CHARGRILLED BLUE-EYE COD WITH GREEN BEANS, TOMATOES AND CHICKPEAS

Steps:
- Place chickpeas in a bowl, add vinegar and two tablespoons olive oil and toss. Cook beans in lightly salted boiling water for about three minutes, drain and refresh under cold water. Drain again. Add beans to chickpeas with tomatoes and toss to combine. Brush blue-eye cod on both sides with extra oil and sear on a hot grill or barbecue for about two to three minutes, then turn, season with salt and pepper and continue to cook for about two to three minutes or until cooked as desired. Combine mayonnaise, garlic and basil and add enough hot water to lighten the texture a little. To serve, place bean mixture on serving plates, place blue-eye cod on top of beans. Top with a spoonful of basil aioli.
BRAISED COD WITH CHICKPEAS

- If canned chickpeas are used, rinse and drain them. Combine the cooked or canned chickpeas in a saucepan with the garlic, peppers or flakes, 3 tablespoons of the olive oil, and 1/4 cup of water. Bring the liquid to a simmer, cover the pot, and simmer for 20 minutes.
- Preheat the oven to 400 degrees.
- Remove and discard the whole peppers, if you used them. Add the cumin to the chickpeas and spread half the mixture in the bottom of a 9-inch-square baking dish. Place the fish on top, sprinkle with salt and pepper, and finish with the remaining chickpeas. Drizzle the remaining 3 tablespoons of olive oil over the top. Cover and bake in the preheated oven for 30 minutes, until the fish is just flaky but not falling apart; check after 20 minutes.
- Serve the fish hot or warm, garnished with cilantro or parsley and lemon wedges.
GREEN CURRY WITH COD AND GREEN BEANS

- Cut the fish into bite-size chunks and set aside.
- Heat the oil in a 2- to 3-quart saucepan over medium heat until a bit of curry paste just sizzles when added to the pan. Add the rest of the curry paste and cook, pressing and stirring with a wooden spoon or spatula, to soften the paste and mix it in with the oil, until fragrant, 1 to 2 minutes. Add the coconut milk and broth and bring to a simmer. Add the green beans and half the lime leaves (if using) and stir well.Gently simmer, stirring occasionally, until the green beans are almost tender, about 4 minutes. Add the cod, stir, and cook until the fish is just about done, about 2 minutes. Add the fish sauce and sugar and stir to combine. Remove from the heat.
- Tear the basil leaves in half, and stir them into the curry, along with the remaining lime leaves (if using). Let rest for 5 minutes to allow the flavors to develop. Serve hot or warm with rice or noodles, garnished with the chile slices (if using).

ROASTED BLUE-EYE COD WITH HERB CRUST
This recipe came from the'Sydney Morning Herald' and is wonderful. If you don't have cod, any firm fleshed white fish would be just as good. Do try it.

- Preheat the oven to 190 degrees C.
- Place the breadcrumbs, sage, parsley, parmesan and mustard in food processor and whiz until well combined.
- Transfer to a bowl and season to taste.
- Whisk the eggs and yolk and slowly pour in enough to form a slightly moist dough.
- Pat a half centimetre thick crust on the top of each piece of fish and place on a greased tray.
- Bake in the oven for about 10 minutes or until just cooked through.
- Meanwhile whisk the olive oil and lemon juice together and toss with the rocket.
- Serve the fish on starter plates with a small mound of rocket and a lemon wedge.
- With a glass of chardonnay.
