CHAI-SPICED TEA COOKIES

I had been wanting to try this recipe for a long time. I finally bought some ground cardamom (the only ingredient I didn't have around my house) and made them. They are so good-- buttery and fragrant with the delicious flavors of spiced chai tea. I believe I tore the recipe out from a free magazine I got at Whole Foods a few years ago. Great served with tea or coffee.

Number Of Ingredients 10

1/2 cup unsalted butter, room temperature
1/4 cup granulated sugar
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
3/4 teaspoon ground cardamom
1/4 teaspoon salt
1 cup all-purpose flour
1/2-3/4 cup powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • Beat butter with granulated sugar in a medium bowl. Stir in vanilla.
  • In a separate bowl, combine spices, flour and salt with a wire whisk until well mixed. Add flour mixture to butter mixture and stir until combined.
  • Scoop teaspoons of dough and roll with hands into small balls. Place on a baking sheet, spacing them about 2 inches apart. Bake until lightly golden, about 15 minutes. Cool on the sheet for 5 minutes.
  • Place powdered sugar in a pie plate. Roll warm cookies in sugar and cool on a wire rack.

I got this out of a 2007 Pillsbury Holiday Cookie Book. I made them for our Christmas trays this year. They taste awesome and are very easy to make. Don't let the long list of ingredients scare you off.

1 cup butter, softened
2 cups flour
1/2 cup powdered sugar
1 1/2 teaspoons ground cardamom
1 1/2 teaspoons ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
4 teaspoons vanilla
2 egg yolks
1 1/2 cups powdered sugar
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon

Steps:

  • Heat oven to 350 degrees.
  • In large bowl, beat butter and 1/2 cup powdered sugar with electric mixer on low speed until well blended.
  • Stir in remaining cookie ingredients.
  • Shape dough by tablespoonfuls into balls.
  • On an ungreased cookie sheets, place balls 1 1/2 inches apart.
  • Bake 12 to 15 minutes or until very lightly browned.
  • Remove from cookie sheets to cooling rack and cool for 5 minutes.
  • In medium bowl, mix coating ingredients. Working in batches, gently roll warm cookies in coating mixture.
  • Cool on cooling rack 5 minutes.
  • Fluff up coating mixture with wire whip and roll cookies in mixture again.

If you love chai tea, these cookies are for you! The word 'chai' or 'masala chai' is a catch-all for a spiced black tea drunk in great quantities throughout Southwest Asia and parts of Africa. Any bagged spiced black tea would be lovely in this recipe - cut them open and use the mix inside. Store cooled cookies in an airtight container.

1 cup all-purpose flour
¼ cup white sugar
¼ cup powdered sugar
1 tablespoon chai tea mix
¼ teaspoon salt
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground cardamom
¼ teaspoon ground allspice
¼ teaspoon ground cloves
½ cup unsalted butter
½ teaspoon vanilla extract

Steps:

  • Combine flour, white sugar, powdered sugar, tea mix, and salt in a food processor or small chopper. Pulse until tea is pulverized and distributed throughout the dry ingredients. Mix in cinnamon, ginger, cardamom, allspice, and cloves. Add butter and vanilla extract. Pulse together just until a rough dough is formed.
  • Scrape out dough onto a piece of wax or parchment paper. Form dough into an 8-inch log. Cover with paper and roll the log until smooth. Chill for at least 30 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper or silicone baking mat.
  • Use a sharp knife to slice the chilled log of dough into 1/3-inch-thick pieces. Place on the baking sheets.
  • Bake in the preheated oven until edges are just beginning to brown, 10 to 12 minutes. Let cool on the baking sheets for 5 minutes. Transfer to wire racks to cool completely.

6 cardamom pods
1/2 teaspoon whole peppercorns
5 cups water
1/4 cup honey
2 cinnamon sticks (3 inches)
8 whole cloves
3 whole star anise
1 tablespoon minced fresh gingerroot
5 black tea bags
2 cups whole milk
1 tablespoon vanilla extract
Ground nutmeg, optional

Steps:

  • In a spice grinder or with a mortar and pestle, combine cardamom pods and peppercorns; grind until aromas are released., In a large saucepan, bring water to boil. Add cardamom mixture, honey, cinnamon sticks, cloves, star anise and ginger; simmer 5 minutes or according to taste. Remove from heat. Add tea bags; cover and steep 5 minutes., Meanwhile, in a small saucepan, heat milk. Strain tea, discarding spices and tea bags. Stir in hot milk and vanilla. Pour into mugs. If desired, sprinkle with nutmeg.

1/4 teaspoon salt
1 cup all purpose flour
3/4 cup finely chopped toasted almonds

Steps:

  • Preheat oven to 350°F. Using electric mixer, beat butter, 1/3 cup sugar, both extracts, spices, and salt in medium bowl. Beat in flour, then stir in almonds.
  • Using hands, roll dough into tablespoon-size balls. Place on large baking sheet, spacing apart. Bake until pale golden, about 25 minutes. Cool on sheet 5 minutes. Place remaining sugar in large bowl. Working in batches, gently coat hot cookies in sugar. Cool cookies on rack. Roll again in sugar and serve.
