5 ounces (about 1 1/4 cups) coarsely ground, roasted macadamia nuts
1/2 cup panko (Japanese-style bread crumbs)
2 tablespoons all-purpose flour
1/4 cup butter, melted
Vegetable oil, for brushing foil
4 (6 to 8-ounce) mahi mahi fillets
Kosher salt and pepper
2 tablespoons coconut milk

Steps:

  • Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside.
  • Place a piece of aluminum foil on a baking sheet and brush it liberally with vegetable oil. Place the mahi mahi on the foil and sprinkle each fillet with salt and pepper on both sides. Bake for 5 minutes. Remove from the oven and brush each fillet with the coconut milk. Divide the nut mixture among the tops of the 4 fillets, patting the mixture to spread and adhere to the fillets. Return to the oven and bake for 5 to 10 minutes, or until the crust is golden brown.
  • Remove from the oven and allow to stand 10 minutes before serving.

2 ounces macadamia nuts
4 ounces plain bread crumbs
6 (6 ounce) mahi mahi fillets
4 ounces butter
2 ounces shallots, diced
4 cups chicken stock
4 ounces pineapple, rough chopped
4 ounces papaya, rough chopped
4 ounces mango, rough chopped
1 tablespoon shredded coconut
2 habanero peppers, seeded
salt and pepper to taste
white sugar to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a food processor or blender, pulse together macadamia nuts and breadcrumbs until finely ground. Pour nut mixture onto a plate, and coat fish fillets on both sides.
  • Heat butter in a large skillet over medium heat. Fry fillets on both sides until nuts are golden brown. Remove to a baking pan.
  • Add shallots to skillet, and cook until translucent. Stir in chicken stock. Mix in pineapple, papaya, mango, coconut, and habanero peppers. Season with salt, pepper, and sugar to taste. Simmer until sauce is thick, about 30 minutes. Strain to remove peppers, fruit, and shallots. Reserve sauce in a pan over low heat.
  • Bake mahi mahi in preheated oven about 10 minutes, until internal temperature reaches 140 degrees F. Remove fish, and lightly coat with sauce.

  • Preheat an oven to 400 degrees F (200 degrees C). Spray a shallow baking dish with nonstick cooking spray.

Sea Salt, to taste
Fresh Ground Black Pepper, to taste
3/4 cup Roasted Cashews, roughly chopped
1/2 cup Coconut Butter, softened or melted
1 Tbsp Raw Honey
1 Tbsp Coconut Oil, softened or melted
1/8 tsp Sea Salt
1 Vanilla Bean, split and scraped

Steps:

  • Preheat the oven to 350F. Line a baking sheet with parchment paper.
  • Place the mahi filets on the parchment so they are not touching. Salt and pepper both sides.
  • Place in the oven and bake for 5 minutes.
  • While the mahi is cooking, combine the Coconut Butter Coating ingredients in a small bowl and stir until well combined.
  • Remove mahi from the oven and turn the filets over. Spoon the coconut butter mixture evenly over the 6 mahi filets, using your fingers, if necessary, to cover the top of the fish with the coconut butter.
  • Divide the chopped cashews evenly among the coconut butter coated fish, pressing them in lightly so they don't fall off.
  • Place the mahi back in the oven, and bake for an additional 5-10 minutes, depending on the thickness of your filets. Fish should be opaque and flaky.
  • Remove from oven and serve hot with a side of Peach Tomatillo Salsa.

1 1/2 lbs. Fresh Mahi Mahi (4-6ounce portions)
1 cup Chopped Cashews (I prefer raw unsalted)
1/4 cup Cornstarch
1/2 teaspoon Cayenne Pepper
1/2 cup Coconut Milk (I freeze the remainder in ½ cup sizes)
½ teaspoon salt

Steps:

  • Rinse fish and pat dry. Fill one bowl with coconut milk, another bowl with chopped cashews and a third bowl with a mix of the cornstarch, cayenne pepper, salt and pepper. Dredge the top of the first piece of fish in cornstarch mixture and shake off excess. Dip top of fillet (with the cornstarch) into the coconut milk then lay on chopped cashews. Place fillet, cashew side up, in baking dish sprayed with non-stick vegetable spray. Repeat with the remaining fillets, snugging them tightly one next to the other in the baking dish. Top with the remaining coconut milk. Bake at 350 degrees for 20 minutes until golden and cooked through.

8 sprigs fresh parsley
2 bay leaves, preferably fresh
8 cloves garlic, smashed
4 (6-ounce) skinless mahi mahi fillets
Kosher salt and freshly ground black pepper
3/4 cup dry vermouth
4 tablespoons extra-virgin olive oil
2 teaspoons freshly squeezed lemon juice
12 cherry or pear red and yellow tomatoes, for garnish

Steps:

  • Preheat oven to 450 degrees F.
  • Make a bed of herbs in a medium gratin dish or baking dish with the thyme, 4 of the parsley sprigs, and the bay leaves. Scatter the garlic on top. Season both sides of the fish with salt and pepper and place on top of the herbs. Add the vermouth and drizzle 2 tablespoons of the oil over the fish. Cover loosely with foil and bake until the fish is opaque, about 15 to 20 minutes, depending on how thick the fillets are.
  • Carefully pour the pan juices into a small saucepan and set the fish aside. Reserve the garlic and 4 thyme sprigs. Bring the sauce to a boil over high heat and cook until reduced by half, about 5 minutes. Whisk in the remaining 2 tablespoons olive oil and the lemon juice. Season with salt and pepper. Set aside.
  • Divide fish among 4 serving plates. Pour sauce over fish and garnish with the 4 remaining parsley sprigs, the reserved garlic and thyme, and tomatoes.

2 tablespoons powdered milk
4 (6 ounce) mahi mahi fillets
1/3 cup corn flake crumbs
3 tablespoons roasted cashews, chopped
1 tablespoon finely chopped parsley
1/2 teaspoon grated lemon, zest of
1/2 teaspoon salt
1/4 teaspoon ground cardamom
1/4 teaspoon ground coriander
1/2 teaspoon Hungarian paprika
1/8 teaspoon cayenne pepper
fresh ground black pepper
1 medium red onion, thinly sliced and seperated into rings
1 tablespoon olive oil
4 lemon wedges

Steps:

  • Mix the powdered milk with enough water to equal 1/2 cup
  • Rinse fish and place in a shallow dish or pie pan, pour milk over fish
  • Allow fish to soak in the milk for approximately 1 hour
  • Mix the cornflake crumbs, cashews, parsley, lemon zest, salt, cardamom, coriander, paprika and cayenne pepper together in a shallow dish or plate
  • Prepare a broiler pan by spraying with non-stick cooking spray and set aside
  • Preheat oven to 450 degrees
  • While oven is preheating, heat the 1 tablespoon of olive oil in a non-stick saute pan
  • When oil is warmed, add the onion rings and saute, stirring frequently until onions are browned and crispy, approximately 15 to 20 minutes
  • Dredge the fish in the crumb mixture, pressing down slightly to coat, turn and repeat making sure fish is covered in crumbs
  • Place the fish fillets on the broiler pan, sprinkle with a few grinds of fresh black pepper and put in the upper third of the preheated oven
  • Bake for 10 to 12 minutes or until fish is opaque throughout when tested and crust is golden brown
  • Divide the crispy onions onto 4 individual plates, top each with a cooked fish fillet and lemon wedge

1 egg white

1/4 teaspoon pepper
1 tablespoon olive oil
2 -4 wedges limes
2 teaspoons fresh lemon thyme (leaves only)

Steps:

  • First, rinse raw Mahi portion carefully with cool running water. Then place to dry on paper towel, turning to dry each side. Keep refrigerated until ready to use.
  • Prepare Panko Mixture on plate: include Panko, Asiago cheese, herbs de provence, garlic pepper seasoning, salt and pepper. Mix so spices and herbs are well incorporated.
  • Whisk egg white to even consistency.
  • Heat olive oil in large skillet under medium heat.
  • Dip each Mahi Mahi portion fully in egg wash, then dredge portion in panko mixture. Press the mixture gently to stick well to portion. Continue with all portions.
  • Next, add Mahi Mahi to pre-heated skillet and cook 3-4 minutes on each side until the the coating turns a golden brown.
  • Finally remove from heat and plate up. Spritz one wedge of lime over each portion and sprinkle lemon thyme leaves over the top.

Mahi mahi fillets are encrusted with black and white sesame seeds, and pan seared. The sauce is rich and creamy, and flavored with soy, ginger, shallots, and shiso (a Japanese herb related to basil and mint). Use either as a substitute, they work perfectly well.

3 shallots, minced
2 teaspoons minced fresh gingerroot
1 lemon, juice of
1/2 cup sake or 1/2 cup dry white wine
1/2 cup heavy cream
1/2 cup unsalted butter, chilled and cut into small cubes
3 tablespoons soy sauce
4 shiso leaves
kosher salt
white pepper
2 tablespoons canola oil
6 (6 ounce) mahi mahi fillets
4 tablespoons sesame seeds
4 tablespoons black sesame seeds

Steps:

  • In a sauce pan over medium heat, combine shallots, ginger, lemon juice, and sake or white wine. Cook until liquid is reduced to approximately 2 tablespoons. Stir in heavy cream, and bring to light boil. Reduce cream by half; do not burn. Stir in soy sauce, then transfer to blender. Blend on low while slowly adding butter, a few cubes at a time, until all of the butter is emulsified. Roughly chop or tear shiso, add to sauce, and blend for about 10 more seconds. Season to taste with kosher salt and pepper. Keep sauce warm.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat oil in a large saute pan over high heat. Season both sides of the fillets with kosher salt and white pepper. Mix together white and black sesame seeds, and place in a plate or flat dish. Press the TOP side only of each fillet into the mixture, and press seeds into fish so it sticks. Make sure that the crusted sides are evenly crusted with the seeds. When oil is smoking, add fish, sesame seed side down to pan, and be careful of oil splatters. Pan sear fish for about 30 to 45 seconds per side. Place pan into oven, or transfer fish to baking sheet, and cook in oven for about 5 to 6 minutes. Serve sesame crust side up with ginger butter sauce.

Steps:

  • Prep the ingredients: Preheat the oven to 350 degrees. In a small pot, bring 1 cup water with a large pinch of salt to a boil. Zest and halve the lime. Cut one half into wedges. Halve, peel, and finely chop the shallot. Halve the tomatoes. Trim the ends of the green beans.
  • Cook the quinoa: Add the quinoa to the boiling water, cover, and reduce to a low simmer for 15-20 minutes, until tender. Season with salt and pepper.
  • Make the wasabi aioli: In a small bowl, combine the mayonnaise, lime zest, a squeeze of lime (to taste) and the wasabi (to taste). Season with salt and pepper.
  • Make the panko crust: In a medium pan, melt 1 Tablespoon butter. Toss the panko into the melted butter and season with salt and pepper. Transfer the panko to a plate and wipe out the pan.
  • Cook the mahi mahi: Season the mahi mahi on all sides with salt and pepper. Spread the top of each fillet with 1 teaspoon of wasabi aioli. Press the panko onto the top of each fillet and place onto a lightly oiled baking sheet. Bake in the oven for about 10 minutes, until flaky and opaque.
  • Sauté the green beans and tomatoes: Meanwhile, heat 1 Tablespoon butter in the same pan over medium heat. Add the shallot and green beans and cook, tossing, for 4-5 minutes, until the shallots are softened. Add a splash of water to the pan and let the green beans steam until tender. Add the tomatoes and cook, tossing, for another 1-2 minutes, until heated through. Season with salt and pepper.
  • Plate: Serve the panko-crusted mahi mahi on a bed of veggies and quinoa. Serve with the remaining wasabi aioli and a wedge of lime.
