POLISH NOODLES (COTTAGE CHEESE AND NOODLES)
This simple recipe came from the Polish side of my family. We simply called it 'cottage cheese and noodles' or 'lazy man pierogies.' It's a great comfort food and can be made with any kind of noodle. It could be a side dish, but we always enjoyed it as a meal.

Steps:
- Melt butter in a saucepan over medium heat. Cook and stir onion in melted butter until softened, 7 to 10 minutes.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and return to the pot.
- Stir butter and onion mixture, cottage cheese, sour cream, sea salt, and black pepper into the noodles. Place the pot over medium heat; cook and stir until heated through and warm, 5 to 8 minutes.

Steps:
- Cook the noodles in a large saucepan of boiling, salted water with 1tsp cooking oil, until just soft (about 7-10 minutes).
- Grate the cheese, or chop it finely into very small cubes.
- Drain the noodles, return to the hot, dry pan and shake for a moment in the pan over the heat, to dry them and keep them hot. Remove from the heat and stir in the cheese and the butter. Season with the salt and pepper and pile onto a hot dish. Serve at once.

CHEESY BEEF NOODLES
A quick and easy combination of noodles, beef and cheese! I use 1/2 of a package of mild taco seasoning (could use more for additional "zip") *** Adjusted to double the tomato sauce. I made it again and agreed with the reviewers - more sauce made it better!*****

Steps:
- Brown and drain ground beef.
- Cook and drain noodles.
- Mix ground beef, tomato sauce and taco seasoning.
- Spread noodles in the bottom of a 9x13 pan.
- Spread beef mixture over noodles. Mix slightly.
- Cover with cheese.
- Bake 350 for about 20 minutes until heated though and cheese is melted.
THREE CHEESE NOODLE BAKE
After searching for years, I have found the ultimate mac-and-cheese recipe. Use low fat or fat free ingredients if desired. Tastes great either way. For variation, omit Worcestershire sauce, and add 1 tablespoon yellow or brown mustard.

- Cook noodles al dente. Drain and rinse. Set aside.
- In a large mixing bowl, mix together cottage cheese, sour cream, parmesan, 1 egg, 1 cup cheddar cheese, Worcestershire sauce, milk, butter or margarine, and salt and pepper. Stir in cooked noodles. Spread into a 9 inch square baking dish, top with remaining shredded cheese.
- Bake at 300 degrees F (150 degrees C) for one hour, or until set.

- Stir together the cottage cheese and sour cream, and add this to the noodles. Add the onion, Worcestershire sauce, and garlic salt to taste, and place in a greased casserole. Sprinkle the Parmesan over the casserole and bake at 350 degrees for 45 minutes.
BUTTER AND CHEESE NOODLES(MAKARONIA)

- Bring 4 quarts of water to a boil in a large saucepan. Add 1/2-1 tbls. of the salt and the pasta. Cook until al dente, 5-7 minutes(until it still has a little bite to it-not too soft). Drain.
- In a large saute pan, melt butter over medium hight heat. Add the pasta and 3 tbls. grated cheese.
- Season with salt and pepper to taste and toss.
- Top with remaining cheeses and serve hot. Enjoy! Opa!
