CRISP POTATOES WITH SALSA VERDE DRIZZLE

3 pounds Yukon gold potatoes
4 sprigs fresh thyme, leaves chopped
4 sprigs fresh rosemary, leaves chopped
Extra-virgin olive oil, as needed
Kosher salt and freshly ground black pepper
1 cup green olives, pitted and chopped
2 tablespoons capers, drained and rinsed
3 garlic cloves, chopped
1/2 bunch fresh parsley, leaves chopped
1/2 lemon, juiced

Steps:

  • Peel the potatoes and slice them into thin 1/8-inch thick slices. Put them into a large bowl and toss with the thyme, rosemary, and olive oil; season with salt and pepper. Place a large skillet onto the grill and coat the bottom with olive oil. Place the slices into the pan, overlapping them in 1 layer until the entire surface is covered with potatoes. Drizzle some more olive oil over the top. Cook over medium-high heat until the bottoms are browned and crisp. Turn the potatoes over and cook the other side until they are browned and crisp.
  • In a food processor add the olives, capers, garlic, and parsley. Process, adding some olive oil in a thin stream, until you have a smooth puree. Mix in the lemon juice and adjust the seasoning with salt and pepper.
  • Coat the bottom of a large platter with some of the salsa, pile the potatoes on top, and drizzle on some more salsa.

KALE-POTATO ENCHILADAS VERDES

2 pounds husked and rinsed tomatillos
2 cloves garlic
1 large bunch fresh cilantro, thick stems removed
1 large jalapeno (optionally seeded)
1/4 large white onion
2 pounds russet potatoes, peeled and cut into 1/2-inch pieces
Salt and freshly ground black pepper
1 tablespoon olive oil
2 cloves garlic, minced
1/4 large onion, chopped
2 cups loosely packed chopped kale (thick stems removed)
1 tablespoon unsalted butter
1/2 cup Mexican crema
1 1/4 cups shredded Monterey Jack cheese
Nonstick cooking spray, for spraying the baking dish
Vegetable oil, for frying the tortillas
10 tortillas

Steps:

  • For the salsa verde: Bring a large pot of water to a boil and add some salt. Add the tomatillos, garlic, cilantro, jalapeno and onion and bring back to a boil. Boil until the tomatillos turn olive green, about 10 minutes. Strain, reserving 1 cup of the cooking liquid. Transfer the ingredients from the pot to a blender with the reserved cooking liquid and puree until smooth. Return the mixture to the same (empty) pot, bring to a boil and boil until the sauce is darker green and reduced, 20 to 25 minutes. Season with 1 teaspoon salt or to taste and set aside.
  • For the enchiladas: Put the potatoes in a pot with enough water to cover, add some salt and cover the pot. Bring to a boil, lower to a simmer and simmer until the potatoes are fork-tender, 15 to 20 minutes. Drain and set aside.
  • Heat the olive oil in a large pan. Add the garlic and onion and saute until golden, about 5 minutes. Add the kale and saute until wilted, about 5 minutes more. Mix in the butter and 1/4 cup of the crema until melted and smooth. Gently mix in the potatoes and 1 cup of the cheese. Season to taste with salt and pepper. Set the filling aside.
  • Preheat the oven to 350 degrees F. Spray a 13-by-9-inch glass baking dish with nonstick cooking spray.
  • Heat enough vegetable oil to come 1 inch up the sides of a skillet to 350 degrees F over medium heat. Make an assembly line close to the stove top. Place half of the salsa verde in a cake pan (reserve the rest for topping) and put a cutting board and the potato-kale filling nearby.
  • Dip a tortilla in the hot oil until golden but still pliable. Using tongs, transfer it to the cake pan with the salsa verde and turn to coat. Place the dipped tortilla on the cutting board, stuff with a scant 1/4 cup of the potato-kale filling and roll up. Repeat with the remaining tortillas, salsa verde and filling.
  • Transfer the stuffed tortillas to the prepared baking dish. Top with the reserved salsa verde and remaining 1/4 cup crema and 1/4 cup cheese. Bake until darkened in spots, about 30 minutes. Serve slightly cooled.

1 teaspoon anchovy paste
1/2 teaspoon Dijon mustard
3/4 teaspoon salt
fresh ground black pepper
8 tablespoons olive oil
1 lb about 6 new potato, quartered (or 3 boiling potatoes cut into 1-inch chunks)
4 catfish fillets, about 1/2 inch thick (about 2 pounds in all)

Steps:

  • Put the parsley, capers, garlic, lemon juice, anchovy paste, mustard, 1/4 teaspoon of the salt and 1/8 teaspoon pepper in a blender. Pulse to chop. With the machine running, add 7 tablespoons of the oil in a thin stream to make a smooth puree.
  • Put the potatoes in a medium saucepan of salted water. Bring to a boil, reduce the heat, and simmer until tender, about 15 minutes. Drain.
  • Light the grill or heat the broiler. Coat the fish with the remaining 1 tablespoon oil and sprinkle with the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Grill or broil the fish for 3 minutes. Turn and cook until just done, 3 to 4 minutes longer.
  • TO SERVE:Drizzle some of the salsa verde over the fish and potatoes. Serve the remaining salsa verde alongside.

250g new potato , halved
2 salmon fillets , skin on, about 140g each
3 tbsp olive oil
1 shallot , roughly chopped
small bunch flat-leaf parsley , roughly chopped
small bunch basil , roughly chopped
2 tbsp caper
4 anchovies , roughly chopped
1 large garlic clove , roughly chopped
juice 1 lemon
sugar snap pea , to serve (optional)

Steps:

  • Put the potatoes in a pan of salted water, bring to the boil and cook for 15 mins or until tender.
  • Heat a non-stick frying pan over a high heat and cook the salmon, skin-side down, for 10 mins until the skin is crisp. Turn over and cook for another 4 mins.
  • Put the oil, shallots, parsley, basil, capers, anchovies, garlic and lemon juice in a small blender and whizz to a green sauce. Add seasoning to taste. Toss 2 tbsp of the sauce with the potatoes and serve with the salmon and sugar snap peas, if you like.
