CREAMY CABBAGE CASSEROLE
This creamy cabbage casserole is subtly spicy and has the perfect balance of sweet, tender cabbage to classic, creamy béchamel sauce. The cracker and cheese topping adds a nice bit of crunch in every bite. Serve alongside roasted chicken or pork.

Steps:
- Preheat oven to 350°F. Coat an 8-inch-square baking dish with cooking spray. Melt 2 tablespoons butter in a large Dutch oven over medium-high heat. Add cabbage, onion and celery; stir to coat well. Cover and cook, stirring occasionally, until the cabbage is tender-crisp, 15 to 18 minutes.
- Meanwhile, place the remaining 1 tablespoon butter in a small microwaveable bowl; microwave on High until melted, about 20 seconds. Add crackers to the butter and toss together until combined.
- Sprinkle the cabbage mixture evenly with flour and stir to coat. Stir in milk and bring to a simmer over medium-high heat. Simmer, uncovered, stirring often, until the sauce is thickened and creamy and coats the cabbage mixture, 2 to 3 minutes. Add mustard, salt, cayenne, nutmeg and 1/2 cup cheese; stir until the cheese melts, about 30 seconds.
- Spoon the cabbage mixture into the prepared baking dish. Sprinkle evenly with the remaining 1/2 cup cheese and the buttered cracker mixture. Bake until bubbly around the edges and golden brown on top, about 20 minutes. Let stand for 5 minutes before serving.

Steps:
- Bring water to boil in large pot.
- Add cabbage, celery, salt& caraway.
- Boil 5 minutes, drain well.
- Sauce: melt butter, add flour& cook, stirring 1 minute.
- Slowly add milk in stream, stirring continuously till sauce is smooth& thick.
- Add beer& continue stirring till foam disappears.
- Cook till heated through.
- Add cheddar, stir till melted.
- Season sauce with salt& pepper.
- Transfer to buttered 2 quart casserole and pour sauce over.
- Heat at 350 degrees for 30 minutes.
- Can add chunks of cooked ham or corned beef to vegetables.

- Note: You may use chicken bouillon cubes or vegetable broth or liquid chicken broth in place of chicken base and water.
- In large deep frying pan, pile the vegetables, dried onion and lemon pepper.
- Put the chicken base in water and microwave to dissolve or but all on top of veggies.
- Add olive oil on top and salt if desired. Put a lid on the pan and simmer on low heat. Mix with a spatula a few times. Cook for 15 minutes.
- Serve as a side dish.
- Options:.
- •Add 3 cups cooked rice or noodles and mix. Add margarine before adding.
- •Add 2 cups couscous and mix.
- •Add more chicken broth and add 2 tbsps cornstarch in 1/2 cup cold water and thicken and serve over hard Chinese noodles or mashed potatoes.
- •Add 3-4 cups cooked ham chunks or leftover ham.
- •Add canned corned beef cubes or leftover corned beef.
- •Add cooked turkey or chicken.
- •Add cooked shrimp or crab meat with the addition of 1/2 tsp dry mustard mixed.
- •Add cashew nuts and sliced pimentos before serving.

- Cut any thick celery stalks in half, trim all of it into thumb-size lengths, then wash and leave wet. Melt half the butter in a large frying pan, then add the celery, onion and bay leaves. Season, cover, then cook over a medium heat for about 30 mins, stirring occasionally to stop the onions catching.
- Meanwhile, prepare the breadcrumbs. Melt the remaining butter in a separate pan, then toss in the crumbs and walnuts, stirring often until lightly golden and toasted. Set aside.
- Heat grill to medium. When the celery is tender, turn the heat right up, pour in the wine and stock, then reduce by two-thirds. Pour in the cream, then reduce for a final few mins until you have a syrupy sauce. Check seasoning, tip into an ovenproof dish, then scatter with the breadcrumbs and Parmesan. Grill for 2-3 mins, until the sauce bubbles. Let it sit for 5 mins before serving.

- Cut the potatoes and celeriac into even sized pieces and cook in boiling water until tender. Use a pan that you can also use in the oven. Drain the vegetables and return to the pan.
- Meanwhile cook the shredded cabbage. Either by steaming it over the potatoes and celeriac or by cooking in a small amount of boiling water. Drain the cabbage.Keep hot.
- Mash the celeriac and potatoes with the milk, butter, salt and pepper.
- Add the drained cabbage to the mashed vegetables and mix well together.

This is a very tasty way to serve cabbage mixed with the celery. Do not over cook the veggies you want to have a crunch left. I often do this dish ahead and just pop it in the oven 25 minutes before dinner. I cut the soup back to 1/4 cup but it depends how saucy you like things

Steps:
- Combine the water and veggie cube in a saucepan add celery and cover simmer for 8 minutes (celery should still be crisp).
- Save a 3/4 cup of the liquid, drain the rest.
- Cook the cabbage in 1/2 cup of water for 4 minutes, drain thoroughtly.
- Mix the celery water with the soup& onions.
- Season to taste.
- Toss together the cabbage, celery, red pepper& water chestnuts.
- Mix with the soup mixture and pour into a lightly greased 1 1/2 quart casserole dish.
- Sprinkle cheese on top (omit cheese is you want to cut back on calories but it does give a nice finish& great flavor).
