CHERRY DELIGHTS
This is another Christmas favorite in my house! I used to have so much fun pressing the cherries onto each cookie when I was younger. These cookies are sweet and delicious, both with and without the nuts! Cook time is if you bake about a dozen at a time.

Steps:
- Mix margarine and sugar until fluffy.
- Stir in Karo syrup and egg yolks; mix well.
- Mix in flour.
- Chill.
- Roll into 1 inch balls.
- Dip into slightly beaten egg whites and roll in chopped nuts.
- Place on greased cookie sheets.
- Press candied cherry halves into centers.
- Bake in 325 degree F oven for 20 minutes.
CHERRY DELIGHT
This is my mom's recipe. It is a family requested recipe that she usually makes for Christmas. She's even added green food coloring to the cool whip to give it the festive look.

Steps:
- Melt butter, pour into a 9 x 13 dish add graham cracker crumbs.
- Press in bottom of 9 x 13 forming a crust.
- Bake 350 degrees for 8 10 minutes.
- Let cool.
- Beat cream cheese and powdered sugar with a mixer until smooth and creamy.
- Pour on top of cooled cracker crust smooth out.
- Pour cans of cherries on top of the cream cheese mixture then top the cherries with cool whip.

- In a large bowl, dissolve 1 package of gelatin in 3/4 cup boiling water. Add 1 cup cold water; stir. Refrigerate until partially set, about 1 hour. Stir in cherries. Pour into a 7-cup mold coated with cooking spray. Refrigerate for 1 hour or until firm., In a small bowl, dissolve remaining gelatin in remaining boiling water. Stir in remaining cold water. CHARISHMA'S VERY TASTY BHINDI MASALA
I cooked this up this afternoon and we all really enjoyed every spoon of this. A dish that is inspired by Babbu uncle :)

Steps:
- Heat oil in a wok.
- Once hot, toss in the cumin and mustard seeds. Allow to splutter.
- Once it stops spluttering, add green chilli and onions. Stir-fry on medium heat until browned. Remove from heat and keep aside in a plate.
- Pour 1/4 cup of oil in the same wok.
- Add the chopped okra and stir-fry for a few minutes until cooked and aromatic. This way, the okra will not split while cooking and the dish turns out very tasty.
- Remove the okra from heat, once fried and lightly browned.
- Add the sauteed onion mixture back to the wok and toss in the fried okra. Mix well to combine and allow to cook for a minute on medium heat.
- Now, add all the masala {spice} powders and mix well.
- Allow to cook for 5 minutes.
- Add the chopped tomatoes, mix well and cover the wok. Allow the flavours to blend well and the tomatoes to cook until softened. This takes about 7 minutes.
- Uncover, add salt and mix well.
- Allow to cook for 2 minutes on medium heat.
- Remove from flame and serve hot with rotis.
- Enjoy!

- 1. Finely crush graham crackers, melt butter; mix together. Press into bottom of 9x13 pan.
- 2. Mix with mixer the cream cheese, powdered sugar, and Cool Whip. Spread over graham cracker crust. Top with cherry pie filling.

- Pressure cook the potatoes up to 4 whistles in the pressure cooker. Remove from heat and allow to cool.
- Mash the peeled potatoes thoroughly in a bowl.
- Add all the spice powders to the potato dough.
- In another bowl add flour and water. Slowly knead this mixture to obtain a flour dough.
- Now pinch off small portions of the flour dough and fill it with the potato dough.
- Make round balls and press each between the palms of your hands.
- Roll out each ball, not very large, about 6 inch in diameter (The same way as you make rotis).
- Heat a flat bottomed pan (tawa) and place the rolled out ball on it.
- Cook on one side until brown specs appear pouring a little oil on the underside.
- Flip and cook on this side too using a little oil until brown specs appear.
- Serve hot with yoghurt and mango pickle.
