1/2 cup sugar
1/2 cup orange marmalade
1 1/2 cups champagne (or sparkling white grape juice)
8 large navel oranges, peeled and sectioned
1/2 cup slivered almonds, toasted

Steps:

  • Combine sugar and orange marmalade in a small saucepan; cook over medium heat until sugar dissolves.
  • Cool slightly.
  • Combine sugar mixture, champagne, and orange sections, stirring gently.
  • Cover and refrigerate 8 hours.
  • To serve, spoon orange sections into individual compotes or dishes, and sprinkle with almonds.

1/2 cup orange marmalade
1/2 cup sugar
8 large navel oranges
1 1/2 cups Champagne or sparkling white grape juice
1/3 cup toasted slivered almonds
Sprig of fresh mint

Steps:

  • Combine the marmalade and sugar in a small saucepan. Mix well, place over low heat and cook, stirring, until the sugar dissolves.
  • Cut the peel from the oranges, cut into slices and then quarter each slice, removing the white center pith from each. Put into a medium bowl.
  • Pour the sugar/marmalade mixture and Champagne or grape juice over the sliced oranges. Refrigerate for 8 hours.
  • Sprinkle with almonds before serving and add a sprig of mint.

1/4 cup crème de cassis (black-currant liqueur)
1 1/2 cups strained fresh blood orange juice (from about 6 oranges)
1 750-ml bottle chilled brut Champagne or dry sparkling wine
8 blood orange slices (optional)

Steps:

  • Spoon 1 1/2 teaspoons crème de cassis into each of 8 Champagne flutes or other glasses. Add 3 tablespoons juice to each glass. Fill each glass with Champagne, then stir gently. Garnish cocktails with slices of blood orange, if desired.

  • Add granulated sugar to a food processor. Using a vegetable peeler, remove peel from the oranges and also place in the food processor. You want to grab all of the orange zest but you can leave the white pith attached to the orange.
  • Pulse until the orange peel is chopped into small bits and mixed in evenly with the sugar. It should be an orange-hued, slightly moist mixture.
  • In a bowl, add sugar mixture and coconut oil/butter and beat using an electric mixer on medium speed until creamy. Add eggs and mix. Add orange juice, champagne, and salt and beat until all combined and mostly smooth.
  • Pour mixture into a saucepan set over low to low-medium heat. Stirring or whisking often, let curd heat until thickened and reaches 170°F. You'll want the curd to coat the back of a wooden spoon. Keep a close eye on the curd as it heats as you don't want to overcook it.
