SOUTHERN TEA SANDWICHES

Number Of Ingredients 17

One 8-ounce container whipped cream cheese
1 tablespoon minced fresh chives
1 tablespoon thinly sliced green onions
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper
3/4 cup mayonnaise, plus more if needed
2 tablespoons minced fresh parsley
2 tablespoons minced shallots
1 tablespoon Dijon mustard
1/2 teaspoon smoked paprika
6 hard-boiled large eggs, peeled and chopped
4 slices bacon, cooked and crumbled
Kosher salt and freshly ground black pepper
1 loaf white bread (about 16 slices)
One 6-ounce package thinly sliced smoked salmon
1/2 lemon
1 Persian cucumber, sliced into 16 rounds about 1/4-inch thick

Steps:

  • For the onion cream cheese: Stir together the cream cheese, chives, green onions and garlic powder in a small bowl. Season with salt and pepper.
  • For the egg and bacon salad: Stir together the mayonnaise, parsley, shallots, mustard, paprika, eggs and bacon in a medium bowl. Add more mayonnaise if you prefer a creamier egg salad. Season with salt and pepper.
  • For the sandwiches: Place 4 of the bread slices on a cutting board and spread each with about 3 tablespoons of the onion cream cheese in an even layer on one side. Top with a single layer of smoked salmon, squeeze some lemon juice over the salmon and then cover with a second slice of bread to form 4 sandwiches. Cut the crusts off. Slice each sandwich in half crosswise and then cut each half diagonally to create 4 triangle-shaped finger sandwiches. Place a cucumber round on top of each sandwich and arrange on a platter.
  • Place 4 of the bread slices on a cutting board and spread each with about 1/4 cup of the egg and bacon salad in an even layer on one side. Cover with a second slice of bread to form 4 sandwiches. Cut the crusts off. Slice each sandwich in half crosswise and then cut each half diagonally to create 4 triangle-shaped finger sandwiches. Arrange on a platter.

4 celery ribs, finely chopped
2 cups reduced-fat mayonnaise
4 green onions, chopped
1/4 cup lime juice
1/4 cup chili sauce
1/2 teaspoon seasoned salt
8 cups cooked fresh or canned crabmeat
6 hard-boiled large eggs, chopped
48 slices whole wheat bread
1/2 cup butter, softened
48 lettuce leaves
1/2 teaspoon paprika
Green onions, cut into thin strips, optional

Steps:

  • In a large bowl, combine the first six ingredients; gently stir in crab and eggs. Refrigerate., With a 3-in. round cookie cutter, cut a circle from each slice of bread. Spread each with 1/2 teaspoon butter. Top with lettuce and 2 rounded tablespoonfuls of crab salad; sprinkle with paprika. Garnish with onion strips if desired.

4 slices whole grain bread (can use whole grain crackers, if desired)
softened butter, for spreading
1 tablespoon fresh salad burnet, leaves (read *Note)
1/2 cup cream cheese, softened
salt, to taste
black pepper, to taste

Steps:

  • Spread the butter on each slice of bread.
  • *Note: due to salad burnet's delicate nature, it is not necessary or really possible to mince the leaves. Add them whole to the cream cheese.
  • In a small bowl combine the salad burnet and cream cheese. Add salt and pepper, to taste. Mix well.
  • Spread the cream cheese mixture on two slices of bread. Place other slices on top and cut sandwiches in half or quarters.

This recipe is really easy to make your own-change it up by using different shredded cheese, dijon mustard, flavored cream cheese, and /or breads. Sandwiches may be frozen, omitting the cucumber; thaw in refrigerator, and add cucumber before serving. Also, I will make this sandwich just for me-esp. when cucumbers are in season or just top some crackers with the cheese mixture. Cooking time is refrigeration time after preparation. 1/2 cup whipped cream cheese
1/2 cup shredded cheddar cheese
1/2 teaspoon prepared mustard
1/4 teaspoon Worcestershire sauce
1/8 teaspoon ground cayenne pepper (optional)
16 slices cucumbers, unpeeled (optional)
16 slices white bread

Steps:

  • Combine first 4 ingredients; add cayenne, if desired, and set aside.
  • With a 1-3/4" cookie cutter, cut 2 rounds out of each bread slice.
  • Spread half of bread rounds with cheese filling and top with cucumber slices and remaining bread rounds. (I actually like a thin layer of filling on each side of the bread.).
  • Place in shallow container, top with slightly dampened paper towels and cover with plastic wrap; refrigerate 8 hours.

I've used this for my cooking class, and even those teenagers who said they didn't like cucumbers, gobbled these up! If you want, you can use an English cucumber, then you don't have to peel it! I'm guessing on the servings amount.

5 -6 boneless skinless chicken breasts, cooked and diced
1 (5 ounce) can water chestnuts, diced
2 -3 green onions, chopped
1 stalk celery, diced
1/2 cup mayonnaise
3/4 cup cream cheese, softened
salt and pepper
2 loaves bread, crusts removed (one dark, one light)
cucumber, slices (optional)
alfalfa sprout (optional)

Steps:

  • Combine the chicken, water chestnuts, green onions, celery, mayonnaise, cream cheese, salt & pepper in a large bowl. If your mixture feels too dry, you can add more mayo & cream cheese, just make sure there is more cream cheese than mayo.
  • Spread some of the mixture on top of the light bread. (Spread immediately--do not refrigerate and then spread, it will become too difficult to spread).
  • Top with the dark bread, cut in half (making 2 triangles).
  • Wipe your knife off often as you cut to keep the sandwiches clean-looking.
  • You can add some cucumber or alfalfa sprouts inside each triangle, if desired.
  • Arrange your sandwiches on a serving plate, cover with plastic wrap & refrigerate for several hours.
