- Preheat the oven to 350 degrees F. Lightly butter a 9-by-13-inch baking dish; line with parchment paper, leaving an overhang on 2 sides. Butter the parchment. Whisk the flour, oats, malted milk powder, cardamom, ginger, cinnamon, cloves and salt in a large bowl.
- Beat the butter and brown sugar in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Add the egg and vanilla and beat until combined. Reduce the mixer speed to low; beat in the flour mixture until just incorporated. Transfer the batter to the prepared pan and spread evenly.
- Bake until the top is golden brown and the edges start to pull away from the sides of the pan, 20 to 25 minutes. Remove from the oven and sprinkle with the white chocolate, then return to the oven until the chocolate softens, about 45 seconds. Remove from the oven and spread the chocolate into a smooth layer. Top with nonpareils. Transfer to a rack and let cool completely, then lift out of the pan using the parchment; cut into squares.
SPICY CHAI LATTE

Steps:
- Combine the tea bags, peppercorns, cinnamon sticks, ginger and 4 cups water in a large saucepan. Bring to a simmer over medium heat. Add the almond milk and sugar. Reduce the heat to low and allow to simmer gently for about 10 minutes.
- Strain the mixture into a small slow cooker to keep warm during a party or ladle directly into 8 mugs, taking care to leave the spices in the saucepan. Serve with rye on the side for guests to add 1 ounce themselves, and garnish with orange twists, if desired.
CHAI LATTE
Steps:
- Pour the milk into a small pot, add the cloves, green and brown cardamom pods, cinnamon sticks, sugar, tea leaves and ginger, and bring to a simmer. Turn the heat to low and simmer for 10 minutes. Strain into a 2-cup measure and, using an electric milk frother or an espresso machine, steam the milk until it is thick and foamy. Pour into 2 large latte cups and spoon the foam on top. Sprinkle with ground cardamom and cinnamon and serve.

- For the chai: In a 48-ounce French press coffee maker, combine the coffee, cardamom, cinnamon, ground ginger, allspice, grated ginger, pepper, cloves, salt and water. Place the lid on the coffee press with the plunger extended. Let the mixture brew for 4 minutes. Press down the plunger.
- While the coffee mixture is brewing, whisk the nonfat milk in a heavy medium saucepan over medium-high heat until very thick and foamy, 5 to 6 minutes.
- For the cinnamon sugar: In a small bowl, mix together the sugar and cinnamon until combined. Set aside.
- Pour the coffee mixture into a medium saucepan and rewarm over medium heat. Stir in the condensed milk. Divide the chai among 4 cups and spoon large dollops of the whisked nonfat milk on top. Sprinkle with the cinnamon sugar and serve.

- Sprinkle the tip of each popsicle mold with a little cinnamon, then add 1-2 tablespoons of vanilla cream into each mold. Sprinkle a little more cinnamon on top of the cream layer if desired.
- Put the popsicle mold in the freezer for at least 10 minutes so the cream layer can firm up a little. Do NOT add popsicles sticks yet.

- In a medium-sized pot add 2 ¼ cups water and bring to a boil. Add spices and whisk. Add 2 tea bags and turn off the heat.
- Allow tea bags to steep for 10 minutes. Lift and squeeze bags to extract remaining liquid into the pot, discard.
- Add 2 ¼ cup milk and 4 teaspoons maple syrup to the pot, whisk to combine. Taste the tea mixture and add more sweetener if desired.
- Evenly distribute the chai tea latte mixture into each popsicle mold. I use about 6 to 7 tablespoons per mold.
