SEVEN LAYER SALAD
I usually make this bacon, lettuce, onion, pea, cheese and cauliflower layered salad in a large flat bowl. There's never too much because everybody loves it! You can vary the salad by substituting green onions for red, jack cheese for the Cheddar, etc.

Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.
- In a large flat bowl, place the chopped lettuce and top with a layer of onion, peas, shredded cheese, cauliflower and bacon.
- Prepare the dressing by whisking together the mayonnaise, sugar and Parmesan cheese. Drizzle over salad and refrigerate until chilled.

My Son-in-law loves this salad. I always double it when I know he's going to be at the dinner table. That way I know there will be some leftovers for him! This is one of those salads that tastes even better on the second day.

- 1. Layer lettuce*, cauliflower and onion in a 3 qt. bowl.
- 2. Mix the mayonaise, sugar, and milk together and spread evenlyh over top, sealing to the edge of the bowl.
- 3. Sprinkle bacon and parmesan cheese over the mayonaise mixture.
- 4. Garnish with a little more chopped lettuce and onion for additional color. Cover salad tightly and refrigerate for at least 12 hours
- 5. NOTE: After washing the lettuce make sure it is very dry.
