I've made this turkey every Thanksgiving for the past 15 years. We all love it. The secret is to use lots of fresh parsley on top and inside and to keep basting. That creates a tender, delightful turkey. -Sharon Hawk, Edwardsville, Illinois

1/4 cup butter, softened
1 teaspoon salt
1 teaspoon celery salt
3/4 teaspoon pepper
1 turkey (14 to 16 pounds)
Fresh sage and parsley sprigs, optional
2 medium onions, chopped
1-1/2 cups minced fresh parsley
1/2 teaspoon dried marjoram
1/2 teaspoon dried thyme
2 cups champagne or other sparkling wine
1 cup condensed beef consomme, undiluted
1 tablespoon butter
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 325°. Mix first four ingredients. Place turkey on a rack in a roasting pan, breast side up; pat dry. Rub butter mixture over outside and inside of turkey. If desired, place sage and parsley sprigs in cavity. Tuck wings under turkey; tie drumsticks together., Roast, uncovered, 30 minutes. Toss onions with parsley, marjoram and thyme; add to roasting pan. Pour in champagne and consomme. Roast, uncovered, until a thermometer inserted in thickest part of thigh reads 170°-175°, 2-1/2-3 hours, basting occasionally with pan juices. (Cover loosely with foil if turkey browns too quickly.), Remove turkey from oven; tent with foil. Let stand 20 minutes before carving. , Meanwhile, strain pan juices into a bowl. In a small saucepan, melt butter. Stir in flour until smooth; gradually add strained juices. Bring to a boil; cook and stir until thickened, 1-2 minutes. Serve with turkey.

TRADITIONAL ROAST TURKEY

One 14 to 16-pound frozen natural, young turkey
1 gallon vegetable broth, homemade or canned
1 cup kosher salt
1/2 cup packed brown sugar, light or dark
1 tablespoon whole black peppercorns
1 1/2 teaspoons allspice berries
1 1/2 tablespoons candied ginger, chopped
1 gallon water, iced
Ice
Canola oil, for roasting

Steps:

  • Two to three days before roasting: Begin thawing the turkey in the refrigerator or in a cooler kept at 38 degrees F.
  • Combine the broth, salt, sugar, peppercorns, allspice and ginger in a large stockpot and bring to a boil over medium-high heat. Stir until the salt and sugar dissolve. Remove from the heat. Cool to room temperature and refrigerate the brine.
  • The night before you'd like to eat: Truss the legs of the turkey with kitchen twine if desired. Combine the brine, water and ice in a 5-gallon bucket. Place the thawed turkey, with innards removed, breast-side down in the brine. If necessary, weigh down the bird to ensure it is fully immersed, cover and refrigerate or place everything in a cooler. Turn the bird once halfway through brining.
  • Day of roasting: Heat the oven to 500 degrees F. Remove the bird from the brine and rinse inside and out with cold water. Discard the brine.
  • Place the bird on a roasting rack inside a half sheet pan and pat dry with paper towels. Rub the bird with canola oil. Roast the bird on the lowest rack of the oven for 30 minutes.
  • While the bird is cooking, fold and shape a double thickness of aluminum foil into a closely fitting breastplate.
  • After 30 minutes, decrease the oven temperature to 350 degrees F, insert a probe thermometer into the thickest part of the breast and cook until the temperature reaches 155 degrees F. Use the breastplate at any point during cooking should the bird become too brown.
  • Rest the bird, covered lightly with aluminum foil, for 15 to 30 minutes. Carve and serve.

SALVADORIAN ROASTED TURKEY

10 large Roma (plum) tomatoes, halved and seeded
1 large green bell pepper, halved and seeded
2 tablespoons vegetable oil
1 (10 pound) whole turkey, neck and giblets removed
1 Granny Smith apple - peeled, quartered, and cored
1 (5 ounce) jar pitted green olives, drained
2 dried ancho chiles, stemmed and seeded
½ cup raw pumpkin seeds
2 bay leaves
1 onion, cut into chunks
salt and pepper to taste

Steps:

  • Place an oven rack in the topmost position and preheat oven on the broil setting. Line a baking sheet with aluminum foil.
  • Place tomatoes and bell pepper onto the baking sheet, cut-side down. Broil on top rack of preheated oven until the skins begin to blacken, about 5 minutes. Place charred vegetables into a bowl and seal with plastic wrap to steam until their skins loosen. Lower oven rack to accommodate a roasting pan, and turn oven to 325 degrees F (165 degrees C).
  • Meanwhile, pour vegetable oil into a roasting pan (or skillet large enough to fit the turkey), and place over medium-high heat. When hot, add the turkey and sear on all sides until browned, about 10 minutes. Once the turkey has been browned, place breast side up into the roasting pan, and stuff with quartered apples and olives. Set aside.
  • Heat a skillet over medium-high heat. Add the ancho chiles, pumpkin seeds, and bay leaves. Cook and stir until the pumpkin seeds begin to smell toasted, about 5 minutes, then pour the mixture into a blender.
  • Once the tomatoes and peppers have steamed enough that the skins have loosened, remove and discard the skins. Place tomatoes, green peppers, and onion into the blender with the pumpkin seeds. Blend until you have a thick, smooth sauce. Season with salt and pepper to taste, adding a little liquid from the olives if desired.
  • Brush the sauce onto the turkey, and place into preheated oven. Cook until a meat thermometer inserted in the meaty part of the thigh reads 180 degrees F (80 degrees C), about 3 hours, basting occasionally.

1 orange, cut into wedges

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line a turkey roaster with long sheets of aluminum foil that will be long enough to wrap over the turkey.
  • Stir together the parsley, rosemary, sage, thyme, lemon pepper, and salt in a small bowl. Rub the herb mixture into the cavity of the turkey, then stuff with the celery, orange, onion, and carrot. Truss if desired, and place the turkey into the roasting pan. Pour the chicken broth and champagne over the turkey, making sure to get some champagne in the cavity. Bring the aluminum foil over the top of the turkey, and seal. Try to keep the foil from touching the skin of the turkey breast or legs.
  • Bake the turkey in the preheated oven for 2 1/2 to 3 hours until no longer pink at the bone and the juices run clear. ½ cup butter, cubed
2 apples, cored and halved
1 tablespoon garlic powder

⅔ (750 milliliter) bottle Champagne

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rinse turkey, and pat dry. Gently loosen turkey breast skin, and insert pieces of butter between the skin and breast. Place apples inside the turkey's cavity. Sprinkle with garlic powder, salt, and pepper. Place turkey in a roasting bag, and pour Champagne over the inside and outside of the bird. Close bag, and place turkey in a roasting pan.
  • Bake turkey 3 to 3 1/2 hours in the preheated oven, or until the internal temperature is 180 degrees F (85 degrees C) when measured in the meatiest part of the thigh. Remove turkey from bag, and let stand for at least 20 minutes before carving.

1 tablespoon salt
3/4 teaspoon fresh ground pepper
1 teaspoon celery salt
12 -15 lbs turkey, ready to cook
4 tablespoons butter
2 onions, peeled, sliced, and coarsely chopped
1/2 teaspoon thyme
1/2 teaspoon marjoram
1 cup consomme
1 pint champagne (korbel or brut)
1 pint flour

Steps:

  • Start oven at hot (425 degrees F.).
  • Mix salt, pepper, and celery salt. Rub into turkey thoroughly, inside and out. Place Turkey in roasting pan. Rub 3 tablespoons Butter over breast and down sides. Roast 30 minutes.
  • Combine onions, thyme, marjoram, parsley, and consommé. Pour over turkey. Reduce heat to moderate (325° F.) and continue roasting another hour. Pour champagne over turkey. Roast an hour and then place breast side down. Baste frequently and continue roasting an additional 1½ hours or until turkey is done: 190-195 degrees Internal Temperature - Use a thermometer. Remove turkey to warmed platter.
  • Cover with foil. Let stand in warm place.
  • Strain pan gravy into a saucepan. Melt remaining 1-tablespoon butter in a cup. Stir in flour smoothly. Cook in microwave for 1 minute. Add cooked flour mixture to strained pan gravy gradually. Stir and let simmer 5 minutes.
  • Serve in warmed gravy boat.

1 (18 pound) whole turkey, thawed
1 ¼ cups chilled butter, diced
1 pound baby carrots
2 large onions, roughly chopped
3 stalks celery, roughly chopped
1 whole head garlic, cut in half crosswise
3 tablespoons chopped fresh thyme
3 tablespoons chopped fresh sage
2 bay leaves
1 (750 milliliter) bottle chilled Chardonnay wine
salt and ground black pepper to taste

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Position a turkey roasting rack in a roasting pan.
  • Remove the neck and giblet package from the inside of the turkey, if any, and rinse the bird thoroughly, inside and out. Pat the turkey dry with paper towels. Place the turkey onto the roasting rack. With your fingers, reach under the skin over the breast, and loosen the skin. Place the butter cubes underneath the skin of the breast, distributing them as evenly as possible over the whole breast. Poke 4 or 5 wooden toothpicks through the skin into the meat to secure the skin as it cooks.
  • In a bowl, mix the carrots, onions, celery, the two garlic head halves, thyme, sage, bay leaves, salt, and black pepper. Stuff the cavity of the turkey with as much of the vegetables and seasonings as will fit; sprinkle the rest, if any, into the bottom of the roasting pan. Lift the turkey upright so the cavity opening is uppermost, and pour the whole bottle of Chardonnay into the bird so that the wine flows into the pan. Lay the turkey back down onto the rack, and truss if desired. Cover the turkey with aluminum foil.
  • Roast in the preheated oven until until no longer pink at the bone and the juices run clear, about 7 hours. Remove the turkey from the oven, remove the foil, and roast until the skin turns brown and crisp, 25 to 30 more minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove from oven and let rest 10 minutes before carving. Serve cooked carrots, onion, and celery alongside the turkey, if desired.

1 1/2 cups unsalted butter, melted,plus
4 tablespoons unsalted butter, room temperature
1 (750 ml) bottle dry white wine
2 teaspoons salt
2 teaspoons fresh ground black pepper
classic prepared stuffing
1 cup dry red wine or 1 cup white wine, for gravy (optional)
giblet stock

Steps:

  • Serves 12 to 14 If your roasting pan only fits sideways in the oven, turn the pan every hour so the turkey cooks and browns evenly.
  • For step-by-step photos, see our Roast Turkey and Gravy feature.
  • Rinse turkey with cool water, and dry with paper towels.
  • Let stand for 2 hours at room temperature.
  • Place rack on lowest level in oven.
  • Heat oven to 450°.
  • Combine melted butter and white wine in a bowl.
  • Fold a large piece of cheesecloth into quarters and cut it into a 17-inch, four-layer square.
  • Immerse cheesecloth in the butter and wine; let soak.
  • Place turkey, breast side up, on a roasting rack in a heavy metal roasting pan.
  • Remove pop up time if there is one, use regular meat thermometer in thick part of leg.
  • Fold wing tips under turkey.
  • Sprinkle 1/2 teaspoon each salt and pepper inside turkey.
  • (Stuff loosely if you choose, I do not stuff) Tie legs together loosely with kitchen string (a bow will be easy to untie later).
  • Fold neck flap under, and secure with toothpicks.
  • Rub turkey with the softened butter, and sprinkle with remaining 1 1/2 teaspoons salt and pepper.
  • Lift cheesecloth out of liquid, and squeeze it slightly, leaving it very damp.
  • Spread it evenly over the breast and about halfway down the sides of the turkey; it can cover some of the leg area.
  • Place turkey, legs first, in oven.
  • Cook for 30 minutes.
  • Using a pastry brush, baste cheesecloth and exposed parts of turkey with butter and wine.
  • Reduce oven temperature to 350°, and continue to cook for 2 1/2 more hours, basting every 30 minutes, you will need to reheat the butter-wine mixture occasionally as the butter will harden.
  • Watch pan juices; if the pan gets too full, spoon out juices, reserving them for gravy.
  • After this third hour of cooking, carefully remove and discard cheesecloth.
  • Turn roasting pan so that the breast is facing the back of the oven.
  • Baste turkey with pan juices.
  • If there are not enough juices, continue to use butter and wine.
  • The skin gets fragile as it browns, so baste carefully.
  • Cook 1 more hour, basting after 30 minutes.
  • After this fourth hour of cooking, insert an instant-read thermometer into the thickest part of the thigh.
  • Do not poke into a bone.
  • The temperature should reach 180° (stuffing should be between 140° and 160°) and the turkey should be golden brown.
  • The breast does not need to be checked for temperature.
  • If legs are not yet fully cooked, baste turkey, return to oven, and cook another 20 to 30 minutes.
  • When fully cooked, transfer turkey to a serving platter, and let rest for about 30 minutes.
  • Meanwhile, make the gravy.
  • Pour all the pan juices into a glass measuring cup.
  • Let stand until grease rises to the surface, about 10 minutes, then skim it off.
  • Meanwhile, place roasting pan over medium-high heat.
  • Add 1 cup dry red or white wine, or water, to the pan.
  • Using a wooden spoon, scrape the pan until liquid boils and all the crisp bits are unstuck from pan.
  • Add giblet stock to pan.
  • Stir well, and bring back to a boil.
  • Cook until liquid has reduced by half, about 10 minutes.
  • Add the defatted pan juices, and cook over medium-high heat 10 minutes more.
  • You will have about 2 1/2 cups of gravy.
  • Season to taste, strain into a warm gravy boat, and serve with turkey.

1 bunch celery, coarsely chopped
4 carrots, coarsely chopped
4 onions, coarsely chopped
2 heads fennel, chopped (optional)
2 leeks, white part only,sliced
1 orange, sliced
2 tablespoons dried basil
12 lbs turkey, cleaned
4 ounces frozen apple juice concentrate
4 ounces water or 4 ounces white wine
6 ounces orange juice
2 ounces lemon juice or 2 ounces lime juice
2 tablespoons soy sauce

Steps:

  • In the bottom of a roasting pan large enough to hold the turkey, combine celery, carrots and onions.
  • In a small bowl combine fennel (if using), leeks, sliced orange and basil.
  • Toss to mix.
  • Place mixture in cavity of turkey.
  • Place turkey on top of vegetables or on a rack over vegetables to cook.
  • Make glaze: In a small bowl combine apple juice concentrate, water, orange juice, lemon or lime juice and soy sauce.
  • Set aside.
  • Place turkey in a preheated 400* oven 1/2 hour, then lower temperature to 350* and cook 2 to 2 1/2 hours, or until an internal temperature of 180* to 185* is reached.
  • After first half hour of cooking, baste bird every 10 to 15 minutes with glaze mixture.
  • Remove turkey from oven and allow it to rest 20 minutes before carving.
  • While turkey is resting, pour off all pan juices into a"de-fatting cup" and allow juices to separate from fat.
  • When separated, carefully pour into a serving pitcher or gravy boat.
  • Taste and adjust seasoning with salt and pepper.
  • Place turkey on a platter for carving.
  • Note: Removal of all skin before serving will lower fat content of each portion.
  • Makes 12 servings.

- 1 (7 lb) bone-in turkey breast
- 1/2 lb red seedless grapes, stemmned and cut in half (about 1 1/2 cups) divided
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 bottle (750 ml) champagne (see options)
- 1 3/4 cups chicken broth
- 2 tbsp cornstarch

Steps:

  • 1. Preheat oven to 350°F. Line a roasting pan with aluminum foil and coat with cooking spray. 2. Place turkey in pan and spoon 1 cup grape halves into neck cavity. Season turkey all over with salt and pepper. Pour champagne into pan around turkey. 3. Roast turkey for 2-1/4 to 2-1/2 hours, or until no pink remains and juices run clear, basting every 30 minutes with pan juices. If turkey begins to get too browned, cover loosely with aluminum foil. 4. In a medium saucepan, combine chicken broth, cornstarch, and pan drippings with fat removed; bring to a boil over medium-high heat, stirring constantly until thickened. Stir in remaining 1/2 cup grape halves and cook 1 to 2 minutes, or until heated through. 5. Carve turkey and serve with champagne-grape sauce. Options If you'd rather, you can use nonalcoholic sparkling grape or apple juice, or even apple cider, instead of champagne. It all works to make this a winning change-of-pace roasted turkey your gang will love!

Number Of Ingredients 10

1 tablespoon salad oil
2 -2 1/2 turkey legs (thigh and drumstick)
4 cups water
1 large onion, thinly sliced
1 3/4 teaspoons salt
1 1/2 cups half-and-half (you can cut down by using milk but not as good)
3 tablespoons butter
1/2 lb mixed mushrooms, sliced (natural is best)
6 ounces champagne (dry)
1/3 cup minced parsley

Steps:

  • In a skillet over medium high heat, in hot salad oil, cook turkey legs until well browned on all sides. Add water, onion, salt, and pepper. Heat until boiling. reduce heat to low and cover and simmer for 1 1/2 hours or until turkey is fork tender.
  • Remove turkey from skillet and cool slightly until easy to handle. Cut turkey meat into one inch pieces. Discard skin and bones.
  • Meanwhile over high heat cook turkey broth in skillet until it reduces to about one and a half cups. In a small bowl with spoon, blend flour with 1/2 cup half-and-half, Gradually stir in remaining half-and-half.
  • Cook stirring until cream sauce boils and is thickened.
  • In another skillet over medium heat stir in butter and cook mushrooms until tender and gently stir into cream sauce with turkey meat and champagne and 1/4 cup parsley.
  • Heat carefully until hot.
  • To serve, spoon turkey mixture into dish if you like. Garnish with remaining parsley, serve with white rice or even mashed potatoes.
