a Vitamix blender and so don't take the time to soak my cashews. That thing is powerful and everything that goes into it comes out creamy. However, if your blender isn't jet engine speed, soaking the cashews in warm water for at least 30-minutes before adding to this recipe will help this recipe come out more creamy.
  • If you prefer, white beans such as northern or navy beans can be used in place of the cashews for those avoiding nuts. Or, even use a combination of 1/4 cashews and 1/4 cup white beans to lower the fat content but keep the rich creamy texture and flavor.
