FLATBREAD WITH CARAMELIZED ONIONS & CHEESE
This is a very versatile dish from Bonnie Stern who has owned a cooking school in Toronto Canada for over 30 years. It can be served at a cocktail party, as an appetizer or as a main course with a side salad. My DH & I have been known to devour the whole thing, with a few glasses of wine, on a Saturday night!!

Steps:
- Heat oil over medium high heat in a large skillet.
- Add onions; cook until wilted& starting to brown.
- Add sugar, vinegar, salt& pepper.
- Reduce heat& cook gently for 15- 25 minutes or until onions are caramelized& brown.
- Cool.
- Roll pastry into a rectangle approximately 12 x 16 inches. I don't use the sheets of puff pastry - I prefer to use the 375gm package of Tenderflake Puff Pastry. I start rolling it out on my counter, then I transfer it to my baking tray (which has been lined with parchment paper) and roll the pastry to fit the tray. Since puff pastry is very "forgiving", you can "cut & paste" if necessary.
- Spread onions over pastry.
- Dot with cheese& sprinkle with chervil.
- If you are preparing this for a party, you can prepare to this point and refrigerate- then bake later.
- Bake in preheated 400F oven for 20- 25 minutes or until cheese has melted& pastry is crisp.
- When removed from the oven, it will be puffed right up but allow it to cool for 5 minutes & it will fall back down. Cut into 20 serving pieces - this is easier done with kitchen scissors instead of a knife - then cut each piece in half diagonally.

HAM-AND-CHEESE FLATBREAD

- Make the flatbread dough by sprinkling yeast over the lukewarm water to dissolve. Stir in the sugar and allow mixture to sit for 5–10 minutes until it is foamy. Meanwhile, mix 2½ cups of flour (reserve the remainder to use if needed) and salt in a large bowl, or the bowl of a stand mixer fitted with the hook attachment.
- Add the yeast mixture, olive oil and dried herb (if using) to the flour and mix until the dough comes together, adding the remaining flour if necessary. Knead the dough on low speed for about 5 minutes or knead by hand on a lightly floured surface for about 10 minutes until the dough is smooth and elastic.
- Transfer dough to a bowl that has been lightly sprayed with cooking spray, cover with plastic wrap and allow the dough to rise in a warm spot for about 45 minutes–1 hour, or until the dough has doubled.
- While the dough is rising, slice the potatoes as thinly as possible with a sharp knife or about 1/16" thick. Place the slices in salted water until ready to use (to prevent the potatoes from oxidizing) and set aside.

- In a bowl, combine the flour, baking powder and salt, stirring to combine. Add the water and olive oil and mix with a spoon until the dough comes together. Use your hands to finish bringing it together into a ball, then knead it a few times on a floured surface.
- Roll the dough into your desired shape – I rolled in into a long oval about 1/4-inch thick – you want it to be thin. Place it on a nonstick (or parchment papered) baking sheet and brush with a bit of olive oil. Bake for 10 minutes, until a few air bubbles form and the dough is golden. Remove the bread from the oven and cover it with the garlic, ricotta (I kind of spread mine out but feel free to do spoonfuls), mozzarella, parmesan and gorgonzola. Return the sheet to the oven and bake for another 10 to 15 minutes, or until the cheese is totally melted, bubbly and golden. Let cool for a few minutes then cut into pieces – however many you’d like!

- Place an inverted tray or a pizza stone in the oven and preheat it to the highest it can possibly reach (Mine is 500ºF/260ºC).
- Store: Leftover cheese manakish should be stored in an airtight container in the fridge for up to a week.Freezer: Store the baked flatbreads, wrapped tightly in plastic wrap, in the freezer for up to three months.Thaw in the refrigerator before enjoying or reheat from frozen.Reheat: Reheat the cheese flatbreads in the oven at 250ºF/12º0C until warmed through. You can do this from room temp, chilled, or frozen - adjusting the time until the cheese manakeesh is warmed.

- Place the flour, water and salt in a bowl, mix with your hands until everything is incorporated and smooth. You may use a little more or less water than specified in the recipe, it depends on what type of flour you use.
- Boil or steam the potatoes like you would do for mashed potatoes. But don't incorporate the water as they need to be somewhat dry. If the mixture is wet it will make the interior mushy and will leak. I learned from my mistake (in the video is too mushy).
- In a bowl combine the farmer's cheese, with 1 egg, chopped scallions and dill, mix to combine. Season with salt generously, it's ok if it's a little bit salty.
