CHEESE AND ONION PUDDING
I used to make this all the time when I first learned to cook, as it's so easy and yummy. We just used to eat it served with some piping hot baked beans for a really cheap and filling meal.

Steps:
- Spread most of the butter on the bread and use the rest to grease a 2.5 pint casserole dish.
- Layer the bread, cheese and onion in the dish, finishing with a layer of cheese.
- Whisk the eggs with the remaining ingredients. Add salt and pepper to your taste, then pour into the casserole and set aside for 10 minutes.
- Bake in the top of a preheated oven, 200°C/Gas Mark 6 for about 30 minutes.

CHEDDAR GORGEOUS! CHEESE AND ONION BREAD AND BUTTER PUDDING
I have always prefered savoury food to sweet food, and this is a recipe I made up for a savoury version of one of my favourite sweet puddings, Bread and Butter Pudding. This savoury dish is easy to rustle up and makes a tasty supper, breakfast, brunch or lunch dish. Do try to use mature farmhouse Cheddar cheese, a little goes a long way as the flavour is so pronounced. This can be made the night before you need it, for breakfast or brunch, and then baked next morning - a great make ahead meal! NB: Do NOT use standard American style sandwich bread, it is too thin and will not crisp up!

- Butter 8 slices of bread and make sandwiches with the grated mature cheese and sliced onion. Cut the the sandwiches into four triangles and arrange them standing up with the points to the top, in a well greased baking dish. (Do NOT use standard American style sandwich bread, it is too thin and will not crisp up!).
- (Feel free to vary to contents of the sandwiches. If it doesn't have to be a vegetarian dish, some ham would be very nice. Or you might want to put some pickle on the sandwiches, some sliced tomatoes, cooked sausage or whatever you fancy.).
- Beat the eggs with the milk, mustard powder, salt, pepper, and the herbs.
- Pre-heat oven to 200C or 400°F.
- Pour the egg custard mixture over the sandwiches. (If you had any cheese left over, sprinkle it on top. Onion, too if you have any left over.) Allow the pudding to stand for about 30 minutes before baking - you get a lighter pudding.
- Bake the bread and butter pudding in the pre-heated oven for about 20 to 30 minutes, or until the cheese custard has set and the cheese on the top is golden.
- In a nutshell - it's cheese sandwiches with savoury custard poured over then baked in the oven - or savoury bread and butter pudding!
- Serve warm for breakfast, brunch, lunch or supper. Can be prepared the night before and baked next morning - bring it to room temperature for about 30 minutes before baking it however.

SARAH'S SAVOURY BREAD AND CHEESE PUDDING
A savory pudding made with sliced white bread, eggs, Cheddar and Parmesan cheeses, and anything else you may want to chuck in!! This is a very nice light dish. Ideal as an evening meal, or even a breakfast with a difference! Optional: Add grilled chopped bacon, mushrooms, ham, tomato, or anything else you can think of!

- Preheat oven to 350 degrees F (175 degrees C).
- Make 2 cheese sandwiches by placing cheese slice between 2 bread slices and pressing together. Cut each sandwich into 4 triangles and arrange in a lightly greased 9x13 inch baking dish.
- Mix together beaten eggs, milk, salt and pepper; pour mixture over sandwiches and sprinkle with grated cheese. (Note: Vary amounts if needed; sandwiches do not need to be totally covered in egg mixture, but egg should soak in and leave a little in the bottom of the dish.)
- Bake for 20 minutes or until golden brown, checking frequently.

AMARULA BREAD AND BUTTER PUDDING
A nice looking alternative to traditional bread pudding featuring Amarula Cream. ***Please note temp differences from C to F depending on region. 160 deg C = 325 deg F

Steps:
- In a pan, bring the milk, cream and vanilla essence to the boil.
- Use a little of the butter to grease a large oval pie dish.
- In a bowl, whisk the eggs and castor sugar until pale.
- Gradually add the milk-cream mixture, stirring.
- Add the Amarula Cream and strain through a fine sieve.
- Cut the bread rolls into thin slices and butter them.
- Arrange in the pie dish and sprinkle over the sultanas.
- Pour the Amarula mixture over the bread. The bread will float to the top.
- Place the dish in a bain-marie on top of folded newspaper and pour in hot water to come halfway up the sides of the dish.
- Bake in a preheated oven, 160 degrees(160 deg C = 325 deg F) for about 45 - 50 minutes.
- When the pudding is ready it should wobble very slightly in the middle.
- Remove from the oven and cool a little.
- Brush a thin coating of apricot glaze over the top of the pudding.
- Prior to serving, dust with icing sugar. Serve warm.

- Grease a large ovenproof casserole dish with some of the butter.
- Slice the bread and butter it.
- Place them in layers in the bowl, sprinkling the fruit on top of each layer.
- Whisk the eggs.
- Whisk the milk, cream, sugar and vanilla essence.
- Combine the eggs and the milk mixture.
- pour on top of the bread and fruit and leave to soak for about 2 hours, (until the bread is saturated). If there isn't enough liquid to cover the bread, add more milk and/or cream.
- Sprinkle the top with grated nutmeg.
- Bake in a medium oven for approximately 1 hour.
- The top should be golden brown, and the pudding will rise.
- Serve.

- Bring milk to boiling point in a small saucepan, DO NOT BOIL (known as 'scalding').
- Blend in cream and vanilla. Whisk eggs and sugar together in a bowl until creamy. Gradually whisk in milk mixture.
- Cut bread into quarters. Layer in a greased shallow casserole dish with sultanas an apples. Pour over milk mixture. Allow to stand for 15 minutes.
- Place casserole dish in a baking dish. Add enough hot water to baking dish to come halfway up the sides of the casserole. Sprinkle pudding with combined sugar, nutmeg and cinnamon.
- Bake at 180°C (350°F) for 40 to 45 minutes or until custard is set and golden. Serve with cream and fruit.

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together bread flour, salt, and baking powder until thoroughly combined. Beat in the butter, buttermilk, and confectioners' sugar to make a dough; gently mix in the onion and Cheddar cheese. Divide dough in half, and shape each half into a ball. Place the loaves onto the prepared baking sheet, and gently flatten to about 2 inches thick. Dust each loaf with flour.
- Bake on a preheated oven until browned, about 30 minutes. Cool on racks for a few minutes; serve warm.
