ULTIMATE CHICKEN QUESADILLA

Steps:
- 1. Spray large skillet with cooking spray; heat over medium heat. Add chicken and undrained tomatoes; cook 10 minutes or until chicken pieces are no longer pink in centers and liquid has evaporated, stirring frequently.
- 2. Spread chicken mixture evenly onto bottom half of each tortilla to within 1 inch of edge. Sprinkle 1/2 cup cheese over chicken mixture on each tortilla. Fold each tortilla in half to cover filling.
- 3. Clean skillet. Spray with additional cooking spray; heat over medium-high heat. Cook quesadillas 3 minutes on each side or until golden brown on both sides. Cut into wedges to serve.

Steps:
- Heat oven to 375°F. Remove pie crust dough from box. Let stand to bring crusts to room temperature, about 30 minutes.
- Meanwhile, in large bowl, toss chicken, chili powder and cumin; set aside.
- In 12-inch skillet, melt butter over medium-high heat. Stir in onions, garlic and chile. Cook and stir about 3 minutes or until tender. Reduce heat to medium.
- Stir flour and salt into onion mixture until distributed. Add broth and milk. Cook and stir until thickened and bubbly. Remove from heat. Add cheese; stir until melted. Stir in chicken, tomato and corn.
- Unwrap pie crusts. Gently unroll one crust in ungreased 9-inch glass pie plate. Gently press against side and bottom of plate. Spoon chicken mixture into crust-lined plate. Moisten edge of bottom crust with water. Top with second crust; seal edges, and flute. Cut slits in several places in top crust.
- Bake 20 minutes. Cover edge of crust with strips of foil to prevent excessive browning. Bake 15 to 18 minutes longer or until golden brown. Let stand 15 minutes before serving.

I had a quesadilla recipe that I swore by until my friend made these. I would make this every day if my husband would be okay with it. The best thing is that it's a great make-ahead meal!

Steps:
- Heat oven to 350 degrees.
- Drizzle the chicken with olive oil and season with salt and pepper. Bake for 15-20 minutes or until cooked through. Let cool and finely chop.
- In a small bowl, mix the sauce and cream.
- Spoon 1/4 of the sauce mix on the bottom of the casserole dish. Tear up the tortilla and spread along the bottom on top of the sauce.
- Cover with a third each of the cheese, chicken, onion and black beans. Repeat twice-There should be three layers.
- Top with the remaining tortilla, sauce mix and cheese.
- Cover tightly with foil and put it in the freezer if you want to or skip to cooking instructions.
- Thaw.
- Preheat oven to 400 degrees.
- Baked covered for 20 minutes, uncover and bake 10 minutes more.

BUFFALO CHICKEN POT PIE
Here's a spicy twist on chicken pot pie: The flavors of Buffalo chicken are combined with a creamy sauce, then baked between two pie crusts and studded with blue cheese. To cut down on prep time we call for store-bought pie crusts and use shredded cooked chicken meat (you can use leftover roast chicken, or meat from a rotisserie chicken). - Melt the butter in a large saucepan over medium heat. Add the garlic and onion and cook until translucent, about 3 minutes. Add the celery, carrots and a pinch of salt and cook until the colors brighten and the vegetables soften, about 5 minutes.
- Sprinkle in the flour and cook, stirring, until the butter and liquid is absorbed, about 2 minutes. Pour the stock and milk into the pot, stirring continuously to dissolve the flour, and cook until thickened, about 6 minutes. Remove from the heat and stir in the chicken, peas, hot sauce, sour cream and 1 teaspoon salt. Let cool to room temperature, about 15 minutes.
- Preheat the oven to 425 degrees F.
- Unroll 1 pie crust over a 9-inch pie plate, easing it over the bottom and gently pressing it up the sides. Let any excess hang over the edges. Spoon half of the cooled pot pie filling onto the bottom crust. Sprinkle half of the blue cheese on top. Pour the remaining filling on top and sprinkle with the remaining blue cheese. Unroll the top crust over the pie. Roll the bottom and top crust edges together and crimp.
- Whisk the egg and 2 tablespoons water in a small bowl to make an egg wash. Brush the top of the pie with the egg wash and make 4 slits on top (this will let steam escape). Bake until the crust is golden brown, about 40 minutes. Let cool for 15 to 20 minutes before slicing and serving.
