Here is an inexpensive quick supper! When we were kids my mom used to serve the tomato soup version of this recipe...We called it SOS and would make "volcanoes" out of this dish. Maybe she should have renamed it "Stopplayingwith yourfood,dammit!"

Ingredients

4 medium potatoes, cut into 1 inch cubes
2/3 cup milk (or less)
salt and pepper
2 teaspoons vegetable oil
1 small sweet pepper, finely chopped (optional)
1 medium onion
1 lb lean ground beef
1 can tomato soup or 3/4 cup barbecue sauce
salt and pepper
1/4 cup thinly sliced green onion (optional)
1/2 cup cheddar cheese (optional)
salt and pepper

Steps:

Place potatoes in a med.
sauce pan with just enough water to cover.
Simmer until tender.
Heat oil in fry pan.
Saute onion and pepper in oil.
Add ground beef and brown well.
Add tomato soup (or BBQ sauce) to meat mixture.
Heat through.
Drain, mash potatoes.
Add enough milk to moisten and mash again.
Season to taste.
Divide potatoes equally onto four serving plates.
Make an indentation in the middle of each mound; fill with beef mixture.
Top with green chopped green onion and a sprinkle of cheddar cheese.

This dish is best described as comfort food. With the cheesy ground beef layered atop a bed of buttery potatoes, you will keep coming back for more. I use a mandolin to thinly slice the potatoes.

Ingredients

nonstick cooking spray
3 cups thinly sliced, peeled potatoes
2 tablespoons butter, melted
½ teaspoon salt
1 pound ground beef
1 (10.5 ounce) can cream of mushroom soup
1 ½ cups shredded sharp Cheddar cheese, divided
½ cup milk
salt and ground black pepper to taste

Steps:

Preheat the oven to 400 degrees F (200 degrees C). Spray a baking dish with nonstick spray.
Place sliced potatoes in a large bowl. Pour melted butter over top and sprinkle with salt; mix until potatoes are thoroughly coated. Line the bottom and sides of the prepared baking dish with potatoes, overlapping as needed.
Bake in the preheated oven until potatoes are fork-tender, about 30 minutes.
While the potatoes are baking, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
Transfer beef to a large bowl and add condensed soup, 3/4 cup Cheddar cheese, and milk. Season with salt and pepper and mix until well combined.
Remove potatoes from the oven. Pour beef mixture over top and return to the oven. Bake until heated through, about 15 minutes. Sprinkle remaining Cheddar over top and bake until melted, 4 to 5 more minutes.

This is a cute breakfast idea for Easter Sunday. I must confess that I didn't make mine in muffin cups--I just used an 8 1/2 x 11" pan for the hash browns and egg and added the cooked bacon at the end. This is a simple recipe kids could help make. If you don't have savory seasoned hash browns--add your own seasonings. Recipe courtesy of Ore-Ida Foods.

Ingredients

20 ounces hash browns, savory seasoned
1 egg, lightly beaten
1 1/2 cups cheddar cheese, shredded
1/2 cup sour cream
8 slices bacon, crisply cooked and crumbled

Steps:

Heat oven to 450.
Combine potatoes and egg in a large bowl.
Use hands to mix well.
Coat regular muffin pan with nonstick cooking spray.
Spoon 2 heaping tablespoons of potato mixture into each muffin cup.
Use fingers and back of spoon to press mixture firmly on bottom and sides of muffin cup.
Bake for 20 minutes or until potatoes are golden brown.
Sprinkle cheese into each potato nest and bake for 2 minutes or until cheese melts.
Wait 5 minutes before removing from pan.
Top with sour cream and bacon and serve.
