- Preheat oven to 400°F. Heat oil in a large skillet over medium-high; add ground round and onion, and cook, stirring often, until beef is crumbled and no longer pink and onion is tender, 7 to 8 minutes. Drain all fat from skillet, and place over medium.
- Add tomato paste to beef mixture in skillet, and cook, stirring often, 1 minute. Sprinkle beef mixture with flour, and cook, stirring constantly, 1 minute. Gradually add broth, and cook, stirring constantly, until mixture thickens, 3 to 4 minutes. Stir in diced tomatoes and chiles, mustard, Worcestershire sauce, salt, and pepper, and cook, stirring often, until mixture begins to simmer, about 2 minutes. Stir in 1/2 cup each of Monterey Jack cheese and Cheddar cheese, and cook, stirring often, until cheeses melt, 1 to 2 minutes. Spoon mixture into a lightly greased (with cooking spray) 11- x 7-inch baking dish. Top evenly with tater tots. Place dish on a rimmed baking sheet.
- Bake in preheated oven, uncovered, until bubbly around edges and potatoes are golden brown, 30 to 35 minutes. Sprinkle top with remaining 1/2 cup each of Monterey Jack cheese and Cheddar cheese, and bake until cheese is melted, about 3 more minutes. Remove from oven, and let stand 10 minutes. Sprinkle casserole with crumbled bacon, and garnish with chopped chives. Drizzle with ketchup, if desired.

- Preheat the oven to 350˚F (180˚C).
- Add 2 cups (200 g) of cheddar cheese and the butter to a large bowl. Mix to combine with an electric hand mixer or stand mixer.
- Add the flour, paprika, garlic powder, and 2 teaspoons salt and mix well. Add 3 tablespoons of ice water and mix. Add the remaining ice water 1 tablespoon at a time. The dough should hold together when pinched, but crumble apart if you break it up in your hand. If it seems too dry, add a bit more ice water.
- Transfer the dough to a clean surface and knead with your hands until it comes together. Shape the dough into a disc, then wrap in plastic wrap and chill in the refrigerator for 30 minutes.
- Lightly flour a clean surface and roll out the dough into a circle about ⅛ inch (8 mm) thick. Carefully transfer the crust to a 9½-inch (24-cm) glass pie dish.
- Trim the edges (save the trimmings to make crackers!). Poke holes in the bottom of the crust with a fork, then use the tines to crimp the edges. Line the dough with parchment paper and fill with pie weights.
- Bake for 30 minutes, until the edges are crisp.
- While the crust is baking, prepare the fillings. In a large skillet over medium-high heat, cook the bacon until crisp, 5-7 minutes. Using tongs, remove the bacon from the skillet and let drain on paper towels until cool enough to handle.
- Add the broccoli to the skillet and cook until lightly browned, about 5 minutes. Remove the pan from the heat.
- Chop the bacon.
- Remove the pie weights from the crust, then add the broccoli and chopped bacon to the center. Sprinkle with the remaining shredded cheddar cheese.
- In a medium bowl, lightly beat the eggs. Add the milk, remaining ½ teaspoon salt, and the pepper. Whisk to combine.
- Pour the egg mixture over the fillings in the crust.
- Bake for 35-40 minutes, or until the eggs are set and the top is lightly browned. Cover the edges with tinfoil if they are starting to burn.
- Let the quiche cool for 15 minutes before slicing and serving.

- Place a baking stone or inverted large baking sheet on the lowest rack of the oven and preheat to 450 degrees F.
- Cook the beef in a medium skillet over medium heat just until no longer pink, about 4 minutes. Using a slotted spoon, transfer the beef to paper towels to drain and let cool 5 minutes. Put the cooled beef in a bowl, stir in the mustard to coat and sprinkle with some salt and pepper.

- Preheat oven to 400 degrees.
- Grease a 9 by 13 inch glass baking pan.
- If using a metal pan, decrease the oven temp to 375 degrees.
- Combine Bisquick, and cheddar cheese, tossing until cheese is coated.
- Add 3/4 c. of milk.
- Dough may be slightly dry, and you can add more milk to make it spreadable.
- Press dough into greased pan, making sure to press it 1/2" up the sides of the pan.
- Set aside.
- In a medium sized mixing bowl combine the beef, onion powder or onion, cheddar cheese soup, veggies if you are using them, and milk.
- Use 1/4 C. milk for no veggies, 1/2 C. milk for the veggie addition.
- Spread the beef mixture over the prepared crust to within 1/2" of the edge.
- Bake for 20-25 minutes, until the crust is nicely browned.
- Remove from oven and top with 6 slices of cheese, setting the slices in two rows of three.
- Return to oven for 1-2 minutes, until slices are just melted.

- In a food processor, briefly pulse flour, sugar, and salt. Add butter and cheddar; pulse until mixture resembles coarse meal with a few pea-size pieces of butter remaining. - Sprinkle the yeast over the warm water and let stand 5 minutes.
- Gently stir to completely dissolve.
- With an electric mixer, blend the softened yeast into the cottage cheese, sugar, salt and egg.
- Add the flour in 1/2 cup portions to form a stiff but light dough and let rise in a warm place until doubled in bulk.
- Butter a 1 1/2 quart casserole dish and stir the dough down, then add 1 cup of the grated cheddar cheese.
- Turn into the buttered dish.
- Let rise 30 to 40 minutes longer or until almost doubled in size.
- Preheat the oven to 350 degrees F. and bake for 40 to 50 minutes or until golden brown.
