I got this recipe from my sister when I was still a teenager...loved to cook even then! This is nice served over rice.

1 lb ground beef
1/4 cup breadcrumbs
1 egg, beaten
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 tablespoon oil
1 large onion, quartered
2 carrots, sliced
1 green pepper, in chunks
1/2 cup brown sugar
1 tablespoon cornstarch
1/3 cup water
1/4 cup vinegar
1 tablespoon soy sauce
1 teaspoon chicken bouillon, powder

Steps:

  • Combine beef,crumbs,egg,garlic salt and pepper.
  • Form into 10-12 medium sized meatballs.
  • Heat oil in large pan, brown and cook meatballs,set aside .
  • Pour off fat except for 2 tbsp and stir-fry veggies in pan until tender-crisp,about 8-10 minutes.
  • In a small pan combine sugar,cornstarch,gradually blend in water,vinegar,soy sauce and chicken bouillion powder.Bring to a boil ,stirring constantly until thickened.
  • Add meatballs back into pan with veggies and pour the sauce over.

Meatballs:
1 lb Ground beef
1/4 cup Bread Crumbs
1 Egg, beaten
1/2 tsp Garlic Salt
1/4 tsp Pepper
1 tbsp Vegetable Oil
1 large Onion - Quartered
2 carrots, thinly Sliced
1 green Pepper, Cut in chunks
Sauce:
1/2 Cup Brown Sugar
1 tbsp Cornstarch
1/3 cup Water
1/4 cup Vinegar
1 tbsp Soy Sauce
1 chicken Boullion Cube

Steps:

  • Combine Ground beef, Bread Crumbs, Egg, Garlic Salt and Pepper Form into meat balls and brown evenly in a fry pan Cook until done pour off all by 2 tbsp fat Add prepared vegetables and stir fry over med heat for approx 6 mins or untill tender crisp In a small saucepan, combine Brown Sugar and Cornstarch Gradually blend in water, vinegar and soy sauce Add Bouillon cube and bring to a boil, stirring until well thickened and clear Add to vegetables, along with meatballs heat thoroughly and serve

A complete meal that's a snap to make and easy on the wallet. If you shop at Aldi's this is for you all the ingredients can be found there, and if you don't I am giving full explanation on quantities.

2 tablespoons olive oil
1/2 onion, finely minced
2 garlic cloves, finely minced
2 leaves fresh basil
2 bay leaves
1 1/2 cups red wine
1 3/4 ounces brown gravy mix (2 packets)
2 cups cold water
1 (12 ounce) can sliced mushrooms, drained
1 (16 ounce) package frozen turkey meatballs, thawed

Steps:

  • Sauté onions in olive oil on a medium high heat, let cook for about 5 minutes than add garlic and cook for another 2 minutes or until onions and translucent.
  • Add can of mushrooms, red wine, basil and bay leaves. Let simmer for 5 minutes.
  • Mix cold water and gravy mix per instructions on package and add to pan.
  • Add meatballs and let simmer until gravy thickens to lightly coat the back of a spoon.
  • Serve with plain white rice or buttered noodles.

Spicy Meatballs With Chickpeas image

Meatballs are the ultimate comfort food, and these are especially nice, perfumed with cumin, coriander and cinnamon. (Feel free to use ground beef, pork or turkey if ground lamb isn't available.) They may be prepared several hours or up to 2 days in advance - they reheat beautifully. Make the tomato gravy as piquant as you like, adding a good pinch of cayenne if you wish. The optional saffron adds a floral note. If you have the time, cook your chickpeas from scratch (it's best to soak them for at least a few hours or overnight). They'll cook in less than an hour. One pound dried chickpeas will yield about 6 cups cooked.

1 1/2 pounds ground lamb (or substitute ground beef, pork or turkey)
1/2 cup raw arborio rice or any white rice, rinsed and drained
2 teaspoons kosher salt
1 teaspoon toasted ground cumin
1 teaspoon toasted ground coriander
1/2 teaspoon ground cinnamon
1/2 cup finely diced onion
3 garlic cloves, grated or minced
Extra-virgin olive oil
1/2 cup finely diced onion
Kosher salt
Pinch of saffron, crumbled, steeped in 1/4 cup warm water (optional)
1 teaspoon toasted ground cumin
1/2 teaspoon red-pepper flakes, or to taste
1 (2-inch) cinnamon stick
1 (28-ounce) can plum tomatoes with their juices
1 cup chicken or beef broth (or chickpea cooking liquid)
6 cups cooked chickpeas
1/2 cup chopped parsley, cilantro or a combination

Steps:

  • Heat oven to 350 degrees. Make the meatballs: In a large bowl, combine ground lamb, raw rice, salt, cumin, coriander, cinnamon, onion and garlic. Knead mixture well.
  • Coat a sheet pan or roasting pan lightly with olive oil. With wet hands, form mixture into 1-ounce meatballs and arrange in one layer on pan. Bake, uncovered, for about 15 minutes, until lightly browned. Remove and let cool slightly.
  • Meanwhile, make the gravy: Place a wide heavy-bottomed pot or Dutch oven over medium heat. Add 2 tablespoons olive oil. When oil is hot, add onion, sprinkle lightly with salt and cook, stirring until softened and just beginning to brown, about 10 minutes.
  • Add saffron with soaking water, cumin, red-pepper flakes and cinnamon stick. Crush tomatoes with your hands, and add to pot, along with all tomato juices. Raise heat to medium-high, add broth and bring to a simmer. Taste and add more salt or red-pepper flakes as needed. Carefully add meatballs and adjust heat to a gentle simmer. Cover and cook for 30 minutes.
  • Warm 2 tablespoons olive oil in a wide skillet over medium-high heat. Add chickpeas and a splash of water and heat through. Season to taste with salt. Sprinkle with chopped parsley or cilantro. Serve each diner 5 or 6 meatballs and plenty of gravy. Add a large spoonful of chickpeas on the side.
