Kosher salt, as needed, plus 1/2 teaspoon
1 large head cauliflower, cut into small florets
Vegetable oil spray
1 cup heavy cream
2 ounces cream cheese, cut into small pieces
1 1/2 teaspoons Dijon mustard
1 1/2 cups shredded sharp Cheddar, plus 1/2 cup for topping the casserole
1/4 teaspoon freshly ground black pepper
1/8 teaspoon garlic powder

Steps:

  • Preheat oven to 375 degrees F. Bring a large pot of water to a boil. Season the water with salt.
  • Spray the baking dish with vegetable oil spray.
  • Cook the cauliflower in the boiling water until crisp-tender, about 5 minutes. Drain well and pat between several layers of paper towels to dry. Transfer the cauliflower to the baking dish and set aside.
  • Bring the cream to a simmer in a small saucepan, and whisk in the cream cheese and mustard until smooth. Stir in 1 cup of the cheese, salt, pepper and garlic and whisk just until the cheese melts, about 1 to 2 minutes. Remove from heat, pour over the cauliflower, and stir to combine. Top with the remaining 1/2 cup cheese and bake until browned and bubbly hot, about 15 minutes. Serve.

4 tablespoons unsalted butter
3 cloves garlic, finely grated
1/3 cup panko
Kosher salt and freshly ground pepper
2 tablespoons chopped fresh parsley
8 ounces whole-grain elbow macaroni
1 small head cauliflower, cut into small florets
3 tablespoons all-purpose flour
2 cups 2% milk
2 ounces light cream cheese, at room temperature
8 ounces white cheddar cheese, shredded (about 2 cups)
1 5-ounce package baby spinach (about 8 cups)

Steps:

  • Heat 1 tablespoon butter and 1 grated garlic clove in a small nonstick skillet over medium heat until foamy. Stir in the panko, season with salt and pepper and cook, stirring, until golden, about 5 minutes. Transfer to a small bowl and stir in the parsley.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook as the label directs for al dente, adding the cauliflower during the last 4 minutes of cooking. Reserve 1/4 cup cooking water, then drain the macaroni and cauliflower; set aside. Carefully wipe out the pot.
  • Return the pot to the stove, add the remaining 3 tablespoons butter and melt over medium-high heat. Add the remaining 2 grated garlic cloves and cook 1 minute. Whisk in the flour and cook until golden, about 2 minutes. Whisk in the milk, return to a simmer and cook until thickened and smooth, 1 to 2 minutes. Whisk in the cream cheese and cheddar until smooth; season with 1/2 teaspoon salt.
  • Stir the spinach into the cheese sauce until wilted, then add the macaroni and cauliflower; season with salt and pepper. Stir in the reserved cooking water, 1 tablespoon at a time, until the sauce is creamy and smooth. Divide among bowls and top with the herbed panko.

1 large head cauliflower, cut in florets (about 2 pounds)
4 tablespoons unsalted butter
1/4 cup all-purpose flour
1/2 teaspoon salt
3 cups whole milk
2 cups grated Fontina cheese
1/2 cup ground parmesan cheese
1/4 cup chopped parsley

Steps:

  • Preheat oven to 400 degrees F.
  • Arrange the cauliflower in a single layer on a baking sheet, and drizzle with olive oil. Season with salt and pepper and toss until coated. Roast for 20 minutes, just until golden brown. Transfer to a 9 x 13 baking dish.
  • In a medium sauce pot over medium heat, melt the butter. Whisk in the flour and cook the paste, stirring constantly, for 1 minute. Whisk in the milk and bring to a boil, stirring often, cooking until sauce has thickened. Add the cheeses and whisk until combined. Season with salt and lots of pepper.
  • Pour the sauce over the cauliflower and toss to coat. Bake for 30-35 minutes, until golden brown and bubbling. Rest for 15 minutes and then serve, garnished with parsley.

2 cups cauliflower, fresh or frozen
8 ounces macaroni
4 tablespoons butter
4 tablespoons flour
1 1/4 cups milk
3/4 cup cream
1/2 teaspoon salt
pepper
1/8 teaspoon nutmeg
2 cups cheddar cheese, grated
3 tablespoons butter, melted
1 cup breadcrumbs
1/4 cup parmesan cheese, grated

Steps:

  • Preheat oven to 400 degrees F.
  • Cook the cauliflower in simmering water until tender. Use a slotted spoon to remove.
  • Cut the cauliflower florets into bite size pieces.
  • Return water to the boil and cook the pasta in the same water. Drain.
  • Combine the melted butter, breadcrumbs and parmesan cheese in a bowl and set aside.
  • Melt the butter in medium sauce pan.
  • Add flour mixed with salt, nutmeg and pepper, using a whisk to stir until well blended.
  • Slowly add the milk and cream, stirring continuously until blended.
  • Simmer for 2 minutes or until it thickens, stirring constantly.
  • Remove from heat and add the cheese, stirring until melted.
  • Combine the pasta, cauliflower and cheese sauce and transfer to a buttered casserole dish.
  • Top with the breadcrumb mixture.
  • Bake for 20 minutes, until the breadcrumbs form a crispy crust.

1 (16 ounce) bag frozen cauliflower
1 tablespoon butter
1/4 cup breadcrumbs
1/4 cup slivered almonds
1/4 cup golden raisin
1/4 cup crumbled feta cheese
1 egg, lightly beaten
1 cup washed and chopped Baby Spinach
3/4 cup ragu light alfredo sauce with parmesan cheese

Steps:

  • Cook the cauliflower according to the package directions, until just tender.
  • As this cooks, melt the butter in a small pan over low heat. Add the breadcrumbs and almonds, and cook until lightly browned. Set aside.
  • In a large bowl, add the raisins, feta, egg, Ragú® Light Parmesan Alfredo , and spinach. Mix.
  • Drain the cauliflower and add to the mixture in the bowl. Lightly combine until the cheese mixture totally covers the cauliflower.
  • Put the mixture into a sprayed pan, and top with the toasted crumbs.
  • Bake at 375* for 35-40 minutes or until bubbly and hot throughout.

Healthier Cauliflower Macaroni and Cheese image

This is a healthier take on macaroni and cheese subbing cauliflower (or other starchy veggies like turnips, summer squash) for pasta and reducing the amount of cheese used by substituting nutritional yeast. Like all my recipes, this is ultimately adaptable to your own tastes and larder. Great as a casserole topped with bread crumbs.

1 large head cauliflower, cut into small florets
3 cups skim milk
6 tablespoons Wondra Flour
8 ounces shredded sharp cheddar cheese (I usually use a mix of whatever strongly flavored cheeses I have on hand and a sharp cheddar)
1 cup nutritional yeast
1/2 cup raw cashews, ground finely (but not into a paste!)
2 teaspoons Dijon mustard (any yellow mustard will work, add more to taste)
1 teaspoon garlic powder
1 teaspoon cayenne powder (optional, doesn't make dish spicy but adds a nice depth)
salt and pepper
1 cup panko breadcrumbs (for topping)
1 -2 tablespoon shredded parmesan cheese (for topping)

Steps:

  • Steam cauliflower either on stove or in microwave until tender but not mushy. Put into 9x11 baking dish.
  • Chop or shred cheese(s) and put aside.
  • In a large saucepan combine milk, Wondra flour, salt, pepper, and garlic powder, stirring to combine milk and flour so there are no lumps. Cook over medium low heat, stirring constantly with a whisk until milk comes to a boil. Boil for 1 minute, stirring constantly.
  • Turn off heat and add cashews, cheese, mustard, nutritional yeast, cayenne (if using, can substitute paprika) and stir until cheese has melted.
  • Pour cheese sauce over cauliflower in baking dish, stir to combine. Top with panko and Parmesan cheese. Bake at 350 for 30 minutes or until topping is browned.

1/4 cup minced fresh flat-leaf parsley

8 ounces pancetta, julienned
1 1/2 lbs cauliflower, cut into 1/2-inch pieces
6 tablespoons unsalted butter
1/4 cup all-purpose flour
2 tablespoons white wine
3 1/2 cups milk
2 cups shredded Fontina cheese
3 cups shredded gouda cheese
1/8 teaspoon cayenne pepper
1/8 teaspoon freshly grated nutmeg
1/2 cup heavy cream
1 lb macaroni, cooked until al dente

Steps:

  • Preheat oven to 375 degrees.
  • In bowl, combine crumbs, melted butter, parsley, 1 teaspoons salt and 1/2 teaspoons black pepper. In 4 quart pot over medium heat; cook pancetta 8 minutes. Transfer to small bowl; reserve fat.
  • Cook cauliflower in batches 10-12 minutes, adding up to 3 tablespoons butter if needed. Transfer to bowl. Deglaze pot with 2 tablespoons water; add to cauliflower. Wash pot.
  • In same pot over medium heat, melt 3 tablespoons butter. Cook flour 3 minutes. Whisk in wine and milk; cook 10 minutes. Stir in cheeses, 2 teaspoons salt, 1 teaspoons black pepper, cayenne, nutmeg and cream, then cooked pasta, pancetta and cauliflower. Top with bread crumbs., Bake 30 minutes, broil 4-5 minutes.

1 medium head cauliflower
1/2 white onion, sliced
2 garlic cloves
1/4 cup extra virgin olive oil
kosher salt & freshly ground black pepper
1 lb elbow macaroni, boiled
5 cups shredded sharp white cheddar cheese
fresh ground black pepper
2 cups panko breadcrumbs
4 grated garlic cloves
1/4 cup chopped fresh flat leaf parsley
1/4 cup extra virgin olive oil

Steps:

  • Pre-heat oven to 375°F.
  • Wash cauliflower and break up into medium sized pieces (florets).
  • On a sheet tray toss with onion and garlic and dress with olive oil.
  • Roast in the center of the oven until tender -- about 20-23 minutes.
  • Puree cauliflower with 1 cup of whole milk until you have a creamy-textured sauce.
  • Pour in a saucepan over medium heat and add grated cheddar cheese.
  • Stir well until melted then add cooked macaroni elbows.
  • Season with salt and pepper.
  • Pour into a medium-sized gratin dish. In a mixing bowl combine garlic with panko bread crumbs and season with salt and pepper.
  • Fold in parsley and wet with olive oil.
  • Sprinkle evenly over the mac n cheese and bake in a 350° oven for 30-25 minutes until cheese is bubbly and top is golden brown.
