1 (11 ounce) box pie crust mix
1 1/2 cups shredded sharp cheddar cheese
1/3 cup apple juice
3 golden delicious apples, peeled, cored and thinly sliced
1/3 cup sugar
2 tablespoons cornstarch
1/4 teaspoon ground nutmeg
1 egg yolk, lightly beaten with 1 tbsp water

Steps:

  • Heat oven to 400°F.
  • In large bowl, with a fork, toss together piecrust mix, 1/2 cup of the cheese and the apple juice; shape into a ball.
  • Roll out on a floured surface to 14-inch circle.
  • Roll pastry back onto rolling pin; unroll onto a large baking sheet.
  • In a large bowl, toss together 1/2 cup of the shredded cheddar, apples, sugar, cornstarch and nutmeg.
  • Set aside.
  • Sprinkle remaining 1/2 cup cheddar cheese onto center of crust, leaving a 3-inch border.
  • Mound apple mixture on top of cheese.
  • Fold edge of crust up and partway over filling.
  • Brush crust with egg yolk/water mixture.
  • Bake 35-40 minutes until crust is lightly browned and apples are tender.
  • Cut into wedgest and serve warm.

This apple cheddar galette is made with honeycrisp apples, set in a cheddar herb crust and brushed with thyme butter! So delicious and perfect for fall.

4 cups sifted all-purpose flour
1 tablespoon sugar
3 teaspoons salt
¼ teaspoon dried thyme
1 large egg, (lightly beaten)
1 teaspoon white vinegar
1/2 cup ice cold water
1 cup cold unsalted butter, (cut into pieces)
2/3 cup finely grated sharp cheddar cheese
for brushing: 1 egg + a few drops of water, (beaten together)
coarse sugar mixed with a pinch of dried thyme, (for sprinkling)
2 large honeycrisp apples, (thinly sliced)
1 1/2 tablespoons cornstarch
1 1/2 tablespoons sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt
3 tablespoons unsalted butter
1 tablespoon fresh thyme leaves
pinch of salt

Steps:

  • Add the flour, sugar, thyme and salt to a food processor and pulse just until combined. In a small bowl, whisk mix together the egg, vinegar and water. Add the cold butter pieces and cheddar into the food processor and pulse until small coarse crumbs remain. Sprinkle the water/egg mixture over the flour and pulse again until the dough comes together.
  • Remove the dough with your hands and wrap it in plastic wrap. This dough makes enough for 2 galette crusts, so you can either separate it into 2 sections now, or separate it after it's refrigerated. Refrigerate the dough for 30 minutes. (The other dough can be thrown in the fridge for a few months!)
  • After 30 minutes, preheat the oven to 400 degrees F.

Crust:
1 1/2 cups (200g) all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoons sugar
1 1/2 sticks (170 g) unsalted butter
1/4 cup plus 2 tablespoons (85 ml) sour cream (full fat, not light)
2 tablespoons finely grated sharp cheddar cheese
Filling:
4 good cooking apples, such as McIntosh, Courtland, Jonagold, Pippin, Golden Delicious, Jonathan, Fuji, or a mixture of various cooking apples (NOT red delicious)
1/2 teaspoon lemon zest
1 half of a lemon, or the juice of half a lemon (to acidulate the water for holding the apples while you peel them to keep them from discoloring)
1 tablespoon maple syrup
2 teaspoons minute tapioca or instant tapioca for thickener (can substitute corn starch)
1 teaspoon ground cinnamon
1/2 cup lightly packed grated cheddar cheese
Finishing:
1 egg for egg wash
Coarse sugar for sprinkling on the crust

Steps:

  • Drain apple slices, sprinkle with maple syrup, cinnamon, minute tapioca, zest: Drain the apple slices. Place the apple slices back in the now empty bowl. Sprinkle with maple syrup and cinnamon and gently toss so that the apple slices are lightly coated with both. Add the minute tapioca and the lemon zest. Gently toss again.
  • Arrange apple slices on the dough: Starting from 2 inches from the perimeter of the pastry round, arrange the apple slices, side by side, in a circular pattern, filling the circle. It's okay if some of the apple slices overlap a little.
