  • Combine one 14-ounce can no-salt-added diced tomatoes, 2 sliced garlic cloves, 2 sprigs thyme, 2 tablespoons olive oil and a pinch of red pepper flakes in a large microwave-safe bowl; add 2 cups cubed peeled butternut squash. Cover with plastic wrap and pierce the plastic; microwave until the squash is tender, about 15 minutes. Add 1 bunch chopped Swiss chard (stems removed) and toss. Cover and microwave 5 more minutes. Top with crumbled pecorino.

2/3 cup all-purpose flour, plus more for dusting
Kosher salt
1 pound Swiss chard, stems removed
1 1/2 cups whole-milk ricotta cheese
1/2 cup Parmesan cheese, plus more for topping
1 large egg, plus 2 egg yolks
Zest of 1 lemon, 1/2 finely grated, 1/2 removed in wide strips
Freshly ground black pepper
1/4 cup extra-virgin olive oil, plus more for drizzling
1 large clove garlic, thinly sliced
1 pound cherry tomatoes
2 tablespoons tomato paste
Pinch red pepper flakes
1 tablespoon lemon juice

Steps:

  • Dust a rimmed baking sheet with flour. Bring a large pot of salted water to a boil; add the Swiss chard and cook until wilted, 2 to 3 minutes. Remove the chard with tongs and transfer it to a kitchen towel. (Reserve the pot of water.) Squeeze the chard dry in the towel, then transfer it to a food processor and process until finely chopped.
  • Combine the chard, ricotta, Parmesan, whole egg and egg yolks, grated lemon zest and 1/2 teaspoon each salt and pepper in a large bowl; mix well. Mix in the flour until just combined. Scoop tablespoonfuls of the mixture onto the prepared baking sheet, then gently shake the pan to coat the gnudi in flour. Freeze at least 10 minutes.
  • Meanwhile, combine the olive oil and garlic in a large skillet over medium heat and cook until the garlic is golden, about 3 minutes. Remove the garlic with a slotted spoon and reserve. Increase the heat to high; add the tomatoes and cook, stirring, until they begin to pop. Reduce the heat to medium; stir in the tomato paste and red pepper flakes. Add 1 1/2 cups water, the lemon zest strips and reserved garlic. Cook, crushing the tomatoes, until thickened, 8 to 10 minutes; stir in the lemon juice. Remove the strips of lemon zest. Divide the sauce among bowls.
  • Return the pot of water to a low boil. Working in two batches, gently add the gnudi and cook until they float, then cook 1 minute longer for a total of about 4 to 5 minutes. Remove with a slotted spoon and add to the bowls. Drizzle with olive oil and top with Parmesan.

This is great for if you are cutting back on pasta or just trying something different. I came up with this dish for a light dinner but can it be served as a side or served with a salad. I prefer to serve this as a main dish with a light salad on the side. Spaghetti squash is a wonderful ingredient and is versatile with flavors. This dish tastes great with the Parmesan cheese at the end; add more at the table.

1 spaghetti squash, halved and seeded
3 tablespoons olive oil, or more as needed
1 small onion, diced
3 leaves green chard, stems and leaves diced
2 cloves garlic, chopped, or more to taste
1 tablespoon red pepper flakes
salt and ground black pepper to taste
2 tomatoes, seeded and diced
¼ cup chopped fresh parsley
3 sprigs fresh thyme, leaves stripped
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place spaghetti squash cut-side down on a baking sheet.
  • Bake squash in the preheated oven until soft and easily pierced with a knife, 45 minutes to 1 hour. Remove from oven and cool until easily handled, 5 to 10 minutes. Use a fork to scrape insides of squash into spaghetti strands; transfer to a bowl.
  • Heat olive oil in a large skillet over medium heat. Add onion and chard stems; cook and stir until translucent, about 5 minutes. Add garlic; cook and stir until soft, about 2 minutes. Stir in chard leaves; cook and stir until just wilted, about 3 minutes. Season with red pepper flakes, salt, and black pepper.
  • Stir squash, tomatoes, parsley, and thyme into the skillet. Cook and stir until flavors combine, about 5 minutes. Sprinkle Parmesan cheese on top before serving.

5 1/2 lbs swiss chard, stemmed
1/4 cup extra virgin olive oil
2 large onions, thinly sliced
1 tablespoon chopped fresh thyme leave
1 cup dry white wine
salt
fresh ground black pepper
3 cups low sodium chicken broth
1 loaf Italian bread (1 lb. loaf, day-old, crusty, chewy, peasant-style)
3 lbs tomatoes (sliced 1/2-inch thick)
9 ounces gruyere cheese, shredded (3 cups)
3 tablespoons unsalted butter, melted

Steps:

  • In a large pot of boiling water, cook the Swiss chard for 2 minutes; drain. When the leaves are cool enough to handle, squeeze out the excess water. Coarsely chop the chard.
  • In the same pot, heat the olive oil. Add the onions and thyme and cook over moderately low heat, stirring occasionally, until softened, about 12 minutes. Add the chard and white wine and simmer over moderately high heat until the wine is reduced to approximately 1/4 cup, about 5 minutes. Season with salt and pepper.
  • Preheat oven to 400 degrees. In a small saucepan, bring the chicken broth to a simmer. Butter a 10x15" baking dish. Line the bottom of the dish with 1/3 of the bread slices, over-lapping the slices slightly and cutting the bread to fit in the bottom of the dish. Top with half of the tomato slices and season with salt and pepper. Spread half of the chard on top, then sprinkle with half of the shredded cheese. Repeat the layering once more and then finish with the remaining bread. Pour the hot broth over the casserole and press with a spatula. Brush the top with the melted butter.
  • Cover the dish with foil and bake in the upper third of the oven for 1 hour. Uncover the dish and bake for 10 minutes longer, or until the top is browned and crisp. Let the casserole rest at least 10 minutes before serving.
  • The cooked chard can be made ahead and refrigerated for up to 2 days.

1 lb red swiss chard or 1 lb green swiss chard
3 tablespoons extra virgin olive oil
1/2 cup soft fresh breadcrumb
1 clove garlic, minced
2 small tomatoes, i use italian tomatoes,seeded and diced
1/4 teaspoon salt
crushed red pepper flakes

Steps:

  • Trim coarse leaves and thick center ribs from chard; cut tender stems and leaves into 1/2-inch slices.
  • Heat 1 tablespoon of the oil in a large skillet; add bread crumbs; cook, stirring often, until crisp and golden; remove from skillet and set aside.
  • Cool skillet slightly; add remaining oil and garlic; cook, stirring, 2 minutes; add chard and cook until wilted, 1-2 minutes; add tomatoes, salt, and red pepper flakes to taste.
  • Remove from heat and sprinkle bread crumbs over the top.

1 medium carrot coarsely chopped
1 small zucchini coarsely chopped
1 small yellow squash coarsely chopped
1 small red onion
2 tbsp olive oil
2 garlic cloves
3 cans chicken broth
4 cups Swiss chard
1 can great northern beans (15.5 oz) rinsed and drained
1 can diced tomatoes untrained
1 tsp dried thyme
½ tsp dried oregano
¼ tsp pepper
¼ cup parmesan cheese

Steps:

  • In Dutch oven or soup kettle, sauté carrot, zucchini, yellow squash, and onion in oil until tender. Add garlic and sauté 1 minute longer. Add broth, Swiss chard, beans, tomatoes, thyme, salt, oregano, and pepper.
  • Bring to boil, reduce heat, simmer, uncovered for 15 minutes or until chard is tender. Just before serving, sprinkle with parmesan cheese.
  • Tip: I prefer to use fire roasted tomatoes for an added kick of flavor. Depending on your tastes - add garlic as needed.

Steps:
