1 1/2 pounds boneless, skinless chicken thigh or breast, sliced into 1-inch pieces
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon cornstarch
1/4 cup water
6 tablespoons soy sauce
1/4 cup oyster sauce
2 tablespoons Chinese cooking wine
1 tablespoon sugar
3 tablespoons canola oil
1/4 pound snow peas, ends trimmed
1 onion, peeled and sliced thinly
2 cloves garlic, peeled and minced
1/2 cup cashews, toasted

Steps:

  • In a bowl, season chicken with salt and pepper. Add cornstarch and stir to coat meat thoroughly. Marinate for about 20 minutes.
  • In a bowl, combine water, soy sauce, oyster sauce, Chinese cooking wine, sugar, and pepper to taste. Stir until well-blended and sugar is dissolved. Set aside.
  • In a wide, heavy-bottomed pan or wok over medium-high heat, heat one tablespoon of oil. Add snow peas and cook for about 20 to 30 seconds or until tender-crisp. Remove from pan and drain on paper towels.
  • Add another tablespoon of oil as needed. Add chicken and cook, occasionally stirring, for until lightly browned and fully cooked.
  • Add onions and garlic and continue to cook for about 1 to 2 minutes.
  • Add sauce mixture to pan, stirring to combine. Bring to a simmer until it begins to thicken.
  • Add cashews and snow peas. Continue to cook for about 1 to 2 minutes or until heated through.
  • Remove from pan and transfer to serving platter. Garnish with additional cashews, if desired. Serve hot.

1 tablespoon brown sugar
1 tablespoon oyster sauce
1/2 teaspoon sesame oil
1/2 cup low-sodium soy sauce
3 tablespoons chopped fresh ginger
6 boneless, skinless chicken thighs, cut into small cubes
Kosher salt and freshly ground black pepper
3 tablespoons vegetable oil
2 cloves garlic, minced
1 green bell pepper, cut into small cubes
1/4 cup dry sherry
2 tablespoons cornstarch
1 cup whole roasted, unsalted cashews
1/3 cup water chestnuts, chopped
2 scallions, thinly sliced
Chopped fresh cilantro, for garnish

Steps:

  • In a bowl, combine the vinegar, brown sugar, oyster sauce, sesame oil, 1/4 cup of the soy sauce and 1 tablespoon of the ginger. Set aside.
  • Season the chicken with salt and pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and saute until cooked through, 5 to 7 minutes.
  • In the same skillet, stir-fry the garlic, bell peppers and remaining 2 tablespoons ginger, keeping them crisp-tender. Deglaze the skillet with the sherry and scrape up any brown bits. Add the reserved soy mixture and cook until the mixture boils, about 1 minute. Whisk together the cornstarch and remaining 1/4 cup soy in a small bowl, then stir the slurry into the skillet. Add the cashews and water chestnuts. Add 1/4 cup water to thin the sauce. Cook for another minute.
  • Serve garnished with the scallions and cilantro.

2 tablespoons vegetable oil
All-purpose flour, for dredging
1 tablespoon unsalted butter
2 scallions, thinly sliced
8 ounces mushrooms (button, cremini, shiitake or a combination), quartered
1 1/4 cups low-sodium chicken broth
3/4 cup heavy cream
2 cups sugar snap peas, stemmed and halved lengthwise

Steps:

  • Preheat the oven to 200 degrees F. Heat a large skillet over medium-high heat. Season the chicken with salt and pepper. Add 1 tablespoon oil to the skillet. Dredge 2 chicken cutlets in flour, shake off any excess and place in the skillet. Cook until golden, about 1 1/2 minutes per side; transfer to a baking dish. Repeat with the remaining 1 tablespoon oil and the other 2 chicken cutlets. Cover the dish loosely with foil; place in the oven while you prepare the vegetables.
  • Add the butter to the hot skillet, then add the scallions and mushrooms; cook, stirring occasionally, until the mushrooms brown, about 4 minutes. Pour in the broth and bring to a boil, scraping up any browned bits with a wooden spoon. Cook until the liquid is reduced by half, about 3 minutes. Add the cream and boil until the sauce thickens slightly, 3 to 4 more minutes. Stir in the snap peas and heat through; season with salt and pepper. Serve the chicken topped with the creamy vegetables.

2 Tbsp. oyster sauce
1 Tbsp. rice vinegar
1 Tbsp. soy sauce
2 tsp. light brown sugar
3 Tbsp. extra-virgin olive oil, divided
1/3 cup raw cashews
2 skinless, boneless chicken breasts (12-16 oz. total)
Kosher salt
1 tsp. cornstarch
12 oz. green beans, trimmed, halved crosswise
1/2 red onion, sliced 1/2" thick
3 garlic cloves, sliced
1 1" piece ginger, peeled, very thinly sliced

Steps:

  • Combine oyster sauce, vinegar, soy sauce, brown sugar, and 1 Tbsp. water in a small bowl; set aside.
  • Heat 2 Tbsp. oil in a large nonstick skillet over medium. Add cashews and tilt skillet toward you so that the oil pools around cashews. Toast cashews, tossing and spooning oil over constantly, until cashews are golden brown, about 3 minutes. Transfer cashews to a small plate and let cool, reserving oil in skillet.
  • Cut chicken into 1/2"-thick slices. If any slices are longer than 2", cut in half crosswise. Season chicken with salt and coat with cornstarch, tossing chicken to evenly distribute cornstarch. Increase heat to medium-high and cook chicken in a single layer in same skillet, undisturbed, until golden brown underneath, about 3 minutes. Turn and cook until other side is just opaque, about 1 minute. Transfer chicken to a plate (it won't be totally cooked through; don't worry as it will finish cooking in the sauce).
  • Cook beans and onion in same skillet, tossing often, until beginning to soften and brown in spots, about 4 minutes. Add remaining 1 Tbsp. oil followed by garlic and ginger. Cook, tossing often, until garlic and ginger are softened, about 1 minute longer. Add reserved sauce and return chicken to skillet. Cook, stirring often, until sauce is glazy and coats chicken and vegetables, and the chicken is cooked through, about 2 minutes.
  • Transfer chicken and vegetables to a platter. Spoon sauce over. Top with toasted cashews.

6 cloves garlic, minced
8 scallions, white and green parts separated, each cut into 1-inch pieces
2 tablespoons rice vinegar
3 tablespoons hoisin sauce
3/4 cup raw cashews (4 ounces), toasted
White rice, for serving (optional)

Steps:

  • In a medium bowl, toss chicken with cornstarch until chicken is coated; season with 3/4 teaspoon salt and 1/4 teaspoon pepper.
  • In a large nonstick skillet, heat 1 tablespoon oil over medium-high heat. Cook half the chicken, tossing often, until browned, about 3 minutes. Transfer to a plate.
  • Add remaining oil and chicken to skillet along with the garlic and white parts of scallions. Cook, tossing often, until chicken is browned, about 3 minutes. Return first batch of chicken to pan. Add vinegar; cook until evaporated, about 30 seconds.
  • Add hoisin sauce and 1/4 cup water; cook, tossing, until chicken is cooked through, about 1 minute. Remove from heat. Stir in scallion greens and cashews. Serve immediately over white rice, if desired.

Salt and pepper

1/3 cup cider vinegar

1/2 teaspoon red-pepper flakes
1/2 pound snap peas
1 cup fresh basil leaves, torn, divided

Steps:

  • Preheat oven to 425 degrees. In a large skillet, heat oil over high. Season chicken with salt and pepper and cook, skin side down, until deep golden, 8 to 10 minutes. Flip chicken and remove pan from heat. Tilt pan slightly and carefully remove fat with a spoon. Return pan to heat and add garlic, vinegar, sugar, and red-pepper flakes. 1/2 cup oyster sauce
2 tablespoons cornstarch
2 tablespoon minced garlic, divided

1/2 cup canola oil
4 sliced scallions, separate green and white
1/2 cup chicken stock (if canned, use low sodium)
2 cups sliced shiitakes

Steps:

  • Marinate chicken in sesame oil, oyster sauce, cornstarch, 1 tablespoon garlic and 1 tablespoon ginger for 30 minutes. Blanch snap peas al dente in hot salted water followed by an iced bath. Keep the peas crisp. In a hot wok, coat bottom with oil and add remaining 1 tablespoon of garlic, 1 tablespoon of ginger and white scallions. Stir quickly to avoid burning. Season chicken and brown. Having bought a new Wok recently (yeah another cooking gadget) I pulled out this Chinese cookbook, I love this recipe which comes from the book "The art of Wok cooking".

2 -3 boneless skinless chicken breasts, cut into 1-inch cubes
4 garlic cloves, peeled and minced
2 tablespoons soy sauce
1 tablespoon dry sherry
2 -3 tablespoons cornstarch (UK cornflour)
3 tablespoons hoisin sauce
2 tablespoons peanut oil
20 snow peas, ends and strings removed
1 cup sliced water chestnuts, drained
1 -1 1/2 cup hot chicken stock
1 pinch salt (or to taste)
1 cup raw unsalted cashews

Steps:

  • Marinate chicken for 15-30 minutes in mixture of the first 5 ingredients.
  • Heat oil in uncovered wok until temps reach 375% degrees.
  • Add chicken mixture and stir fry for 3-5 minutes.
  • Add snow peas and water chestnuts stir fry for 1 minute.
  • Add chicken stock and salt, stir fry until slightly thickened.
  • Stir in cashews and cook for a few seconds.
  • Serve immediately over noodles or rice.
