ROASTED CAULIFLOWER WITH CUMIN, CORIANDER AND ALMONDS

- Preheat your oven to 200°C/400°F/gas 6. Blanch the cauliflower in salted boiling water for a couple of minutes then drain in a colander, allowing it to steam dry (you don't want any water left in your cauliflower or it won't roast properly). Toss it in a good lug of olive oil and the butter. In a pestle and mortar, bash your spices and chillies with a pinch of salt, then mix them with your almonds and put in a hot, dry ovenproof pan to slowly toast them. After a couple of minutes, add the cauliflower. When it gets a nice bit of colour on it, add the lemon zest and juice and mix around well. Fry for about a minute longer then pop the pan into the preheated oven for about 15 minutes to crisp up.

CREAMY CAULIFLOWER "POTATO" SALAD
You won't miss the potatoes in this light and tangy take on potato salad, which gains crunch from celery and a little kick from horseradish.

- Bring a large pot of salted water to a boil over high heat. Add the cauliflower florets and cook until the cauliflower is soft and releases easily when pierced with a knife, about 8 minutes. Drain in a colander and spread out on a baking sheet. Pat the cauliflower dry with a clean kitchen towel or a paper towel, then set aside and let cool to room temperature, about 30 minutes.
- Meanwhile, whisk together the sour cream, horseradish, mayonnaise, chives, cider vinegar, celery, 1 1/2 teaspoons salt and 1 teaspoon pepper in a medium bowl.
- Fold the cauliflower into the dressing and season with more salt and pepper to taste. Serve immediately.
INCREDIBLE BAKED CAULIFLOWER AND BROCCOLI CANNELLONI

- This is a twist on the classic Italian dish of orecchiette with broccoli, anchovies and garlic - I've added cauliflower and made it an oven-baked dish. The flavors are amazing.
- Preheat the oven to 375 degrees F. Bring a large saucepan of salted water to the boil and drop in the chopped broccoli and cauliflower. Boil for 5 to 6 minutes, until cooked, then drain in a colander, reserving the cooking water.
- Heat a wide saucepan, pour in a couple of good glugs of olive oil and add the garlic. Fry for a few seconds, then add the thyme leaves, anchovies, anchovy oil and chiles and continue frying for a few seconds more before adding the cooked broccoli and cauliflower with around 4 tablespoons of the reserved cooking water. Stir everything together, put a lid on the pan leaving a little gap, and cook slowly for 15 to 20 minutes, stirring regularly - overcooking the vegetables not only intensies their flavor but gives you the texture that you need for this recipe. Remove the lid for the last 5 minutes to let the moisture evaporate, then use a potato masher to crush the vegetables. Take the saucepan off the heat, taste the vegetables and season carefully with salt and pepper. Spread the mixture on a baking sheet to cool. Meanwhile, get yourself another baking dish or roasting pan (the right size for fitting the cannelloni tubes snugly side by side - I test this by actually laying the tubes into the dish, then remove them and put to 1 side) and pour in the tomato sauce with a pinch of salt and a swig of red wine vinegar.
- Now, to make a really quick and easy white sauce, mix the creme fraiche with half the Parmesan, a sprinkling of salt and pepper and a little of the reserved cooking water to thin it down.
- Spoon your cooled broccoli and cauliflower mixture into a large sandwich bag and cut off the corner. Twist the top of the bag and squeeze it to pipe the filling into the cannelloni tubes. (If you prefer, use a teaspoon to push the mixture into the cannelloni or use a piping bag.) Fill the tubes up - don't be stingy! - and place them in a single layer on top of the sauce. Lay the basil leaves over the cannelloni and spoon your white sauce evenly over the top. Season with black pepper, sprinkle over the remaining Parmesan and tear over the mozzarella. Drizzle with extra-virgin olive oil and bake in the preheated oven for 30 to 40 minutes, or until golden and bubbling on top.
- Dress the arugula leaves with a squeeze of lemon juice and about 3 times as much extra- virgin olive oil. Serve the cannelloni with the arugula and some good crusty bread.

- MAKE THE BATTER FIRST:.
- Smash up the cumin and mustard seeds, chiles and peppercorns in a pestle and mortar until you have a powder.
- Put the flour into a mixing bowl and stir in the ground spices and the turmeric.
- Pour in most of the beer and whisk gently.
- Check the consistency - you want it to be the thickness of heavy cream. If it's too thick, whisk in the rest of the beer.
- Don't worry too much about having little lumps in the batter, as they'll just become nice crunchy bits when you start frying.
- Season with sea salt and put aside.
- NOW PREPARE THE VEGETABLE:.
- Trim the bottom of the stalk and break the cauliflower into bite-sized florets.
- Slice up the stalk into 1-inch pieces - this way it will all cook at the same rate.
- Wash the cauliflower, drain it and pat dry with kitchen towels.
- Place the cauliflower pieces in a bowl and dust with a little flour.
- Pour the oil into a deep saucepan - you want it to be about 4 to 5 inches deep - and heat it to 350º F.
- If you don't have a thermometer don't worry, just drop a piece of potato into the oil;.when it floats to the surface and starts to sizzle, the oil will be at the right temperature so remove the potato from the pan.
- Shake any excess flour off the cauliflower.
- One by one, dip the pieces into the beer batter, then carefully place them in the hot oil, moving them away from you as you do so.
- Make sure you stand back so you don't get splashed. It's best to fry them in batches so you don't overcrowd the pan (but serve them as soon as each batch is ready).
- Each time a batch of cauliflower is nearly ready, add some battered parsley leaves to the pan and fry for 40 seconds (you want to serve them scattered over the fritters).
- Fry the pieces gently, turning them a couple of times with a slotted spoon.
- When they're browned and crisp, lift them out of the oil, allowing any excess to drip back into the pan, and drain on kitchen towels.
- Dust with sea salt and squeeze over a little lemon juice.
- Enjoy!

- Heat oven to 200C/180C fan/gas 6. Toss the cauliflower with the olive oil, season and roast for 15 mins. Stir in the red onion and carry on roasting for 15-20 mins more until tender.
- While the cauliflower is roasting, mix the vinegar, honey and raisins with some seasoning.
- When the cauliflower is done, stir in the dressing, dill, almonds and spinach, and serve.

MACARONI CAULIFLOWER CHEESE BAKE
This is one of Jamie Oliver's quick pasta meals, from his Ministry Of Food cookbook. You can either serve the dish unbaked so it is silky and gooey, or you can grill it so it has a crispy, golden topping. You can add a grated hard-boiled egg, flaked smoked haddock, or cooked prawns if you want.

- TO PREPARE YOUR PASTA:.
- Remove the outer green leaves from the cauliflower and discard.
- Slice the end off the cauliflower stalk.
- Cut the head into small florets.
- Halve the thick stalk lengthways then slice thinly.
- Grate the cheddar cheese and parmesan into a large bowl.
- Finely chop the parsley stalks and leaves.
- TO COOK YOUR PASTA:.
- Bring a large pan of salted water to the boil.
- Add the macaroni and all of your cauliflower and cook according to the macaroni packet instructions.
- Place the bowl of cheese over the saucepan and add the creme fraiche.
- Carefully stir every so often until the cheese is smooth and melted.
- If the water boils up underneath the bowl, just turn the heat down slightly.
- Add all the chopped parsley to the melted cheese and season with a pinch of salt and pepper.
- Carefully remove the bowl of cheese using a towel or oven gloves and set aside.
- Drain the macaroni in a colander over a bowl, reserving the cooking water.
- Return the pasta to the pan, pour in the melted cheese and stir.
- It should have a lovely silky consistency, but if it's too thick, add a splas of your cooking water to thin it out a bit.
- At this point you can either serve the macaroni as it is, or finish it under the grill to make it crispy and golden on top.
- To do this, preheat your grill to medium heat.
- Add 150ml of the reserved cooking water to the macaroni, stir in, then transfer to a baking dish.
- Place under the grill until golden and bubbling.
- TO SERVE YOUR PASTA:.
- Divide the pasta between plates or bowls, or place the baking dish in the middle of the table next to a nice green salad and let everyone help themselves.

- Cut the broccoli florets into small florets. With the stalk, trim and slice in half length-ways and finely slice.
- Blanch the broccoli florets really quickly in boiling salted water for 60 seconds.
- Drain in colander, then spread it on a clean tea towel to steam dry. (This is important because it will help the dressing cling to the broccoli). Once dry transfer to a serving dish.
- Fry the bacon on a medium heat with a small splash of olive oil until crisp and golden, then spread most over the broccoli. Any left over fat can be used in the salad dressing. Pour it into a mixing bowl with the garlic,Dijon mustard, olive oil, white wine vinegar, salt and pepper. Whisk together.
- Add the sliced tomatoes and chopped chives to the broccoli and bacon bits. Dress it really well and check the seasoning. If it needs pimping up , add a splash more vinegar.
- Serve straight away.
