HEALTHY CAULIFLOWER FRITTERS



Healthy Cauliflower Fritters image

Whip up this quick and easy recipe for healthy cauliflower fritters made with just six ingredients and topped with yogurt or sour cream.

Number Of Ingredients 7

1 large head cauliflower, cut into florets
1/2 cup whole wheat or all-purpose flour
2 large eggs, lightly beaten
3 cloves garlic, minced
3 Tablespoons minced scallions, plus more for garnishing
Olive oil
Yogurt or sour cream, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the cauliflower and cook it just until fork tender, 3 to 5 minutes. Transfer it to a cutting board and using a sharp knife, cut it into very small pieces. (The cauliflower pieces should be the size of peas or smaller.)
  • Measure out 4 cups of the chopped cauliflower. (Discard the remaining cauliflower or use for cauliflower tots or mashed cauliflower).
  • Combine the cauliflower, flour, eggs, garlic, scallions, 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl and stir until well combined.
  • Line a plate with paper towels. Heat a nonstick skillet over medium-low heat and lightly coat it with olive oil. Scoop out 2- to 3-tablespoon mounds of the cauliflower mixture into the pan, flattening the mounds slightly with a spatula and spacing them at least 1 inch apart.
  • Cook the fritters for 2 to 3 minutes, flip them once and cook them an additional 1 to 2 minutes until they're golden brown and cooked through. Transfer the fritters to the paper towel-lined plate. Serve them warm topped with yogurt or sour cream.

1 head of cauliflower, stem removed, head cut into florets
2 tablespoons vegetable oil
1 tablespoon toasted sesame oil
3 green onions, sliced thin
2 cloves garlic, minced
1 tablespoon minced fresh ginger
1 tablespoon chili paste, plus more if desired
1/2 cup shredded carrots
1 cup packed baby spinach
1/4 cup low-sodium soy sauce
2 tablespoons butter
4 eggs
Sriracha (if desired)
2 tablespoons toasted sesame seeds

Steps:

  • In batches, pulse the cauliflower in a food processor until rice-size crumbs form. Transfer to a bowl and set aside.
  • Put a large skillet over medium heat and add the vegetable oil and sesame oil. Add two-thirds of the green onions, the garlic, ginger and chili paste. Cook, stirring constantly, until fragrant, 2 to 3 minutes. Raise the heat to medium high and add the carrots and spinach; continue to cook, stirring, until the spinach has wilted, 1 to 2 minutes.
  • Continuing to stir constantly, add the cauliflower rice. Cook until the cauliflower is tender, 3 to 4 minutes. Pour in the soy sauce and stir, scraping the bottom of the skillet, until the liquid has evaporated, 2 to 3 minutes longer.
  • Meanwhile, melt the butter in a second skillet over medium heat. Crack in the eggs; as they cook, spoon hot butter over the whites of the eggs so that the whites set without flipping. Towards the end of cooking, carefully spoon hot butter over the yolks and cook until the eggs reach the desired doneness.
  • Remove the pan with the cauliflower from the heat, drizzle with sriracha, and sprinkle with the toasted sesame seeds and reserved green onions. Divide between 4 plates and top each serving with an egg.

Number Of Ingredients 20

1 large sweet onion, diced small (approximately 1 1/4 cups diced)
3 tablespoons olive oil
1/2 cup breadcrumbs (use gluten-free bread crumbs if you want patties to be gluten-free)
1/2 cup (packed) chopped fresh parsley
1 1/2 cups cooked brown rice
2 cups fresh, raw cauliflower florets (approximately 1-inch pieces)
3/4 cup cooked garbanzo beans, drained well but not rinsed
1 tablespoon tahini
1 1/2 tablespoons lemon juice
2 teaspoons granulated onion
3/4 teaspoon cumin
1/2 teaspoon dried basil
1/4 teaspoon granulated garlic
1/4 teaspoon dried oregano
1/4 teaspoon dried dill
1/4 teaspoon paprika
1/8 teaspoon celery salt
1/2 teaspoon salt (see note)
1/2 cup Skinny Mayo from my weight loss program
1 tablespoon tahini

Steps:

  • In a large pan, sauté onion in oil over medium (not high) heat until onion just begins to turn translucent (about 3 minutes). Do not brown onions.
  • Meanwhile, if making your own bread crumbs in food processor or chopping parsley in the food processor, prepare them now.
  • Place 1/2 cup bread crumbs, 1/2 cup chopped fresh parsley, and cooked rice in food processor. Do not process yet.
  • Using a rubber spatula, scrape sautéed onions into processor.
  • Place pan that onions were sautéed in back on stove and add cauliflower and enough water (about 1/3 cup) to steam cauliflower. Turn heat to high and cook until cauliflower is just tender. Don't overcook; you don't want the cauliflower to be soft and mushy.
  • While cauliflower is cooking, add remaining ingredients to food processor. Do not process yet.
  • When cauliflower is tender, add it to food processor. Pulse a couple times. Remove lid and stir with a spoon. Pulse again until mixture is well chopped but not pureed. (See note in post above this recipe.)
  • Shape mixture into patties and place onto oiled baking sheet.

Use the spices normally found in merguez lamb sausage to make these paleo-friendly ground lamb patties. Harissa, a spicy tomato-pepper paste, adds both heat and flavor to the lamb. Finely chopped cauliflower "rice" is livened up with lemon juice, plumped golden raisins, parsley and blanched almonds.

2 teaspoons harissa paste
1 tablespoon lemon juice
1 tablespoon olive oil
Sea salt and freshly ground black pepper
1/4 teaspoon ground cumin
1/4 teaspoon hot paprika
1/4 teaspoon sea salt
Pinch ground black pepper
4 cloves garlic, minced
1/3 cup golden raisins
1 large head cauliflower, cut in 2-inch florets (about 2 1/2 pounds)
1/3 cup sliced toasted almonds
2 tablespoons chopped fresh parsley

Steps:

  • For the patties: Combine the lamb, harissa, cumin, paprika, salt, pepper and garlic in a bowl and mix well by hand. Form into eight 1/2-inch-thick patties (3 to 4 inches across).
  • Heat a grill pan over high heat. Grill the patties, working in batches if necessary, until the internal temperature reaches 160 degrees F, 1 to 2 minutes per side.
  • For the rice: Combine the raisins and 1 cup of water in a microwave-safe bowl; microwave for 1 minute, then drain and set aside.
  • Place the cauliflower florets in a food processor and pulse until the cauliflower resembles small pebbles, 3 or 4 pulses.
  • Bring 1 1/2 cups water to a boil in a medium saucepan set over high heat. Add the cauliflower and cook, stirring, until tender, about 2 minutes. The water should be fully evaporated at this point, if not, drain the cauliflower using a fine mesh sieve.
  • Remove the pan from the heat and stir in the raisins, almonds, parsley, lemon juice and olive oil. Season with salt and pepper.
  • Serve the lamb patties over the cauliflower rice.

  • You can also cook the patties in a 350 degree F oven until cooked through.
