1/2 cup Bleu cheese, crumbled
12 kalamata olives
2 cups turkey, torn
1/2 cup walnuts
1/2 cup croutons
1 green apple, sliced
1/2 cup red onion, sliced
Your favorite Italian Vinaigrette dressing

Steps:

4 tablespoons unsalted butter, melted
8 slices whole wheat bread
3 tablespoons prepared mustard, preferably a honey mustard
1 lb cooked turkey breast, sliced (roasted or smoked)
1 large green apple, such as granny smith,quartered,cored and thinly sliced
2 cups grated sharp cheddar cheese (about 1/2 lb.)

Steps:

  • Preheat oven to 400 degrees.
  • Butter one side of 4 slices of bread and place them, buttered side down, on a baking sheet.
  • Spread the mustard over the sliced bread.
  • Divide the turkey breast evenly over the mustard and arrange the apple slices on top.
  • Sprinkle the cheese evenly over the apples.
  • Butter the remaining 4 slices of bread and place them, buttered sides up, on the cheese, pressing lightly to compact the sandwiches.
  • Bake for 10 minutes, turning once with a metal spatula, until the sandwiches are golden brown and the cheese is melted.
  • With a sharp knife, cut the sandwiches in half diagonally and serve immediately.

These portable mini pies are a breeze to make with shredded, cooked turkey (great for leftovers), tart apples and a bite of cheddar. Perfect for a lunch pack or a healthy on-the-go option when rushing to a weeknight game.

2 cups shredded cooked turkey
1 tart apple, peeled and grated
1/2 cup grated sharp cheddar cheese
1 green onion, sliced
1/4 cup chopped parsley
7 1/2 cm frozen tart shells, thawed
1 egg, lightly beaten
1/2 teaspoon coarse salt

Steps:

  • In bowl, combine turkey, apple, cheddar, green onion and parsley.
  • Divide the mixture over four of the tart shells. Brush edges of tarts with egg and top with remaining shells. Brush with egg and sprinkle each with coarse salt. Using the tip of a sharp knife, make a few ventilation slits in the top of each pie.
  • Bake at 400°F (200°C) until pastry is golden and filling is hot and bubbling, about 35 minutes. Let cool for 5 minutes before serving.

Recipe from Eating Well and placed here for safe keeping. They say you can easily sub pears for the apples if you like. . .heck, I used some of each! This recipe is low carb, diabetic appropriate, low calorie, high fiber and gluten free - so it's a good one to serve at a party because it is sure to please everyone! And don't get hung up on the endive in the recipe; I know it's expensive and I just subbed it out for more spinach. I might also suggest a sprinkle of craisins or dried tart cherries on top; I felt it needed that since the apples/pears get super sweet in the oven and the tartness really brought everything together! Make Ahead Tip: Cover and refrigerate dressing (Step 2) for up to 1 week.

2 tablespoons apple juice
1 tablespoon extra-virgin olive oil
1 tablespoon honey
2 teaspoons Dijon mustard (I only used 1 tsp)
1/8 teaspoon salt
fresh ground pepper, to taste
2 apples, preferably Fuji, peeled and cut into wedges
2 teaspoons extra-virgin olive oil
1 tablespoon extra-virgin olive oil
4 sprigs fresh thyme (may sub 1/4 teaspoon dried)
1/4 cup chopped walnuts
3 cups Baby Spinach
3 cups torn boston lettuce
3 cups torn curly endive lettuce
2/3 cup grated sharp cheddar cheese
4 teaspoons dried cranberries (optional)

Steps:

  • Preheat oven to 400°F.
  • To prepare dressing: Whisk vinegar, apple juice, 1 tablespoon oil, honey, mustard, salt and pepper in a small bowl.
  • To roast apples and prepare salad: Toss apples with 2 teaspoons oil and thyme in a medium bowl; spread evenly on a baking sheet. Roast, turning once or twice, until the apples are soft and golden, 25 to 30 minutes. Discard fresh thyme, if using. Let cool.
  • While the apples are roasting, toast walnuts in a small baking pan until fragrant, about 5 minutes. Let cool.
  • Just before serving, combine spinach, lettuce and endive in a large bowl; toss gently to mix. Divide the greens among 6 plates, drizzle with dressing and top with cheese, roasted apples, walnuts and dried cranberries (if using). Serve immediately.

2 tablespoons raisins

  • In a bowl, mix together the first 4 ingredients; set aside.
  • In a small bowl, stir together the salad dressing and brown sugar; pour over the turkey mixture and gently toss.
