CHEDDAR-BACON-ASPARAGUS STRATA
I made this for my family last Easter and it was devoured. It is easy to assemble and tastes great. A real family pleaser.

- Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Crumble the bacon and set aside.
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Cover and bring the water to a boil. Add the asparagus, cover, and steam until bright green but still crunchy, about 5 minutes. Remove asparagus and set aside.
- In a large bowl, whisk together eggs, milk, dry mustard, salt, and pepper until smooth and well combined.
- Grease a 9x13-inch baking dish. Layer the bread slices into the bottom of the dish, cutting and fitting extra slices as needed to fill spaces. Sprinkle 1 cup of Cheddar cheese over the bread, followed by the diced onion. Arrange asparagus spears and red bell pepper in a layer over the onion. Sprinkle crumbled bacon over the red bell pepper; top with another layer of bread slices, cutting and filling in spaces as before. Pour the egg-milk mixture evenly over the casserole, and refrigerate overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake the casserole for 50 minutes; sprinkle 1 cup shredded Cheddar cheese over the top of the casserole, return to the oven, and bake until the cheese is melted and bubbling and a knife inserted into the center of the casserole comes out clean, 10 to 15 more minutes.

MUSHROOM, SWISS, & THYME BREAKFAST STRATA WITH OPTIONAL BACON
This fluffy vegetarian strata boasts earthy sauteed mushrooms, nutty Swiss cheese, and fresh thyme, along with a little bacon on top, just for the meat-eaters. You make it the night before, so all you have to do Christmas morning is pop it in the oven!

- In a medium saute pan, heat the olive oil and saute the onion and mushrooms until soft, about 5 - 6 minutes. Set aside.
- In a medium bowl, whisk together the eggs, milk, thyme, salt, and pepper until well-beaten.
- Spray an 8-inch x 8-inch x at least 2-inch deep baking pan/casserole dish with non-stick cooking spray (or grease with butter).
- Lay four bread slices on the bottom of the pan.
- Sprinkle bread with 1/2 of the sauteed vegetables.
- Add 1/2 of the cheese.
- Pour half of the egg mixture over the top.
- Add the remaining four slices of bread in a single layer, then the veggies, then the cheese. Pour the remaining egg mixture over the top.
- Cover tightly with plastic wrap or aluminum foil and refrigerate overnight, or for at least three hours.
- In the morning, uncover and bake at 325 degrees for about 50 minutes, until the strata is set (it will no longer jiggle in the middle).
- Let cool for about 10 minutes, then serve.

- Oil bottom and sides of a 9x13-inch baking dish with about a tablespoon of bacon fat.
- Place bread cubes in a large mixing bowl.
- Crack eggs into a separate mixing bowl. Season with salt, pepper, cayenne, and nutmeg. Add cream and whisk mixture thoroughly.
- Pour egg/cream mixture over the bread cubes and mix to distribute ingredients evenly. Allow bread mixture to sit about 15 minutes to absorb the liquid.
- Transfer half of the bread mixture to the baking pan; spread evenly over the bottom and press mixture down a bit. Top with half of the grated Cheddar cheese. Add cooked bacon pieces in an even layer over the cheese. Place the cooked spinach over the bacon; top with half of the remaining cheese. - Lightly coat a 3-quart rectangular baking dish with cooking spray; set aside.
- In a medium bowl, combine bacon, asparagus, and red peppers.
- Place half of the bread cubes in the prepared baking dish.

SAUSAGE AND CHEESE BREAKFAST STRATA
This has been our Christmas breakfast since I was a child. I look forward to it every year. You can really change it up and add any type of meat, cheese, or veggies you like. This can easily be a vegetation dish also. This dish is wonderful for lunch if you add chicken, asparagus and Swiss cheese. But, the breakfast strata brings back so many great memories, you just can't beat it!!

- Spray baking dish with Pam.
- Brown sausage and let it cool. Cook bacon and let it cool. Set both aside.
- Mix eggs and milk in separate dish (make sure eggs are well beaten).
- Add cubed bread, shredded cheese and cooled sausage to the egg and milk mixture.
- Pour all ingredients (except bacon into the baking dish).
- Add crumbled bacon to the top of the dish.
- Bake on 350 degrees for 45 minutes. It will puff up pretty high, like a quiche. Let is set for about 25 minutes before serving. It will settle and fall a bit.

This savory breakfast pudding looks a little like a pizza when it comes out of the oven. It can be prepared the night before through step 2 and baked the next morning.

- Butter a 2-quart shallow baking dish (oval or square); set aside. In dish, alternately arrange, cut side down, muffin halves and Canadian bacon. Sprinkle with cheddar and Parmesan cheeses. Set aside.
- In a large bowl, whisk together eggs, milk, mustard, 1/2 teaspoon salt, a pinch of pepper, and hot sauce until combined. Pour over muffins and bacon; cover tightly with plastic wrap. Refrigerate at least 2 hours and up to overnight.

Strata is the bread pudding of savory egg dishes. This super-easy treat generally includes cubes or slices of bread that have been soaked in custard then baked in a casserole dish. This is a great make- ahead dish. It tastes best if you prepare it the day before and let it soak overnight before baking. Like many egg dishes, a strata can incorporate all sorts of different ingredients, so there's a lot of flexibility here.

- Decide what filling option you would like to use.
- Option 1- Bacon, cheddar, mushroom and tomato: Sprinkle 2 cups grated cheddar cheese over the bread cubes. Distribute 1 cup crumbled cooked bacon (6-8 strips), 1 cup sautéed sliced white or shitake mushrooms, and 1 cup chopped tomatoes over the egg mixture.
- Option 2- Chicken, broccoli, corn, chilies, and jack: Sprinkle 2 cups Monterey Jack cheese over the bread cubes. Distribute 1 cup frozen corn kernels, 1 cup cooked broccoli florets, (2) 4.5 ounce cans (drained) chopped green chilies, and ½ cup shredded cooked chicken over the egg mixture.
- Option 3- Ham, Swiss and Asparagus: Sprinkle 2 cups grated Swiss cheese over the bread cubes. Distribute 1 cup blanched asparagus pieces, 1 cup cubed ham and ½ cup caramelized onions over the egg mixture.
- Option 4- Fontana, Spinach, Salami and Roasted Garlic: Sprinkle 2 cups Fontana cheese over the bread cubes. Distribute 1 cup frozen chopped spinach, 1 cup Italian salami (cut into match sticks) and ½ cup roughly chopped roasted garlic cloves (see below) over the egg mixture.
- Option 5- Vegetable-Blue Cheese: Sprinkle 1 cup crumbled blue cheese over the bread cubes. Distribute 1 cup cooked cubed celery root, 1 cup sautéed sliced zucchini and ½ cup sautéed sliced onions over the egg mixture.
- Butter a 9 x 13 inch baking dish. Put the bread cubes in the dish and sprinkle them with the cheese. In a large bowl, whisk together eggs, milk, mustard and salt. Pour the egg mixture over the bread cubes. Sprinkle the filling ingredients over the egg mixture and fold them gently. Cover and chill for at LEAST 4 HOURS AND UP TO 24 HOURS.
- Heat the oven to 350 degrees.
- Uncover the baking dish and bake for 60 minutes, until the mixture has puffed up slightly and is golden brown on top, and the strata doesn't shimmy with uncooked custard when you shake the pan. Tent the dish with foil if the top is browning too quickly. Let cool for 5 minutes before serving. Serve by the spoonful, using a large serving spoon.
