Ina Garten's Cauliflower Gratin made even better with a few easy updates ~ this casserole is our most requested side dish for holiday meals!

Number Of Ingredients 13

1 head of cauliflower (about 3 pounds)
2 Tbsp unsalted butter
3 Tbsp flour
1 1/2 cups whole milk
1/2 cup cream
1 tsp sea salt
1/2 tsp fresh cracked black pepper
1/4 tsp freshly grated nutmeg (more to taste)
1 cup grated Gruyere cheese
1/2 cup grated parmesan cheese (I used shredded Parm, if you're using the fine powdered version, use a little less.)
1/2 cup cracker or bread crumbs. I like to make crumbs out of seasoned crackers for extra flavor. Directions below in the notes.
1/4 cup shredded Gruyere cheese
2 Tbsp unsalted butter, melted

Steps:

  • Preheat oven to 350F
  • Remove the outer leaves from the cauliflower and separate into florets. Separate or slice them into approximately 1 inch pieces. I like to leave the florets intact as much as possible because it looks pretty. Leave short sections of the stem on, they're delicious.
  • Put the cauliflower into a large microwave safe bowl and cover with plastic wrap or a microwave cover. (Do not add water.) Microwave on high for 4 minutes and set aside.
  • Toss the crumb topping ingredients together with a fork until everything is evenly moistened, and set aside.
  • Melt the butter in a large heavy saucepan and add the flour. Stir and cook for a minute, but don't let it brown.
  • Before adding the milk and cream, it's best to heat them up, and I do this in the microwave, just heat until hot to the touch. Slowly add the hot milk/cream to the flour mixture, whisking constantly to prevent lumps. Bring this up to a boil over medium heat, stirring and scraping the sides of the pan almost constantly. When the mixture has thickened and you see the first bubbles, take off the heat. Season with salt, pepper, and nutmeg.
  • Let the pan sit for a minute or so to cool slightly, then whisk in the cheeses. Stir until completely melted. Add the cauliflower (if there is any water in the bowl leave it behind) and fold in well.
  • Turn everything into your casserole dish and top with the crumb topping. Bake for 25 to 30 minutes until the whole casserole is bubbling and the top is starting to turn golden.

PARMESAN-ROASTED CAULIFLOWER

1 large head cauliflower
3 tablespoons good olive oil
Kosher salt and freshly ground black pepper
1 cup freshly grated Parmesan cheese (2 ounces)
1 cup freshly grated Gruyere cheese (2 ounces)

Steps:

  • Preheat the oven to 350 degrees.
  • Remove the outer green leaves from the cauliflower and cut the head into florets, discarding the stems. Place the florets on a sheet pan. Drizzle with olive oil and sprinkle generously with salt and pepper. Toss well. Bake for 30 minutes, tossing once, until the cauliflower is tender and starts to brown. Sprinkle with the Parmesan and Gruyere and bake for 1 to 2 more minutes, just until the cheese melts. Season to taste and serve hot or warm.

3 lbs cauliflower, cut into large florets
kosher salt
4 tablespoons unsalted butter, divided
3 tablespoons all-purpose flour
2 cups hot milk
1/2 teaspoon fresh ground black pepper
1/4 teaspoon grated nutmeg
3/4 cup freshly grated gruyere, divided
1/2 cup freshly grated parmesan cheese
1/4 cup fresh breadcrumb

Steps:

  • Preheat the oven to 375 degrees F.
  • Cook the cauliflower florets in a large pot of boiling salted water for 5 to 6 minutes, until tender but still firm.
  • Drain.
  • Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over low heat.
  • Add the flour, stirring constantly with a wooden spoon for 2 minutes.
  • Pour the hot milk into the butter-flour mixture and stir until it comes to a boil.
  • Boil, whisking constantly, for 1 minute, or until thickened.
  • Off the heat, add 1 teaspoon of salt, the pepper, nutmeg, 1/2 cup of the Gruyere, and the Parmesan.
  • Pour 1/3 of the sauce on the bottom of an 8 by 11 by 2-inch baking dish.
  • Place the drained cauliflower on top and then spread the rest of the sauce evenly on top.
  • Combine the bread crumbs with the remaining 1/4 cup of Gruyere and sprinkle on top.
  • Melt the remaining 2 tablespoons of butter and drizzle over the gratin.
  • Sprinkle with salt and pepper.
  • Bake for 25 to 30 minutes, until the top is browned.
  • Serve hot or at room temperature.

Kosher salt and freshly ground black pepper
3/4 pound medium shells
Good olive oil
2 1/2 pounds cauliflower, cut into small florets (1 large head)
3 tablespoons roughly chopped fresh sage leaves
2 tablespoons capers, drained
1 tablespoon minced garlic (3 cloves)
1/2 teaspoon grated lemon zest
1/4 teaspoon crushed red pepper flakes
2 cups freshly grated Italian Fontina Val d'Aosta cheese, lightly packed (10 ounces with rind)
1 cup (8 ounces) fresh ricotta
1/2 cup panko (Japanese bread flakes)
6 tablespoons freshly grated Italian Pecorino cheese
2 tablespoons minced fresh parsley leaves

Steps:

  • Preheat the oven to 400 degrees.
  • Fill a large pot with water, add 2 tablespoons salt, and bring to a boil. Add the pasta and cook al dente, according to the instructions on the package. Since it will be baked later, don't overcook it! Drain and pour into a very large bowl.
  • Meanwhile, heat 3 tablespoons of olive oil in a large (12-inch) saute pan over medium-high heat, add half the cauliflower in one layer, and saute for 5 to 6 minutes, tossing occasionally, until the florets are lightly browned and tender. Pour the cauliflower, including the small bits, into the bowl with the pasta. Add 3 more tablespoons of oil to the saute pan, add the remaining cauliflower, cook until browned and tender, and add to the bowl.
  • Add the sage, capers, garlic, lemon zest, red pepper flakes, 2 teaspoons salt, and 1 teaspoon black pepper to the bowl and stir carefully. Stir in the Fontina. Transfer half of the mixture to a 10 x 13 x 2-inch rectangular baking dish. Spoon rounded tablespoons of ricotta on the pasta and spoon the remaining pasta mixture on top. Combine the panko, Pecorino, parsley, and 1 tablespoon of olive oil in a small bowl and sprinkle it evenly on top. Bake for 25 to 30 minutes, until browned and crusty on top. Serve hot.
