Steps:
- Okra must be cooked so that its slimy texture is eliminated.
- The Greeks have the best technique for achieving this.
- Trim the conical tops with a sharp knife, then soak the okra in red wine-viegar (Khall) for 30 minutes, allowing 1/2 cup vinegar per pound.
- Drain, rinse and dry the okra and proceed with the recipe.
- This dish is popular throughout the Middle East and can be prepared with lamb or beef.
- Serve with rice.
- Preheat an oven to 325 F (165 C).
- In a large frying pan over medium-high heat, warm 4 tablespoons of the butter or oil.
- Working in batches, add the meat and fry, turning, until browned on all sides, about 10 minutes.
- Using a slotted spoon transfer to a baking dish or stew pot.
- Add the onions to the fat remaining in the frying pan and saute over medium heat until tender and translucent, 8-10 minutes.
- Add the garlic, cumin, coriander, tomatoes, tomato paste, the 1 cup stock and mint (if using).
- Stir well.
- Pour over the meat and season to taste with salt and pepper.
- Cover and bake until all the liquid is absorbed, about 1 1/2 hours.
- Taste and adjust the seasonings.
- Meanwhile, prepare the okra as directed in the note above.
- In a saute pan over medium heat, warm the remaining 2 tablespoons butter or oil Add the okra and saute for 3 mins, stirring gently.
- Remove the stew from the oven and arrange the okra on top in a spoke pattern.
- Sprinkle the lemon juice evenly over the surface.
- Re-cover the dish and return it to the oven.
- Bake for 35 minutes longer.
- Add stock or water if the mixture seems too dry.
- Serve the"BAMIA" stew piping hot.

- In a heavy bottomed saute pan over medium-high heat, heat 1 tablespoon olive oil, add the beef and cook for 4-5 minutes without touching. Flip over and cook for an additional 4-5 minutes. Set the beef aside
- In the same pan, add the remaining olive oil along with the garlic, cilantro and onions and cook until soft and fragrant, about 2 minutes.
- Add the frozen okra, salt, pepper and 7 Spice to the garlic cilantro mixture and stir well, coating the okra with the mixture and breaking up the frozen okra. Cook the okra, stirring occasionally until the okra is fully cooked, about 10 minutes.
- Add the tomato paste, fresh cut tomatoes and 4 cups of water to the pan. Then return the beef tips, and mix to incorporate everything together. Lower heat to low and simmer covered for 15 minutes until sauce thickens.
- Serve over traditional Arabic rice pilaf and sprinkle fresh cilantro for garnish.

- If your beef is not already cut up, make sure to chop it up into large, 2-inch cubes before cooking
- In a large pot, add 2 Tbs butter. Melt on medium heat. Add the onions and fry until lightly browned
- Add the cubed beef to the pot. Increase heat to med-high and cook until the beef is brown all around. Don't cook it all the way through. Just enough to get a nice brown outer layer
- Add the tomato sauce, beef broth, bouillon, salt, pepper and lemon juice. Mix well and bring to a boil
- Once it starts boiling, add the frozen okra. Lower the heat back to medium and cook until the okra is completely tender (about 20 minutes)
- In a small frying pan, add 2 Tbs butter, the minced garlic and coriander. Fry for about 2 minutes until the butter is melted and the garlic is lightly browned
- Add the garlic mixture to the pot with the okra stew. Mix and cook for an additional 5 minutes
- Serve over white rice if desired. Enjoy!

BEEF AND OKRA STEW

- Heat half oil over a medium heat in a large saucepan.
- Brown the beef on all sides then remove from the pan and set to one side.
- Add the remaining oil and cook the onions over a medium to low heat for 3-4 minutes until softened.
- Stir in the garlic and spices and cook for a further 1-2 minutes, constantly stirring.
- Stir in the tomatoes and 2 cups of the stock.
- Add the beef. Cover and leave to simmer for 20 minutes until the beef is tender and falls apart to a fork. During this time stir occasionally and add more stock if necessary.
- Uncover and add in the okra.
- Cook for 15 minutes or until the okra is cooked through and the liquid has thickened.
- Season with salt and pepper to taste.
- Serve topped with fresh chopped parsley.

- Cut the stewing beef into bite sized chunks and place into a pot. Chop ¾ of the first onion and add it to the beef. Reserve the other ¼ onion for the sauce.
- Add the kpakposhito to the pot, whole.
- Add a cube of beef or chicken stock seasoning, top with water and braise until tender. Cooking time depends on the type of stewing beef used. While the beef is cooking, prepare the other ingredients as follows.
- Finely chop the second whole onion. Place a large pot on the stove and heat up the palm oil. Fry the onions in the oil until they just begin to caramelize.
- Add the diced ginger to the pot and fry for about 1 minute, just before adding the tomatoes.
- Chop the tomatoes into small chunks and place them into a blender or food processor. Add the ginger to the tomatoes.
- Add the remaining onion to the blender.
- Add the desired amount of scotch bonnet peppers.
- Pulse or liquidize the ingredients until smooth.
- Pour the mixture over the caramelized onions and allow the sauce to cook down and thicken. This should take 10 minutes, as oil begins to rise to the top. Stir regularly to prevent burning.
- Quarter the okra pods, then chop them into ¼-inch (5 mm) thin slices. Set aside.
- Break the smoked mackerel into chunks and add to the stew (optional). Add a little more water and allow to simmer for 5 minutes to allow the flavors to infuse into the sauce.
- Add the chopped okra into the stew and stir. A little more water may be added to encourage the okra to cook well. The presence of tomatoes in the stew slows down the sliming process. Simmer for 10 minutes.
- Add the cooked beef along with the stock created during the braising process and stir to incorporate into the stew. Simmer for 5 minutes.
- Check for seasoning and add salt if required. The dish is now ready to be served alongside banku.
EGYPTIAN BEEF AND OKRA
Adapted from an old cookbook. I have never knowingly had Egyptian food, so can make not guarantee as to its authenticity. But if you like an easy one-dish meal and okra, this if for you.

- Preheat oven to 375 degrees F.
- In a large skillet, brown beef over medium heat. Add onion and garlic and cook until wilted. Pour off fat. Add tomatoes and cook until softened. Add pepper, egg, and bread crumbs, stir; reduce heat and simmer 5 minutes, stirring occasionally.
- Meanwhile, butter a 1 quart casserole. Arrange okra along the outside with the tips toward the inside and the ends along the outside. Spoon meat mixture into the center.

OKRA STEW
This is a West African inspired rendition of an okra and tomato stew, great on its own or served as a sauce over meat or fish. There are some unusual spices here, and I use palm oil. You can get red palm oil, which is not overly refined, in some supermarkets, or you can get sustainably produced oil online. Or just use vegetable oil.

- Heat the palm oil in a soup pot over medium heat. It has a low smoke point, so when it smokes, add the onions and stir well. Cook them, stirring often, until soft. Add the garlic, ginger and minced chiles and cook another minute. Salt everything well.
- Stir in the tomato paste and cook that for a minute or two, stirring often. Add the diced tomatoes, the grains of Selim, and the stock and stir well. Bring to a simmer and cook uncovered for 15 minutes.
- Add the okra and cook another 15 minutes, or until the okra is tender. You want a fairly substantial stew, so only add additional water or stock if everything is getting sticky. Season with salt to taste and add the pepper in at the end. Serve over meat, fish or with rice.

BAMIA (MEAT AND OKRA STEW)
Steps:
- Gather the ingredients.
- In a large saucepan, brown meat with olive oil. Add onions and garlic.
- Add crushed tomatoes, stirring well with meat, garlic, and onion. Add cumin, coriander, salt and pepper, and allspice. Add water and tomato puree. Stir and combine well.
- Add okra and bring to a boil.
- Reduce heat to low and simmer for 2 hours, or until meat is tender and done.
- The sauce should thicken as it cooks. If it does not, add 1/2 cup all-purpose flour.
- Serve bamia with white rice and a salad. Enjoy!

- Heat the canola oil in a large pot over high heat. Sprinkle the beef with 1/2 teaspoon each salt and pepper. Add the beef to the hot oil and cook, turning, about 5 minutes. - 1. Begin by boiling the beef. Add the beef to your pressure cooker along with enough water to cover the meat plus a few inches. Do not cover at this time. Boil for 10 minutes on high heat. Throw away the first batch of water and rinse out the meat from excess fat. Add 6-8 cups of water to the beef along with whatever you typically use to boil meat. I like to add a half small onion, 1 large bay leaf, 1 cinnamon stick, a few cloves, 2 teaspoons of salt, and ½ teaspoon of black pepper. Cover with lid and set the pressure cooker on the highest level over medium-high heat. Once the pressure cooker begins to whistle after 7-10 minutes, lower the heat to medium and set a timer for 20 minutes. After 20 minutes, turn off heat and let pressure cooker release the steam. Set aside with the fresh broth. **
- Thaw the frozen okra for about 15 minutes. Heat up vegetable oil for frying. Deep fry the baby okra for about 8-10 minutes on medium heat until slightly crispy and light golden brown. Set aside until use.
- Wash the fresh cilantro and cut off the stems. Finely chop. It should come to about a cup or so of chopped cilantro.
- Crush the garlic with 1 teaspoon of salt using a wooden mortar and pestle if possible. Add the chopped cilantro and garlic to a large pot with 2 tablespoons of vegetable oil. Sauté for 3-4 minutes on low-medium heat.
