Steps:
- Heat the oil in a large skillet or pot over medium high heat.
- Add the onion, garlic, celery, carrot, and red pepper.
- Cook covered for about 5 to 6 minutes, occasionally stirring.
- Add the cumin and tomatoes. Cook for another 2 to 3 minutes.
- Add the beans, orange juice and orange zest.
- Cover and let simmer for 3 to 5 minutes or until the vegetables are tender and the broth has thickened into a nice stew.

Steps:
- Heat 2 teaspoons oil in large skillet over low heat. Add onion; cover and cook, stirring occasionally, for 7 minutes or until tender.
- Add green pepper, garlic, and 1 teaspoon oil; cover and cook, stirring occasionally, 5 minutes.
- Stir in beans, tomato, clam broth and oregano; cover and cook 5 minutes over moderate heat.
- Meanwhile, rub catfish with allspice, cloves and ground red pepper.
- Heat remaining tablespoon oil in second large skillet over high heat.
- Add fish; sauté on one side until fish has colored, about 3 minutes.
- Turn fish over and place, colored side up, on top of beans in first skillet.
- Cover and cook over moderate heat for 5 to 7 minutes or until fish is cooked through.

MANGO AND BLACK BEAN STEW
This recipe is the only vegetarian dish I've been able to get my family to enjoy - and they really enjoyed it! Since sweet potatoes are so hard to chop up raw, I go ahead and boil them ahead of time until they're just tender enough that I don't need a chainsaw to get through them. Non-vegetarians can feel free to add 1/8 pound chopped sausage and/or ham with the onion in the first step.

- Heat the oil in a large pot over medium heat, and cook the onion and garlic until tender.
- Add in the sweet potato, bell pepper, tomatoes, and water. Bring to a boil, reduce heat to low, cover and simmer until sweet potatoes are tender, about 15 minutes.
- Add beans and cook uncovered until heated through, then add the mango and cilantro and season with salt to taste.

Steps:
- Saute chopped veggies and garlic in the olive oil with a thyme leaf in a soup pot.
- Add 4 cups of cold water, bay leaf, lentils, black beans and unsalted veggie cube to the pot. Bring to a boil and cook for 25 minutes on medium/high. In a crockpot, cook 5 hours on low.
- Add spaghetti sauce, salt and pepper to taste,and heat on medium for 5 more minutes.
- Add minced parsley and serve.
- Slow Cooker or Crockpot Directions: Throw everything in the crockpot, set the heat on low, cover and cook for 6 - 8 hours. Add the spaghetti sauce, salt & pepper and parsley at the end.
- Remove bay leaf before serving.
CROCK-POT TAKE ON FEIJOADA (BLACK BEAN STEW)
A take on authentic feijoada, although this is not authentic. I was short time and ingredients, but it still came out delicious. Use smoked polish sausage, or longaniza sausage if you cannot find linguica. If you must use the other sausages, I suggest you add 1/8 teaspoon paprika to the mix.

- In a large crockpot, add broth.
- Slice sausage, chop onions.
- Add all remaining ingredients except water, rice, hot sauce.
- Stir and place crockpot on high setting.
- Add enough water to just cover the ingredients.
- Stir occasionally.
- Cook 8-12 hours or until beans are tender.
- Shave meat off the hock and discard bone.
- Remove bay leaves, and serve with fluffy white rice and a dash of hot sauce if you like.

- Heat the oil in a large heavy pot over moderate heat and saute the onions until lightly browned, about 10 minutes. Add the garlic and jalapenos and cook, stirring frequently, for 2 minutes.
- Add the remaining ingredients and bring to a boil. Reduce the heat and simmer covered for 30-45 minutes. If you want a thicker stew, mash some of the beans against the side of the pot with the back of a spoon and stir them into the mixture.
- Serve with any or all of the optional garnishes if desired.
