A crisp pastry case and a just-set creamy filling, quiche is a good solution to any meal dilemma from dinner parties, suppers, picnics and even afternoon tea

25g butter
500g small onion, (about 5 in total), halved and finely sliced
2 eggs
284ml pot double cream
140g mature cheddar, coarsely grated
280g plain flour, plus extra for dusting
140g cold butter

Steps:

  • To make the pastry, tip the flour and butter into a bowl, then rub together with your fingertips until completely mixed and crumbly. Add 8 tbsp cold water, then bring everything together with your hands until just combined. Roll into a ball and use straight away or chill for up to 2 days. The pastry can also be frozen for up to a month.
  • Roll out the pastry on a lightly floured surface to a round about 5cm larger than a 25cm tin. Use your rolling pin to lift it up, then drape over the tart case so there is an overhang of pastry on the sides. Using a small ball of pastry scraps, push the pastry into the corners of the tin (see picture, above left). Chill in the fridge or freezer for 20 mins.
  • Heat oven to 200C/fan 180C/gas 6. While the pastry is chilling, heat the butter in a pan and cook the onions for 20 mins, stirring occasionally, until they become sticky and golden. Remove from the heat.
  • Lightly prick the base of the tart with a fork, line the tart case with a large circle of greaseproof paper or foil, then fill with baking beans. Blind-bake the tart for 20 mins, remove the paper and beans, then continue to cook for 5-10 mins until biscuit brown.
  • Meanwhile, beat the eggs in a bowl, then gradually add the cream. Stir in the onions and half the cheese, then season with salt and pepper. Carefully tip the filling into the case, sprinkle with the rest of the cheese, then bake for 20-25 mins until set and golden. Leave to cool in the case, trim the edges of the pastry, then remove and serve in slices.

225g plain flour
100g butter
2-3 tbsp cold water
2 onions
170g extra mature grated cheese
2 large eggs
180g milk
Pinch of dark brown soft sugar

Steps:

  • Make the pastry (recipe from Bbcgoodfood website). Chill for 30 mins minimum. Whilst pastry chills, chop onions, and sauté with the sugar, in butter for 5-10 minutes. When cool,mix with cheese,and plenty of seasoning. Blind bake pastry case in 20 cm quiche/tart tin. Add cheese and onion filling to cooked pastry case. Mix eggs and milk,and pour into quiche tin. Bake for 50 mins on 170 fan/ 180 conventional oven. When cool enough to handle, remove quiche from tin.

2 (9 inch) unbaked frozen pie crusts
1 cup sliced onion
2 tablespoons butter
3 eggs
1 1/2 cups milk
1 teaspoon salt
pepper
1/2 teaspoon dried basil
2 cups grated cheddar cheese

Steps:

  • Saute onions in butter.
  • Beat eggs & add milk, salt, pepper, basil and onions.
  • Divide cheese in half, and spread evenly in bottom of each piecrust.
  • Pour milk mixture over cheese in both pies.
  • Bake at 400 degrees for 35-40 minutes.
  • Allow to set 5 minutes before serving.

125 g medium oats
1 pinch salt
125 g margarine
2 -3 tablespoons water

150 ml milk
250 g cheddar cheese, grated

  • place the flour, oats and salt in a mixing bowl and rub in the margarine until the mixture resembles bread-crumbs.
  • add the water and mix to a firm dough.
  • turn onto floured surface and need lightly until smooth.
  • roll out and use to line a 20 inch flan dish.
  • chill for 15 minutes.
  • meanwhile make the filling.
  • heat the oil in a pan; add the onions and fry gently till transparent.
  • mix the eggs and milk together, then stir in the cheese and onions salt and pepper to taste.
  • pour into flan case and bake in a preheated oven, 190 or 375, for 30-35 minutes.
  • serve hot or cold with salad.

2 tablespoons water, cold

Steps:

  • PASTRY CRUST:
  • Sift the all purpose flour into a mixing bowl.
  • Combine with the corn oil, butter and a dash of salt.
  • Mix well until the texture resembles bread crumbs.
  • Add the cold water, and mix well to form a dough.
  • Knead lightly and refrigerate for 20 minutes.
  • FILLING:
  • Chop the onions into cubes.
  • In a frying pan, saute the onions in butter.
  • Set aside.
  • In a mixing bowl, beat the eggs well.

  • QUICHE:

1 cup flour
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1/2 cup butter, cut into chunks
1 Tbsp. oil
1 onion, thinly sliced
6 eggs
1/3 cup MIRACLE WHIP Dressing
1/3 cup milk
1/2 cup KRAFT Shredded Sharp Cheddar Cheese
6 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Place flour in large bowl; cut in cream cheese and butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Shape into ball; flatten slightly. Wrap in plastic wrap. Refrigerate 1 hour.
  • Meanwhile, heat oil in large skillet on medium heat. Add onions; cook 15 min. or until golden brown, stirring occasionally. Remove from heat. Set aside until ready to use.
  • Heat oven to 375ºF. Roll out dough on lightly floured surface to 11-inch round. Press dough onto bottom and up side of 9-inch quiche dish or pie plate; trim edge. Whisk eggs, dressing and milk until blended; stir in cheddar, bacon and onions. Pour into crust.
  • Bake 45 to 50 min. or until knife inserted in center comes out clean.
