CHARRO BEANS (FRIJOLES CHARROS)
A hearty Mexican charro bean soup that is perfect for any day of the year.

Steps:
- Place ham hocks into a large pot and cover with water; bring to a boil. Boil until meat pulls back on bone, about 2 hours. Remove meat from bones, cut into bite-sized chunks. Reserve the bones but discard any fat.
- Chop 1/2 of the white onion, and leave other 1/2 whole; set aside.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, and chop when cool enough to handle. Pour bacon grease into a small bowl.
- Heat a large skillet over medium-high heat. Cook and stir chorizo in the hot skillet until browned and crumbly, 5 to 7 minutes. Place chorizo into a bowl with chopped bacon, tomatoes, chopped onion, and jalapenos.
- Place ham chunks and bones into a large pot, pour pinto beans over top. Add water to cover and bring to a boil over medium or medium-high heat.
- Meanwhile, heat bacon grease in a large skillet over medium heat. Add chorizo and vegetable mixture and saute until vegetables are soft, 5 to 7 minutes.
- When beans boil, add the remaining onion half and garlic. Let boil for 3 to 4 minutes; add sauteed vegetables and meat. Return to a boil; add cilantro and chicken bouillon. Continue to boil for 15 to 20 minutes. Remove bones, season with salt, and serve.

FRIJOLES CHARROS RECIPE
Steps:
- Cook the beans: Place the rinsed beans, onion, garlic, water and salt in a large pot. Bring to a boil over medium high heat. Once boiling, lower to medium low heat and let it reach a simmer. Cover and cook until tender, about 1.5 hrs. Check periodically to make sure there is enough water.
- When the beans are ready, remove the pot from the heat. Transfer 1 cup of the cooked beans with 1 cup of the broth to a blender and process until smooth. Set to the side until needed. Cook the "charro beans"
- Meats: Place a large pot over medium heat and brown the bacon. Feel free to remove excess fat at any point if needed. Transfer the bacon to a heat proof plate when ready.
- Leave enough fat to thinly coat the bottom of the pot and brown the franks. When almost browned add in the ham and cook for about a minute. Transfer the franks and ham with the browned bacon.
- Add the chorizo to the same pot and break it apart.
- Vegetables: when the chorizo has fully cooked and browned, stir in the onion. When the onion has slightly softened, mix in the garlic and serrano pepper. After about a minute, stir in the tomatoes and let them cook until the juices release (tender).
- When the tomatoes look fully cooked, dump all the meat back into the pot and mix to combine.
- Remove the onion and garlic from the cooked beans. Add the beans, broth and bean paste into the pot with the meats. Get the last bit of paste from the blender using water and pour into the pot as well.
- Stir and let it simmer. Then add the cilantro, stir and close the pot. Allow it to simmer for about 10 minutes. Lastly, taste and add salt if needed.
- Serve hot/warm as a side or main dish.

EASY COWBOY BEANS (FRIJOLES CHARROS)
This is a tasty, zesty side dish that can easily become a main meal. Serve soupy with warm flour tortillas or crusty bread, crumble corn bread on top, or scoop up with tortilla chips. Like mac and cheese, it's a great comfort food. It is easy to make because it doesn't require constant attention and is good for everything from a family meal to a football party. It can easily be doubled. Check flavor before serving and alter seasonings to taste if necessary. Top with more onion and cilantro as desired. If there are any leftovers, they hold up well and taste great the next day.

- Cook the beans the normal way.
- Separate the beans and the juice.
- In another pot put the juice; add the tomato and the onion.
- Cut the bacon in small pieces and the sausage too.
- Put the bacon and the sausage in the microwave for 1 minute on medium.
- Put in the pot the bacon and the sausage.
- Boil, all together, do not add water yet.
- Add some Tabasco or chili powder if you have.
- Boil it until the sousa has the flavor of the bacon and the sausage.
- Then add a lit bit of water, and let it boil for 1 minute.
- Then add the beans, and let it boil for 3 minutes.
- Keep stirring it.
FRIJOLES CHARROS
These beans are wonderful as a side dish to accompany your favorite meat, or even for breakfast served alonside eggs. Delicious! Note: Preperation time does not include soaking the beans over night. To make this dish in no time at all you can used undrained canned pinto beans.

- Place the beans in a large pot with half the onion, half the garlic, oil and epazote.
- Add 2 quarts water, bring to a boil, cover and simmer for 1 1/2 hours or until tender (35-45 minutes if done in a pressure cooker.)
- Add salt to taste.
- In a large saucepan or clay casserole, cook the diced bacon and chorizo until some of its fat is rendered, and add the remaining onion and garlic, and saute until the onion softens.
- Add the tomato and chile, and continue cooking until the tomato releases its juice (10 minutes).
- Add the cooked beans with their liquid and cook over a low flame for 20-30 minutes, stirring from time to time.
- Season with salt again to taste.

This is a quick version of the beans that are typically served in taquerias. They can be as smokey, spicy as you want, super satisfying version of the plain Jane brothy beans.

- In a large (4 quart) saucepan, cook the bacon over medium heat, stirring frequently until crisp, about 4 minutes. Add the garlic and stir for a minute, then add the tomatoes with their juice. Cook, stirring regularly, for 3 to 4 minutes to blend the flavors. Add the beans, with their liquid, and simmer over medium low heat for about 15 minutes.
- While the beans are simmering, stem the chilis, cut in half lengthwise and scrape out the seeds. Chop into small pieces and add to the beans. Taste and season with salt, if needed. Ladle into small bowls, sprinkle with the cilantro and serve.

I love the charro beans at Uncle Julio's restaurant in Texas. This seems to be a similar recipe. They don't have chili powder or cumin but are well seasoned and seem very fresh and light.

- Rinse and pick over beans.
- Place in a large pot and cover with water, approx 6-7 cups. Bring to a boil then cover and cook over med-low heat for 2-2 1/2 hours, until tender but still firm.
- Before the beans are done, fry the bacon in a large skillet until crisp. Remove and place on a small plate.
- Add garlic, onions and green pepper to the bacon grease in the skillet and cook till tender.
- Return the bacon along with the tomatoes to the skillet. Add the can of beer and simmer for a few minutes.
- Add the chopped cilantro and jalapenos to the skillet then put everything into the large bean pot.
- Add salt and pepper to taste.
