2 cups Carrot Grated
0.50 cup Sweetened Condensed Milk
2 tbsp Ghee
2 no Cardamom Roughly Crushed
1 tbsp Dry Fruits (I used raisins and dried cranberries, you could any of your favorite)

Steps:

  • In a pan, heat ghee, add dry fruits and cook until it becomes soft and plump. Remove the dry fruits from ghee and keep aside for later use.
  • Add grated carrots and cook until the carrot becomes soft.
  • Add condensed milk and cook until the carrot mixture becomes thick (keep stirring to avoid the condensed milk getting burned and sticking to the bottom of a pan).
  • Add crushed cardamoms, dry fruits and mix well. Carrot halwa is ready to serve.

½ kg carrot ((gajar)(500 grams) (prefer young carrots))
2 cups milk ((1 cup for Instant pot))
½ cup sugar ((+ 2 tbsp optional) (prefer organic))
½ teaspoon cardamom powder ((or 4 pods skinned & powdered))
2 tablespoons ghee ((clarified butter))
20 mixed nuts (10 pista, 5 cashew & 5 almonds)
2 tablespoons raisins (optional)

Steps:

  • Wash carrots under running water & peel them.
  • Grate them in a food processor or with a hand grater.
  • Dry roast nuts on a low heat until crunchy, cool & chop them. OR Alternately chop the nuts first & fry them in 1 tbsp ghee until slightly golden. Then add raisins & fry until they plump up. Remove to a plate.
  • Next bring milk to a boil in a heavy bottom pot or deep pan.
  • Add grated carrots and cook on a medium heat stirring often.
  • Do not leave the pot unattended as the milk will get scorched.
  • When the milk has completely evaporated add sugar and stir well.
  • Sugar will release lot of moisture & will make the entire carrot halwa gooey.
  • Cook until half the moisture evaporates, then stir in the ghee.
  • Saute the carrot halwa well in ghee until the moisture evaporates completely.
  • When it is done gajar halwa turns aromatic & thickens. It will still be moist. Sprinkle cardamom powder.
  • Garnish carrot halwa with nuts. Serve warm or chilled with Ice cream.
  • Press the saute button and add 1 tbsp ghee to the steel insert of the IP.
  • When it is hot fry the nuts until light golden.
  • Then add in raisins if using. When they plump up remove to a plate.
  • Then add in the carrots & saute for 2 to 3 mins stirring well.
  • Pour 1 cup milk and mix well. Deglaze by scrubbing the bottom of the pot with a spatula.
  • Secure the instant pot & position the steam release handle to sealing.
  • Press the pressure cook (manual) button & set the timing to 3 mins.
  • When the instant pot beeps and finishes, do a manual pressure release carefully.
  • Stir in the sugar, ghee & cardamom powder.
  • Press the saute button & saute until the milk evaporates completely.
  • Garnish gajar halwa with chopped nuts & raisins.

5 large carrot / gajar
1 tbsp ghee / clarified butter
½ cup full cream milk
¼ cup sweetened condensed milk / nestle milkmaid
4 cardamom / elachi (powdered)
5 cashews / kaju (chopped)
5 almonds / badam (chopped)
1 tsp pistachios (finely chopped)

Steps:

  • firstly, peel the skin of carrot. carrot halwa taste great when prepared with red carrot. however, we don't get red carrot, so used normal carrots.
  • later, grate the carrot into long threads as possible and transfer to kadai.
  • further, add a tbsp of ghee and saute for 3 minutes. this helps carrots to cook fast and also retain their shape even after cooking.
  • also add half cup of milk and mix well. note, we are adding milk just to cook carrots.
  • get to boil and keep stirring occasionally. making sure carrots are uniformly cooked and doesn't get burnt from the bottom.
  • simmer for 5 minutes or till the milk is evaporated completely.
  • once the milk evaporates, the carrots will be almost cooked.
  • furthermore, add condensed milk / milkmaid and mix well. note, we are not adding any extra sugar, as the condensed milk do contain sweetness.
  • get to boil and keep stirring occasionally. making sure carrots are completely cooked and doesn't get burnt from the bottom.
  • keep mixing and mashing till the milk evaporates completely.
  • also add cardamom powder, cashews and almonds.
  • give a good mix.
  • finally, serve carrot halwa prepared from condensed milk garnished with chopped pistachios.

Gajar ka Halwa With Condensed Milk is one of my favorite sweet dish which I like to make on regular basis and my family loves it too. This recipe doesn't need any introduction because of its popularity all over India. It is a north Indian sweet dish prepared from grated carrots cooked with sugar, ghee and spices like cardamom.

4 cups of grated carrots (packed)
2 cups of milk
100 ml of sweetened condensed milk (optional or Mava (optional))
Sugar to taste
7 tbsp of ghee
A few cashew nuts
A few raisins
3 pods of cardamom (powdered)
A few pistachios for garnish

Steps:

  • Wash and peel the carrots and grate them or chop with the help of chopper. To save time I used Chopper.
  • Add the grated carrots and milk to a pressure cooker. Mix well and pressure cook for 3 whistles about 7-8 mins. Turn off flame and let the steam release on its own. After that take out the mixture in separate bowl.
  • Meanwhile, heat the ghee and fry the cashew nuts and raisins until turn golden and set aside.
  • Heat some ghee in a wok and pour boiled carrots mixture. Cover and cook it on medium flame about 15-20 minutes, stirring occasionally to avoid sticking to the bottom, until the carrots turn pale and carrot should have absorbed all the milk till now.
  • Now add the condensed milk or (mava) and mix well. Let it cook for another 2-3 mins. Adjust the amount of sugar to suit your sweetness level and wait till carrot mixture becomes thick.
  • Now, add the remaining ghee/clarified butter. After about 9 to 10 minutes the ghee starts getting separate from the halwa. At this stage add cardamom powder, fried nuts and raisins.
  • Garnish with some chopped pistachios and serve the carrot halwa hot or with some vanilla ice cream.

8 to 9 carrots (medium, juicy, tender - 650 grams or about 4 to 4.5 cups grated carrots)
4 cups whole milk (or full fat organic milk)
4 tablespoons Ghee ((clarified butter))
10 to 12 tablespoons sugar (or raw sugar - 180 to 190 grams - add as required)
½ to 1 teaspoon cardamom powder (or 5 to 6 green cardamoms powdered finely in a mortar-pestle)
10 to 12 cashews (- chopped)
10 to 12 almonds (- sliced or chopped)
2 tablespoons golden raisins
1 pinch saffron strands (- optional)

Steps:

  • First rinse, peel and then grate the carrots (8-9 medium sized tender juicy carrots), either with a hand held grater or in a food processor.
  • You need approx 4 to 4.5 cups grated carrots.
  • In a kadai or deep thick bottomed pan combine milk and grated carrots.
  • On a low to medium flame, bring the whole mixture to a boil and then simmer.
  • While the mixture is simmering on a low flame, keep on stirring in between.
  • The grated carrots will cook in the milk and the milk will start to reduce and evaporate.
  • When the milk has 75% reduced, add the ghee, sugar and powdered cardamom to the mixture.
  • Stir well and continue to simmer and cook on a low flame.
  • Do keep on stirring the halwa in between.
  • Towards the end, add the cashews, almonds, saffron and raisins. Simmer the halwa till all the milk is evaporated. Switch off the burner.
  • Serve gajar halwa hot, warm or you can also serve it cold. garnish with some chopped dry fruits while serving.

12 oz evaporated milk ((1 can))
1/2 cup sweetened condensed milk
1/2 cup powdered milk
25 strands saffron
1/3 cup sugar ((adjust depending on sweetness of carrots))
1/4 teaspoon kosher salt
3 tablespoons ghee
1 teaspoon ground cardamom
2 tablespoons chopped cashews
2 tablespoons golden raisins
2 tablespoons sliced almonds/pistachios

Steps:

  • Crush the saffron strands in a mortar and pestle to a fine powder. Add in 2 tablespoons of the evaporated milk to the mortar and mix well.
  • Heat a heavy bottomed pan on medium heat and add in the ghee. Now add in the cashews and toast them until they just start to change color and turn light brown. At this point add in the raisins and toast until the raisins puff up and turn brown. Using a slotted spoon, transfer the fruit and nuts into a bowl and reserve for garnish.
  • Into the same ghee, add in the grated carrots and sauté for about 5-7 minutes on medium heat stirring occasionally, until most of the moisture has evaporated.
  • Add in the evaporated milk, sweetened condensed milk, half the milk powder and saffron infused milk and mix well to combine. Cook for another 15 minutes or until the carrots are very soft and most of the moisture has evaporated.
  • Now add in the sugar and salt and cook for another 5 minutes or until the sugar dissolves completely.
  • Finally add in the cardamom powder, remaining milk powder and toasted cashews and raisins and mix well just before turning off the heat.
  • Garnish with the finely sliced almonds/pistachios and serve hot. Carrot halwa tastes amazing when served with a scoop of vanilla ice cream.

¼ cup Ghee (clarified butter), divided use
2 tbsp Cashews, chopped
2 tbsps Raisins
6 Medium Carrots, shredded or grated
1½ cups Milk (2% or whole milk is best)
1 12 oz. Can of Condensed milk
¼ cup Sugar (or as per taste)
½ tsp Ground cardamom (elaichi)

Steps:

  • In a wide saute pan, heat 1tbsp ghee and add the cashews and raisins. Once the cashews are golden and raisins plump up, remove and set aside.
  • In the same pan, heat the remaining ghee and the grated carrots. Saute on low flame until the carrots don't smell raw anymore, this takes about 12~15 minutes
  • Slowly add the milk and bring the mixture to a gentle simmer. Cook uncovered until the milk starts to thicken and the carrots are completely tender, this will take about 15 minutes.
  • Next add condensed milk and sugar. As the sugar melts the mixture will become liquidy, but as it cooks it thickens again. Cook, stirring occasionally until the mixture becomes thick, takes about 20-25 minutes.
  • Add the ground cardamom and cook for couple of minutes.
  • Garnish with the roasted cashews and raisins. Can be served hot, warm or chilled.

  • Wash, peel and grate the carrots and measure it. Keep it aside.
  • Heat 2 tablespoons of ghee in a heavy bottomed pan.
  • Add and fry the cashews until golden brown color. Take them out of the ghee and set aside.
  • Add the sliced almonds to the same pan and fry until golden brown. Keep them aside.
  • In the same pan, add the grated carrot and saute until the raw smell disappears or for 5 minutes.
  • Keep frying till it shrinks.
  • Add the coconut milk and cardamom powder and mix well.
  • Cook over a high flame until the coconut milk evaporates. It may take 10 - 15 minutes.
  • Add the remaining ghee and sugar and mix well. Reduce the flame to medium.
  • Keep stirring till it forms a mass and leaving the sides of the pan.
  • When the halwa leaves the sides of the pan, turn off the flame.
  • This will thicken more as it cools.
  • Add the fried cashews and almonds and mix well.
  • Garnish with pistachios and serve.

'Maa ke haath ka bana Gajar ka halwa (mum's homemade carrot halwa)' features a lot in hindi movies of yester-years. As a child I always drooled on hearing this dialogue. It was only when I grew up that I started making carrot halwa and after marriage, esp after moving to UK, because of the ease of getting ingredients for this sweet in this 'foreign' land :-), carrot halwa featured a lot in my kitchen.

Carrot - 1 kg, peeled and grated
Milk -1 litre, preferably full fat
Sugar - 5 Tbsp
Clarified butter / Ghee - 2 Tbsp
Cardamom powder - 1/4 tsp
Condensed milk - 3/4 cup
Almonds to garnish

Steps:

  • Cook grated carrots with about a cup of milk till soft. You can do this in a thick bottomed pan. Once the milk starts boiling reduce the heat and let the mixture simmer.
  • Add the rest of the milk and continue to simmer. After 15-20 minutes, when all the milk is evaporated, add condensed milk to the dry mixture and tip in the sugar as well. Check the amount of sugar , you may require very less sugar as condensed milk is very sweet in itself. Let it simmer till condensed milk also is absorbed and mixture thick.
  • Add cardamom powder and mix well.
  • The next step is optional. In an another deep pan heat ghee, transfer cooked halwa to it and cook for another minute making sure you stir it with out fail all the way through.
  • To serve: - Chop raw almonds, vertically if u can as it looks better that way, and layer them at the bottom of your presenting dish. Layer your halwa on top. This makes the almonds soak in the lovely juices from ur halwa and combines the mixture. This is a tip I learned from my dear friend A. Thanks dear. :-). Feel free to sprinkle a few chopped almonds on top of ur halwa too. - While serving scoop out large portions of ur halwa on to ur serving dish and serve it hot along with a scoop of yummy vanilla ice cream. Heaven!!!
  • For an easy microwave method, heat ghee in a MWO safe bowl for 1 minute and add grated carrot. Cook for 2 minutes. Add milk and cook till milk evapourates, stirring occasionally. When the mixture thickens, add condensed milk and sugar. Again cook for another few minutes till mixture turns thick once again. Remove from MWO, add cardamom powder, garnish with almonds and serve.
  • A variation to the recipe is adding khoa or grated paneer. I personally do not prefer this as the end result is ever so slightly too sour to my palate.

GAJAR HALWA RECIPE (CARROT HALWA)

1 cup granulated white sugar
1/2 cup Water, at room temperature
1/2 cup milk
1 teaspoon cardamom powder
200 gram Khoya/Mawa

Steps:

  • Wash, peel and grate the carrots. While grating carrot use the bigger holes of the grater than the smaller ones to have long strands.
  • In a stovetop pressure cooker add grated carrots, water and sprinkle sugar on top do not mix. Close the lid and cook the carrots for one whistle over low heat. After one whistle, turn off the heat. And release the steam manually from the pressure cooker.
  • Heat a heavy-duty pan. Transfer the carrots to the pan along with milk. Keep flame on low. Start roasting the carrots till all the moisture is evaporated/absorbed by the carrots and the halwa starts leaving the sides of the pan.
  • Add cardamom powder and crumbled khoya. Mix nicely. Keep on cooking the halwa on low flame stirring frequently for the next 5 - 10 minutes or till khoya is nicely combined with the carrots. Turn off the heat.
  • Garnish carrot halwa with sliced pistachio and almonds. If you prefer, fry sliced dry fruits in a tablespoon of ghee for garnishing the halwa.
  • Serve Gajar Ka Halwa warm.

1 Cup jaggery
1 Tblsp ghee (clarified butter)

Steps:

  • First of all, clean, peel and rinse carrots. Grate them using a food processor or box grater.
  • ake a nonstick pan and heat on medium flame.
  • To this add ghee and grated carrots. Cook them for 3-4 minutes.
  • After 3-4 minutes add milk and cook on high flame. It takes around 12-14 minutes. Stir occasionally otherwise it will burn from the bottom.
  • After 12 minutes low the flame and add cardamom powder, nuts, jaggery powder. Mix well. It will again turn watery as the jaggery melts. Cook for 4-5 minutes on medium flame.
  • Keep stirring at this stage till halwa becomes dry. Switch off the flame as soon as you get the required dry consistency.

1/2 litre milk
3/4 milkmaid tin/can (sweetened condensed milk - 300 gms)
2 tbsp ghee (clarified butter)
1/2 tsp cardamom powder (optional)
3 tbsp finely sliced boiled and peeled almonds (badam)
3 tbsp finely sliced soaked cashews

Steps:

  • Firstly, in a pressure cooker, add the grated carrots and milk.
  • Mix it well and pressure cook on medium flame for 3-4 whistles.
  • Reduce the steam and remove the lid.
  • Cook them again on sim flame until the milk is totally absorbed.
  • Add about 3/4 tin of milkmaid and mix well.
  • Cook until the milk and milkmaid is totally absorbed into the carrots.
  • In a separate wok, add ghee and heat it.
  • Into the ghee, add the cooked halwa, stir it, mix it and cook it for 5-10 minutes on sim flame.
  • Lastly, garnish with finely sliced almonds, cashews and cardamom powder.

How to make gajar Halwa | Carrot Halwa with condensed milk image

Gajar ka halwa or carrot halwa with condensed milk is a must-have for the winter season. Gajar ka Halwa s basically carrots cooked in milk to make a rich, moist and decadent dessert. Winters produce the best carrots and this dessert is like a warm hug to anyone enjoying it.

Number Of Ingredients 7

1. Carrots- 170 gm
2. Condensed milk- 75gm
3. Khoya- 25gm
4. Cardamom(elaichi)- 5 nos
5. Cashew- 10gm
6. Ghee- 2 tbsp
7. Sugar- 20gm

Steps:

  • Step 1 1. Wash, peel and grate the carrots. Soak the cashew in water. Crush the cardamom seeds and keep aside. Roughly chop the cashew and keep aside. Grate the khoya and keep aside.
  • Step 2 2. Heat the ghee in a pan. Add the cardamom and cashew to it. Stir till the cashews are golden in colour.
  • Step 3 3. Add the grated carrots and sugar. Stir for some time, cover and let it cook for 15 minutes or till the carrots get cooked.
  • Step 4 4. Check if the carrots are cooked. Add the khoya and condensed milk to it. Mix them well.
  • Step 5 5. Serve with some grated khoya or some chopped cashews on top.

5 Nos Carrot (Large)
1 Tbsp Ghee
1/2 Cup Milk (Full cream milk)
3/4 Cup Condensed milk
3 Nos Cardamom (Crushed)
10 Nos Cashew (Chopped)
Pinch Salt

Steps:

  • First, peel the skin of carrots. Carrot halwa tastes great when prepared with red carrot. However, we don't get red carrot, so used normal carrots.
  • Later, grate the carrot into long threads as possible and transfer to a kadai. Add a tbsp of ghee and saute for 3 minutes. This helps carrots to cook fast and also retain their shape even after cooking.
  • Add condensed milk, half cup of milk, a pinch of salt and mix well. Note, we are adding milk just to cook carrots.
  • Add cardamom powder and get to boil. Keep stirring occasionally making sure carrots are uniformly cooked and doesn't get burnt from the bottom. Simmer for 5 minutes or till the milk is evaporated completely. Once the milk evaporates, the carrots will be almost cooked.
  • Add cashew nuts and give a good mix. Remove it from the flame.
  • Serve carrot halwa prepared from condensed milk garnished with nuts.
