Provided by Food Network

Categories     side-dish

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 12

1 1/2 cups/750 ml milk
1 bay leaf
1 clove garlic, split
3 tablespoons butter
3 tablespoons flour
1/2 cup/50 g grated Gruyere cheese
Kosher salt and freshly ground black pepper
Kosher salt
1 pound/500 g cauliflower florets
Freshly ground black pepper
1/4 cup/20 g breadcrumbs
2 to 3 tablespoons grated Parmesan cheese

Steps:

  • Make the sauce: Bring the milk to a simmer in a saucepan with the bay leaf and garlic. Cover, turn off the heat and let infuse, about 15 minutes. Melt the butter in a saucepan. Whisk in the flour and cook for a minute to remove the raw flour taste. Gradually whisk in the milk. Cook over medium-high heat, stirring, until thick. Stir in the Gruyere, season with salt and pepper and reserve.
  • Heat the oven to 425 degrees F/210 degrees C.
  • Make the gratin: Bring a large pot of water to the boil. Salt it, as for pasta, and blanch the cauliflower until just shy of being tender, about 5 minutes. Drain well. Pat dry and season with salt and pepper. Toss with the sauce and dump into a gratin dish. Scatter over the breadcrumbs and Parmesan and bake until bubbling and gratineed on top, 5 to 10 minutes.

BROCCOLI & CAULIFLOWER CHEESE

Broccoli & cauliflower cheese image

Cauliflower cheese gets more colourful with the addition of broccoli in this super Sunday lunch side dish

Provided by Lucy Netherton

Categories     Side dish

Time 1h15m

Number Of Ingredients 8

1 small cauliflower, leaves removed and broken into small florets
1 small head broccoli, broken into small florets
50g butter
50g flour
1 tsp mustard powder
500ml milk
100g strong cheddar, or vegetarian alternative
2 tbsp snipped chives

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a very large saucepan, cook the cauliflower in boiling salted water for 5 mins. Then add the broccoli and cook for 3 mins more. Drain well and transfer to a large ovenproof dish.
  • To make the cheese sauce, melt the butter in a small pan. When foaming, add flour and mustard powder, and cook for 1 min, stirring constantly. Take off the heat and add the milk, a little at a time, stirring constantly to get rid of any lumps. Once half the milk has been added, return to the heat and add the remaining milk. Keep stirring and bring to the boil, then turn down to a simmer and cook for 2 mins, until thickened and smooth. Add most of the cheese and some seasoning then take off the heat and add the chives.
  • Pour the sauce over the vegetables and sprinkle with the remaining cheese. This can be done the day before and kept covered in the fridge. Cook in the oven for 35-40 mins until bubbling, allowing an extra 5-10 mins cooking time if from the fridge.

CAULIFLOWER AND BROCCOLI GRATIN WITH HARD COOKED EGG

Cauliflower and Broccoli Gratin With Hard Cooked Egg image

I collect old cook books, and sometime I make the first recipe I flip to that I have all the ingredients for. This time I picked a creamy gratin of cauliflower, which I improvised on a bit. Makes a satisfying side dish, or even a vegetarian main dish. The recipe I've posted is my variation on the Scalloped Cauliflower recipe from "The American Woman's Cook Book" published in 1942. You can use any ratio of cauliflower and broccoli - you'll need about 6 cups of florets. (Time does not include any advance time to cook the eggs.)

Provided by galponetta

Categories     Cauliflower

Time 1h

Yield 6 serving(s)

Number Of Ingredients 15

4 cups cauliflower florets
2 cups broccoli florets
1 leek, sliced in thin rings
3 eggs, hard boiled, sliced
1 (12 ounce) can evaporated milk
1/2 cup water
2 tablespoons butter
2 tablespoons flour
1 ounce parmesan cheese, grated
1 cup fine soft bread crumbs
2 tablespoons butter, melted
nutmeg, ground (to taste)
salt
black pepper
paprika

Steps:

  • Preheat oven to 375.
  • Hard boil three eggs. Cool enough to handle, then peel and slice into thin rings, or use previously cooked eggs.
  • Wash cauliflower and broccoli dividing into florets. Cook until just tender by boiling or steaming. Cook about 10 minutes. Wash and slice leeks into thin rings. Add to pan with cooking cauliflower and broccoli for the last 2 or 3 minutes.
  • While the vegetables are cooking, melt 2 TBS butter in a 1 qt saucepan over medium heat. Stir in the flour, and stir and cook for about a minute.
  • Mix the milk with the water, and slowly add to the pan with the butter and the flour, stirring constantly. Cook over medium-low heat until thickened, stirring frequently. (This produces a medium white sauce.).
  • Stir the grated parmesan into the white sauce and remove from heat. Add salt and pepper to taste and stir into sauce.
  • Drain the vegetables.
  • In a 3 quart buttered casserole dish, layer 1/2 of the vegetables, a layer of sliced eggs and then 1/2 of the white sauce. Sprinkle lightly with ground nutmeg. (If you really don't like nutmeg, use paprika.).
  • Repeat the layers. Top with bread crumbs and drizzle with the melted butter. Sprinkle the top with salt, pepper and paprika to taste.
  • Bake uncovered for 20-30 minutes until browned and bubbly.

Categories     Winter     Thanksgiving     Christmas     Soufflé/Meringue     Casserole/Gratin     Cauliflower     Cabbage     Egg     Milk/Cream     Soy Free     Peanut Free     Tree Nut Free     Vegetarian

Yield 4 servings

Number Of Ingredients 10

1 cauliflower, about 600g (1lb 5oz)
½ Savoy cabbage, about 300g (10½oz)
1 litre (1 quart) water
50g (3½ tbsp) salted butter, plus 1 tsp, and more for the top
75g (generous ½ cup) plain flour (all-purpose flour)
100ml (scant ½ cup) whole milk
½ tsp freshly grated nutmeg
4 eggs, separated
2-3 tbsp breadcrumbs
Sea salt flakes and freshly ground black pepper

Steps:

  • Cut the cauliflower into chunks and the cabbage into large pieces. Boil both in the measured, salted water for about 2 minutes. Drain over a bowl, reserving the cooking liquid.
  • Preheat the oven to 200°C/400°F/Gas Mark 6.
  • Melt the 50g (3½ tbsp) butter in a saucepan over a medium-low heat and stir in the flour, mixing it into a smooth roux. Now start adding the reserved vegetable cooking water, little by little, stirring after each addition until all the lumps have gone, then add the milk in the same way. When it has all been added, season with salt, pepper and the nutmeg.
  • Turn off the heat and let the sauce cool a little. Then add the egg yolks and stir again. Fold in the cauliflower and cabbage.
  • In a separate, scrupulously clean bowl, whisk the egg whites until stiff, then fold into the cauliflower mixture and season once more with salt and pepper.
  • Butter a large ovenproof dish or cake tin with the 1 tsp of butter and sprinkle the buttered inside evenly with some of the breadcrumbs. Spoon in the cauliflower mixture, cover with the remaining breadcrumbs, then place small dots of butter evenly on top.
  • Bake for 45 minutes, then serve.
