INDIAN POTATOES WITH MUSTARD SEEDS (SOOKHI BHAJI)



Indian Potatoes with Mustard Seeds (Sookhi Bhaji) image

A great side dish, can be a vegetarian main dish also. Has been served at tea time in India as a snack, too! Oil-free, more low-fat cooking with high flavor! :)

1 teaspoon cumin seed
1 teaspoon brown mustard seeds
1 large onion, finely chopped
3 serrano chilies, split lengthwise
4 medium potatoes, peeled and cut into 1/2-inch pieces
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1/2 teaspoon turmeric
salt, to taste
1/2 teaspoon cayenne pepper
1 tablespoon chopped fresh cilantro

Steps:

  • Heat cumin seeds and mustard seed in hot dry skillet over high heat, swirling pan, until seeds start to pop.
  • Reduce heat to medium; add onions, chilies, and add a small amount of water; cook until onion is tender, adding more water as necessary to prevent sticking.
  • Add potatoes, ground cumin, coriander, turmeric, salt (to taste), and cayenne pepper, stirring to mix well.
  • Add 2/3 cup water, cover, reduce heat and cook for 20-25 minutes, stirring occasionally, until spices are absorbed and potatoes are tender.
  • Add a small amount of water at a time if all liquid evaporates.
  • Fold in cilantro just before serving.

Great potato and cauliflower side dish. Goes especially well with a pork meal.

2 large potatoes, peeled and chopped
1 head cauliflower, cut into florets
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup heavy cream
1 cup shredded Swiss cheese
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
  • In a pot with enough water to cover, boil the potatoes 10 minutes, or until tender but still firm. Drain, and set aside.
  • In a pot, place the cauliflower in a steamer basket over boiling water. Steam 5 minutes, until tender but still firm. Set aside.
  • Melt the butter in a saucepan over medium heat, and whisk in the flour. Gradually stir in the heavy cream until thickened. Remove from heat, and mix in 1/2 cup Swiss cheese until melted. Season with salt and pepper.
  • Arrange the potatoes and cauliflower in the prepared casserole dish. Pour the cream sauce over the potatoes and cauliflower, and sprinkle with the remaining Swiss cheese.
  • Bake 20 minutes in the preheated oven, or until bubbly and lightly browned.

Adding cauliflower to a potato bake may seem radical, but it adds great texture. A cheesy topping is a nice change of pace from the usual creamy casserole.

1 tablespoon unsalted butter, plus more for dish
1 1/2 pounds Yukon Gold potatoes (about 6 medium), peeled and sliced 1/2 inch thick
Salt and pepper
1 small head cauliflower (about 2 pounds), sliced 1/2 inch thick
1 tablespoon fresh thyme leaves
1 1/2 cups shredded sharp cheddar (6 ounces)
1/3 cup chicken broth

Steps:

  • Preheat oven to 450 degrees. Butter a 2-quart baking dish. In a large pot, cover potatoes with cold salted water by 2 inches. Bring to a boil, then add cauliflower and cook at a rapid simmer until potatoes are just cooked through and cauliflower is crisp-tender, about 10 minutes. Drain in a colander and let sit 5 minutes.
  • Place half the potatoes and cauliflower in dish, sprinkle with half the thyme and cheddar, and season with pepper. Repeat to make a second layer. Add broth and dot top with butter. Bake until cheese is deep golden and bubbling, 15 to 20 minutes.

1 head cauliflower, about 1-1/4 pounds
2 bunches scallions or 2 small green onions
2 teaspoons black mustard seeds
2 teaspoons cumin seeds
1 teaspoon fennel seed
1/2 teaspoon turmeric
salt
1/3 cup warm water
1/4 cup light vegetable oil
1/3 cup chopped fresh coriander (optional)

Steps:

  • Separate and cut the cauliflower into 1-inch florets. Set aside.
  • Trim the scallions and chop them,including the entire green part. Set aside.
  • Measure out the spices and place them,as well as the water, right next to the stove.
  • Heat the oil in a wok or sauté pan over high heat. When the oil is hot, add the mustard, cumin, and fennel. Keep a pot lid handy since the seeds may splatter and splutter when added. When the seeds stop sputtering, add the turmeric and immediately add the cauliflower.
  • Stir-fry the cauliflower until its evenly coated with spice-infused oil. Add the scallions, salt, and water; mix and cover with a lid. Cook over medium heat and toss a couple times until the cauliflower is soft, about 10 minutes. Uncover, fold in the coriander and continue stir-frying until excess moisture evaporates and the cauliflower looks glazed, about 5 minutes. Turn off the heat and serve.
