Creamy cauliflower mashed potatoes are keto but not mashed potatoes at all! Whether a thicker mash or more of a purée, the choice is up to you. A low carb alternative to mashed potatoes packed with garlic, parmesan cheese, sour cream, butter, and all the good flavors!

12 oz riced cauliflower (from frozen or fresh)
4 tbsp butter
2 garlic cloves, minced
1/4 cup heavy whipping cream
1/4 cup sour cream
1/4 tsp salt (to taste)
1/4 tsp pepper (to taste)
1/3 cup parmesan cheese
1/4 cup chicken bone broth (or less depending on desired consistency)

Steps:

  • Cook the cauliflower rice.
  • Method 1: Steam for about 5 minutes on the stove.
  • Method 2: Cook 5 minutes in a pot on the stovetop on medium-high with 1/4 cup water, stirring constantly.
  • Method 3: Microwave the cauliflower rice for 5 minutes on high in a covered container with 1/4 cup water.
  • Melt the butter in a small saucepan on the stovetop on medium-high.
  • Add the garlic and allow to infuse into the butter and soften, 30 seconds to 1 minute. Remove from the heat.
  • Place the cauliflower rice, parmesan cheese, heavy cream, and sour cream in a food processor (or a blender for more of a purée). Process on high for 30-40 seconds, pulsing as needed. Add in the melted butter and garlic and pulse to combine.
  • Slowly add in the bone broth and pulse the food processor until the desired consistency is reached. The more bone broth, the thinner it will be.
  • Add salt and pepper to taste.
  • Serve with sliced green onions to garnish or preferred keto gravy.

3 cloves Garlic ((minced))
3 tbsp Unsalted butter ((measured solid, then melted; can also substitute olive oil or ghee for dairy-free))
1 tbsp Full-fat coconut milk ((or heavy cream for non-paleo))
3/4 tsp Sea salt ((adjust to taste))
1/8 tsp Black pepper ((adjust to taste))
1 tbsp Chives ((chopped))

Steps:

  • Cook the cauliflower on the stove or in the microwave.Stove method: Boil a pot of water with a tablespoon (14 g) of salt. Add the cauliflower, and simmer until very soft (about 5-6 minutes). Drain well.Microwave method: Place the cauliflower florets in a large bowl with 2 tablespoons of water. Cover with plastic wrap, so that the plastic is not touching the cauliflower. Microwave on high for about 10 minutes, until very soft, stirring halfway through. Drain well.
  • Meanwhile, place the garlic, melted butter, and milk/cream into a food processor or high power blender. Note: If you want to, you can saute the garlic first to mellow the flavor a bit.
  • When the cauliflower is done cooking, drain well. Squeeze out as much extra water as possible. You can do this by wrapping the cauliflower in a towel and twisting, or by pressing a bowl down over a strainer.
  • Add the cauliflower to the food processor or blender. Process until smooth, scraping down the sides with a spatula occasionally. Add salt and pepper to taste, and puree again. If it's thicker than you like, thin out with more milk/cream.
  • Stir in the chopped chives.

I saw this recipe made on the new low carb cooking show on Food Network. I tried the recipe tonight and it is really so good - this is my spin on the recipe. This time, I omitted the rosemary and used raw minced garlic, but you may also use a few cloves of roasted garlic if you prefer. This version is different from many others as there is no sour cream and no mayonnaise. Real comfort without all that starch. (Note: Smart Balance is a lower calorie, cholesterol reducing butter substitute).

water, as needed
1 teaspoon fresh garlic, minced or 2 cloves roasted garlic, mashed,to taste

1/4 cup parmesan cheese, grated
1/8 teaspoon chicken bouillon powder (I used Better Than Bouillon brand)

1 tablespoon smart balance butter substitute or 1 tablespoon unsalted butter, to taste

Steps:

  • Bring a medium-large pot of water to boil.
  • Cut cauliflower into smaller pieces, add to the pot,and boil until fork tender,approximately 6 minutes; drain well.
  • Using a stick blender or potato masher, mash the cauliflower with the cream cheese, garlic, rosemary (if using), Parmesan cheese,butter,and bouillon powder.
  • Add some salt and pepper to taste- test and adjust seasonings as needed.
