1 lbs. of lean ground beef
1 (10-oz.) can Hy-Vee healthy recipe cream of mushroom soup
0.333 c. of Hy-Vee skim milk
1 (14.5-oz.) can Hy-Vee no-salt-added green beans
0.5 tsp. of Hy-Vee garlic powder
0.25 tsp. of Hy-Vee ground black pepper
1 c. of Hy-Vee 2% shredded Cheddar cheese
1 (14-oz.) pkg. frozen cauliflower veggie tots

Steps:

  • 1. Preheat oven to 375 degrees. Spray a 9x13-inch baking pan with nonstick cooking spray; set aside.
  • 2. Combine milk and cream of mushroom soup in a medium bowl. Add green beans, ground beef, garlic powder, and black pepper; stirring well to combine.
  • 3. Place mixture into prepared pan and top with Cheddar cheese. Place cauliflower veggie tots on top. Cook for 35 to 45 minutes or until tots are golden and filling is hot and bubbly.

2 lbs ground beef (or turkey)
1 onion, diced
4 garlic cloves, minced
2 cans condencsed cream of muschroom soup
4 c riced cauliflower
4 c cheddar cheese, shredded
2 tbsp chives
salt & pepper

Steps:

  • Saute the onions in a large skillet. Add the garlic and the beef and brown.
  • Add salt and pepper to the beef and stir in the cream of mushroom.
  • Place in the bottom of a greased 9x13 pan.
  • Cook the riced cauliflower.
  • Mix the cauliflower with 2 cups of shredded cheddar and 2 tbsp chives.
  • Spread on top of the beef. Top with the remaining cheddar cheese
  • Bake at 350F for 40 minutes or until cheese is browned.

1 boneless skinless chicken breast, shredded, about 1 cup
3 cups cauliflower, roughly chopped
1/4 cup onion, plus 2 tablespoons, diced
1 1/2 tablespoons garlic, minced
3 tablespoons fat free cottage cheese
salt and pepper, to taste
3/4 cup reduced fat shredded cheddar cheese
1 large egg white, (3 tablespoons liquid egg whites)
3 tablespoons fresh cilantro, chopped
1/2 cup whole wheat panko crumbs, plus 1 tablespoon
cooking spray
1/2 tablespoon olive oil
1/2 cup onion, diced (roughly 1 small onion)
3/4 cup red pepper, diced (roughly 1 large pepper)
1 tablespoon garlic, minced
16 ounces salsa, of choice, 2 cups
1 cup reduced fat shredded cheddar cheese

Steps:

  • For the Chicken: Bring a medium pot of salted water to a boil, and boil the chicken until no longer pink inside, about 10-15 mins. Shred with two forks and set aside for later use. For the Tots: Preheat your oven to 400°F and spray a baking sheet with cooking spray. Put the chopped cauliflower into a large food processor and process until broken down, and it looks similar to rice. Transfer the cauliflower into a large bowl and microwave for 3 minutes. Stir, and microwave an additional 2 mins Add the onion, garlic, and cottage cheese into the cauliflower. Stir well and season to taste with salt and pepper. Microwave for 20 seconds more. Stir the cheddar cheese, egg white, cilantro and panko into the mixture until well combined. Using a heaping Tablespoon, form the mixture into little ovals, packing together and placing them onto the prepared baking sheet. Spray the tots with cooking spray Bake for 15 minutes, flip and spray with some more cooking spray, and bake for an additional 10-15 mins or until the tots are crunchy and golden brown. While the tots are baking, heat the olive oil for the casserole in a large, oven safe pan on medium/high heat. Cook the diced onion, red pepper and garlic until nice and soft, 2-3 minutes. Add in the salsa and shredded chicken, stirring until well combined. Once the tots are cooked, sprinkle half of the cheese onto the salsa mixture, and then lay the tots on top of the cheese. Sprinkle with remaining cheese. Bake until the cheese is melted, about 5 - 7 mins.

1 large head cauliflower, broken into florets
½ cup bread crumbs
½ cup shredded Parmesan cheese
1 egg
1 egg white
1 tablespoon minced onion
1 tablespoon parsley flakes
salt and ground black pepper to taste
canola oil cooking spray

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 3 minutes. Drain and cool until easily handled.
  • Chop cauliflower finely until it is the size of rice grains.
  • Measure out 2 cups cauliflower "rice" into a large bowl. Add bread crumbs, Parmesan cheese, egg, egg white, parsley flakes, minced onion, salt, and black pepper. Form into 30 small logs. Arrange on the lined baking sheet; spray with cooking spray.
  • Bake in the preheated oven until lightly browned on the bottom, 8 to 9 minutes. Remove from oven, flip, and spray with cooking spray. Continue baking until lightly browned on the other side, 8 to 9 minutes more.

Number Of Ingredients 7

1 head cauliflower
2 tablespoons heavy cream
2 tablespoons butter
1/3 cup shredded sharp cheddar cheese
4 egg whites
salt & pepper
oil (for frying)

Steps:

  • Clean and trim the cauliflower, adding the florets to a microwave safe bowl.
  • Add the cream and butter to the bowl.
  • Microwave for 5 minutes.
  • Add the cauliflower and cheese to a magic bullet or food processor and blend until still chunky - kind of like a cooked oatmeal consistency. Season with salt and pepper.
  • Chill for at least half an hour.
  • Whip the egg whites to a stiff peak. Fold 1/3 of the egg whites into the cauliflower mixture to lighten it up. Then fold the cauliflower mixture into the rest of the egg whites and gently mix until combined.
  • For best results, chill for another half hour or they won't hold their shape as well.
  • Fit a pastry bag with a round or star tube with about a 3/4 inch opening. Spray the inside of the bag with nonstick spray.
  • Gently squeeze out 1 inch sections onto a greased cookie sheet, cutting with a butter knife as you go.
  • When finished, bake in a 375 degree oven for 10-12 minutes (or longer if you're skipping the frying) until puffed and slightly browned. Remove from the oven and serve - or heat 1/4 inch of oil in a saute pan and when it's very hot add the tots. It doesn't need long, a minute per side to turn them golden brown and crispy. Serve immediately.

1 tablespoon olive oil
1 pound turkey sausage
1 cup chopped onion
4 cups chopped broccoli
1 medium red bell pepper, chopped

6 large eggs
1 cup fat-free milk
salt to taste
¼ teaspoon black pepper
¼ teaspoon cayenne pepper
½ cup shredded Swiss cheese
½ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking dish with cooking spray. Arrange cauliflower tots evenly in the prepared dish.
  • Heat oil in a large skillet over medium heat. Add sausage and onion; cook, stirring occasionally, until sausage is browned, about 5 minutes. Add broccoli and bell peppers. Cook, stirring occasionally, until vegetables begin to soften, about 10 minutes. Spoon mixture over tots in the prepared dish.
  • Whisk together eggs, milk, salt, black pepper, and cayenne in a bowl. Pour evenly over sausage, vegetables, and tots. Sprinkle with Swiss and Parmesan cheeses.
  • Bake in the preheated oven, covered with foil, for 20 minutes. Uncover and continue baking until bubbly, about 30 minutes more.
