We still mourn the closing of Barclay Cafeteria in Charlotte, NC's Southpark Shopping Mall. This was one of their signature dishes and the local newspaper published the recipe in response to many requests when they closed. I make it frequently all year long but especially in summer squash season. It cooks up almost like a custard or souffle and is absolutely delicious.

2 lbs squash, sliced
1 medium onion, chopped
1/2 teaspoon salt, to taste
1/4 teaspoon pepper, to taste
8 ounces shredded american processed cheese, slices (Kraft sharp American slices)
1/4 cup butter or 1/4 cup margarine
1/4 cup plain flour
2 tablespoons sugar (some reviewers have suggested 2t so if you think 2T will be too sweet, adjust to your taste) or 2 tablespoons Splenda sugar substitute
2 eggs, beaten
1 cup milk

Steps:

  • Cook squash and onion, salted, in enough water to cover in saucepan until tender.
  • Drain well and mash.
  • Add cheese while still hot and stir until cheese melts.
  • Add butter.
  • Mix in flour, sugar and pepper.
  • Add eggs.
  • Stir in milk.
  • Pour into greased 9"x13" casserole.
  • Bake at 400 degrees for 45 minutes until center sets like egg custard.

BUTTERNUT SQUASH CASSEROLE

2 tablespoons extra virgin olive oil (divided)
1 large (3 1/2 pound) butternut squash (peeled, seeded, and diced into 3/4-inch cubes, divided (about 9 1/2 cups))
2 teaspoons minced fresh thyme (divided (rosemary works as well))
2 cloves minced garlic (divided (about 2 tablespoons))
1/2 teaspoon kosher salt (divided)
1/4 teaspoon black pepper (divided)
12 ounces kale* (tough stems removed and chopped or torn into bite-sized pieces, divided (I used curly kale))
1 medium yellow onion (thinly sliced, divided)
1 cup low sodium vegetable stock or chicken stock (divided)
1 cup fresh breadcrumbs** (or 3/4 cup panko breadcrumbs)
1/2 cup freshly grated Parmesan cheese
1 tablespoon minced fresh sage
1/2 teaspoon kosher salt
1/4 teaspoon ground nutmeg
2 tablespoons melted unsalted butter

Steps:

  • Preheat the oven to 375 degrees F. Generously grease a shallow 9x13-inch casserole dish or similar 3-quart baking dish with non-stick cooking spray.
  • Prepare the filling in two batches: Heat 1 tablespoon of the olive oil in a large, deep skillet or Dutch oven over medium heat. Add half of the butternut squash, ½ tablespoon of the rosemary, ¼ teaspoon salt, and 1/8 teaspoon pepper. Sauté until the squash is beginning to brown, about 3 minutes. The squash will still be too firm to eat.
  • Next, add half of the kale, half of the onions, and half of the garlic. Cook until the kale and onions begin to soften, about 4 minutes.
  • Add the 1/2 cup of the chicken stock, stir, and let cook 1 minute so that the stock reduces slightly.
  • Transfer the mixture to the prepared baking dish and with a spoon, prod it into a relatively even layer.
  • Heat the remaining tablespoon olive oil in the skillet, then repeat the above steps with the remaining half of each of the ingredients. Transfer the rest of the filling to the casserole dish. Cover the dish with aluminum foil and bake for 30 to 35 minutes or until the squash is soft when pierced with a sharp knife.
  • While the squash bakes, prepare the topping: In a small bowl, combine the breadcrumbs, Parmesan, sage, nutmeg, and salt. Pour the melted butter over the top. Stir to combine.
  • Remove the casserole from the oven, remove the foil, then sprinkle the top evenly with the breadcrumb mixture.
  • Reduce the oven temperature to 350 degrees F, return the dish to the oven, then bake uncovered, until the bread crumbs are golden, about 20 minutes. Serve warm.

This creamy yellow squash casserole is an easy side dish for any holiday occasion. It has a buttery cracker topping that's so divine!

3 lb. yellow squash, cut into 1/4-inch thick slices
1 yellow onion, peeled and chopped
3 tbsp. olive oil
1 1/2 tsp. kosher salt
1 tsp. ground black pepper
2 large eggs
8 oz. sour cream
1/2 c. mayonnaise
8 oz. sharp cheddar cheese
1 tbsp. chopped fresh thyme leaves
3 tbsp. butter, melted, plus more for the pan
1 1/2 sleeves round butter crackers (such as Ritz), broken (about 3 cups)
1/4 c. Parmesan cheese

Steps:

  • Preheat the oven to 400˚. Combine the squash and onion on a large tray. Drizzle with olive oil, and sprinkle with the salt and black pepper. Toss well to combine. Cook for 25 minutes, until the squash is slightly softened and has released its liquid. Drain the mixture through a colander. Press gently with paper towels to soak up any extra moisture. Let cool.
  • Reduce the oven temperature to 350˚. Place the eggs in a large bowl and whisk. Add the sour cream, mayonnaise, cheddar cheese, thyme and black pepper and stir together. Gently fold in the squash and onions (they can still be warm when you fold them in, just be sure they're not piping hot). Transfer the mixture to a lightly-greased three-quart baking dish. Cover and bake for 20 minutes.
  • In a small bowl, combine the melted butter, cracker pieces and parmesan cheese. Sprinkle in an even layer all over the top of the casserole.
  • Return to the oven for 25 to 30 minutes more, until the crackers are golden brown and the edges are bubbly. Let rest for 10 minutes before serving.

SUMMER SQUASH CASSEROLE

Yellow squash is easily overlooked (cauliflower gets all the attention), but with the addition of cheese and a buttery cracker topping, you can transform it into a summer casserole perfect for a barbecue or potluck.

8 tablespoons (1 stick) unsalted butter
4 medium yellow squash, cut into 1/2-inch-thick rounds (about 2 1/2 pounds)
Kosher salt and freshly ground black pepper
1 green bell pepper, diced
Half medium onion, diced
2 cloves garlic, minced
1/2 cup sour cream
4 large eggs
8 ounces shredded Cheddar (about 2 cups)
1/2 teaspoon thyme leaves (from 10 sprigs)
4 sprigs fresh chives, chopped
1 sleeve buttery crackers, such as Ritz (about 30 crackers), crushed
1/2 teaspoon hot sauce

Steps:

  • Preheat the oven to 400 degrees F. Put a large colander inside a large bowl.
  • Melt 2 tablespoons butter in a large skillet over medium heat. Add a third of the squash to the skillet, arrange in a single layer and sprinkle with 1/2 teaspoon salt and a few grinds of pepper. Cook, tossing occasionally, until the squash begins to soften and are golden brown spots, about 5 minutes. Transfer to the colander. Repeat 2 more times using 2 tablespoons of butter for each batch and sprinkling with 1/2 teaspoon salt and few grinds of pepper. Transfer each batch to the colander.
  • Add 1 tablespoon butter to the skillet along with the pepper and onion and cook, stirring occasionally scraping up any brown bits, until the vegetables are soft, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Let cool for 5 minutes then fold into the squash. Transfer the mixture to a 2-quart casserole dish.
  • Whisk together the sour cream, eggs, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Fold in the Cheddar, thyme and chives. Pour over the squash making sure that some of the mixture sinks down to the bottom.
  • Microwave the remaining tablespoon of butter in a medium bowl until melted. Fold in the crackers and hot sauce. Sprinkle evenly over the squash. Bake until the eggs are cooked through and the crackers are golden brown, 30 to 35 minutes. Let sit for 10 minutes before serving.

1 teaspoon salt

1 1/2 pounds cheddar cheese
1 cup Italian bread crumbs

Steps:

  • Preheat oven to 350 degrees F.
  • Saute squash, onion, and pepper in a saute pan with olive oil until squash is soft. Add salt and white pepper. Put into a casserole dish. Mix the cheese and 1/2 cup of bread crumbs into the casserole dish with the vegetables. Sprinkle remaining 1/2 cup of bread crumbs on top of casserole. Bake until golden brown.

SOUTHERN YELLOW SQUASH CASSEROLE

Also known as Summer Squash Casserole, this is a very simple yet authentic Southern recipe that my family has been making for years. This casserole goes very well with those summer, fresh vegetable dinners and is also a hit at pot luck dinners, family reunions, or any other gathering of people. As with all good southern food, make sure you have your bottle of bright red paprika ready to sprinkle on top. Enjoy!

7 large yellow squash, diced (about 8 cups)
1 large white onion, chopped
2 tablespoons butter
1 1/4 cups sour cream
1 teaspoon garlic salt
1/2 teaspoon black pepper
3/4 cup cheddar cheese, shredded
3/4 cup saltine crackers, crushed (you may also use Ritz crackers)
1 dash paprika

Steps:

  • Preheat oven to 350 degrees. Grease a small, square casserole dish.
  • Boil squash and onion in a large pot 15 to 20 minutes until tender.
  • Pour the squash and onion into a colander and drain. Press firmly against the mixture until all excess moisture is drained.
  • In a medium mixing bowl combine drained squash and onion mixture and stir in butter (while still warm) allowing the butter to melt. Fold in sour cream, garlic salt, black pepper, and 1/4 cup of cheddar cheese (note: reserve the remaining half cup for the topping). Check mixture to see if levels of salt and pepper suit your taste and adjust accordingly.
  • Add contents of bowl into the greased casserole dish. Layer with remaining 1/2 cup of cheddar cheese, and top with 3/4 cup saltine or Ritz crackers. Gently sprinkle paprika over top for color.
  • Bake 25-30 minutes until topping is lightly golden-brown.

2 tbsp olive oil
1 onion, sliced
2 garlic cloves, crushed
1 tsp cumin seeds
1 tbsp paprika
225g sweet potato, cubed
1 red pepper, deseeded and chopped
1 butternut squash (about 550g/1lb 4oz), peeled and chopped
400g can chopped tomato
200ml red wine
300ml vegetable stock
75g bulgur wheat
4 spoonfuls Greek yogurt
a little grated vegetarian cheddar cheese

Steps:

  • In a large pan, heat the olive oil, then cook onion and garlic for 5-7 mins until the onion is softened. Add the cumin seeds and paprika, then cook for a further 2 mins. Stir in the sweet potato, red pepper and butternut squash and toss with the onion and spices for 2 mins.
  • Pour in the tomatoes, red wine and vegetable stock, season, then simmer gently for 15 mins. Stir in the bulgur wheat, cover with a lid, then simmer for 15 mins more until the vegetables are tender, the bulgur wheat is cooked and the liquid has been absorbed.
  • Serve in bowls topped with a spoonful of Greek-style yogurt and some grated vegetarian cheddar.

1 cup mayonnaise (low-fat is fine)
1 small onion, chopped
1/2 teaspoon salt
3/4 cup parmesan cheese
2 eggs, lightly beaten
1/4 teaspoon pepper
2 lbs yellow squash, cooked just till tender & drained
1/2 cup breadcrumbs (crumbled Ritz cracker crumbs is okay)
1 tablespoon melted butter

Steps:

  • Mix mayonnaise, onion, salt, cheese, eggs and pepper.
