Whenever Luci Knepper of Salem, Ohio takes this colorful salad to a ladies luncheon, she gets compliments. "Even my son loves this...and he doesn't care for either cheese or sour cream. The apples add interest and a little crunch...and you can easily substitute cooked chicken for the turkey," she suggests.

- Remove seasoning packet from ramen noodles and discard or save for another use. Prepare noodles according to package directions. Drain an rinse in cold water., In a large bowl, combine the noodles, apples, turkey, cheese, peas, green onions and red pepper. In a small bowl, combine the dressing, sour cream and salt. Stir into noodle mixture. Cover and refrigerate for at least 1 hour.

CHEDDAR AND APPLE GRILLED CHEESE

- In an 8-inch nonstick skillet over medium heat, cook the bacon until crisp, about 5 minutes. Tear in half and set aside.
- Into the same skillet, add the brown sugar, onions and 1 tablespoon of the butter. Cook, stirring as needed, until the onions are golden, about 5 minutes. Transfer to a plate and set aside.
- Build the grilled cheese by spreading one piece of bread with the mayonnaise. Sprinkle half of the grated cheese on top, followed by the onions. Place the apple slices and bacon on top of the onions, then add the rest of the cheese. Spread the other slice of bread with the mustard and put it mustard-side down on top of the cheese. Spread the outside of the top bread slice with 1 tablespoon butter.
- Transfer the sandwich to the skillet over medium-low heat, butter-side down. Spread the top of the sandwich with the remaining tablespoon butter. Toast each side of the sandwich until golden on the outside and the cheese is melted, 3 to 4 minutes per side. Cut in half and serve.

- Stir together mayonnaise, dijon mustard and honey in a medium bowl. Add cheddar, dried cranberries and walnuts, stir until thoroughly combined.
- Place a tortilla on a work surface, spread about 1/3rd cheddar mixture. Top with turkey slices, spinach and sliced apples. Roll tightly and press gently to pack well.
- To serve as wraps: Wrap tightly with foil, seal edges and cut in half to serve. To serve as pinwheels: Slice rolls into 3/4 to 1 inch thick slices. Secure each pinwheel with a tooth pick. Pack into lunch boxes.

- Heat a skillet over medium heat with 1 tablespoon olive oil, 1 turn of the pan
- Add a pat of butter to oil and when it foams, add the onions, season with salt, and cook to caramel in color, 25-30 minutes, stirring occasionally
- Add a bit of water if they begin to brown
- Stir in light brown sugar and balsamic vinegar, let them dissolve and absorb, then remove from heat
- Core one apple and thinly slice or use a mandoline
- Heat a saute pan or skillet over medium heat with a couple pats of butter, and when butter foams, add the sliced apples and cook about 2 minutes on each side
- Season apples with a little nutmeg, a few grates, and 1 tablespoon lemon juice, then remove from heat and reserve
- Peel and quarter, then core and grate remaining apple, and add about 1 teaspoon lemon juice
- For burgers, in a bowl, combine turkey with Worcestershire, salt, black pepper, white pepper, grated apple, granulated onion, sage and Dijon mustard
- Form 4 large thin patties, thinner at center for even cooking
