BEST EVER CREAMY CARROT GINGER SOUP

Best Ever Creamy Carrot Ginger Soup image

This Best Ever Creamy Carrot Ginger Soup is the best carrot soup that's warm, hearty, and packed with spicy ginger and creamy coconut. It's healthy, made with only a few simple ingredients, and it's so easy to make!

Provided by Chrissie

Categories     Appetizer     Dinner     Lunch     Soup

Time 30m

Number Of Ingredients 10

20-25 small carrots, peeled and roughly chopped ((10-15 large carrots) about 8 cups of chopped carrots)
2 tablespoons olive oil
1 large onion, diced
3 cloves of garlic, minced or pressed
2 tablespoons grated fresh or frozen ginger
Salt and pepper to taste
4-5 cups vegetable or chicken stock
1 cup coconut milk (or heavy cream, or half and half for a non vegan option)
Chopped parsley for garnish
Greek yogurt or coconut yogurt for garnish

Steps:

  • Put a large pot over medium heat and add the olive oil.
  • Throw the carrots, onions and garlic into the pot and let them cook a bit, just until the onions start to become a little soft.
  • Grate some ginger over the pot as the vegetables are heating up and stir that in too.
  • Once the mixture starts to become fragrant (you'll smell that ginger as it heats up), add a few pinches of salt and pepper and pour in enough stock to almost cover the vegetables (should be between 4 and 5 cups of stock).
  • Let this cook over medium-low heat until you can poke a fork in one of the carrot pieces and it falls apart.
  • Remove it from the heat and puree while it's hot. This will help give you a nice smooth texture. Using an immersion blender is the easiest method, as you can leave the soup in the pot. If you'd rather use a regular blender you'll probably have to puree in batches.
  • Once the soup is pureed and you can't see any more chunks, add the can of coconut milk (or milk/cream of your choice).
  • Using the immersion blender again, blend the coconut milk into the soup. Using the blender again at this stage helps the texture to become very velvety. Add more salt and pepper, to your taste.
  • Ladle the soup into bowls and serve with a dollop of sour cream, Greek yogurt, coconut yogurt or a swirl of cream (or coconut cream), and a sprinkle of chopped parsley (if you wish).

GINGER CARROT SOUP

Ginger Carrot Soup image

Puree this creamy recipe for Ginger Carrot Soup from Food Network with cream and freshly grated ginger.

Provided by Food Network

Time 1h35m

Yield 8 servings

Number Of Ingredients 9

2 tablespoons sweet cream butter
2 onions, peeled and chopped
6 cups chicken broth
2 pounds carrots, peeled and sliced
2 tablespoons grated fresh ginger
1 cup whipping cream
Salt and white pepper
Sour cream
Parsley sprigs, for garnish

Steps:

  • In a 6-quart pan, over medium high heat, add butter and onions and cook, stirring often, until onions are limp. Add broth, carrots, and ginger. Cover and bring to a boil. Reduce heat and simmer until carrots are tender when pierced.
  • Remove from heat and transfer to a blender. Don't fill the blender more than half way, do it in batches if you have to. Cover the blender and then hold a kitchen towel over the top of the blender*. Be careful when blending hot liquids as the mixture can spurt out of the blender. Pulse the blender to start it and then puree until smooth. Return to the pan and add cream, stir over high heat until hot. For a smoother flavor bring soup to a boil, add salt and pepper, to taste.
  • Ladle into bowls and garnish with dollop sour cream and parsley sprigs.

GINGER-GLAZED CARROTS

Ginger-Glazed Carrots image

The easiest, yummiest carrots you will ever eat! The recipe is just so quick and easy to make. My husband grew up hating carrots, but he is willing to try anything. When he tasted these, he asked, "What in the world did my mother do to carrots to make them so bad? These are delicious!" He now requests them ... usually about twice a week.

This light, flavorful carrot ginger soup is vegan! It's made with pantry staples and comes together in a hurry, yet always seems to impress. Fresh ginger makes a big difference-and what isn't used can be wrapped tightly and tossed in the freezer to use later. -Jenna Olson, Manchester, Missouri

GINGERED CARROTS

I first made this original recipe about 40 years ago, and it hasn't failed me yet. The thing I like about the dish is that it isn't plain. The flavorings dress up an "ordinary" vegetable, and put some real zip in any meal! This is an easy, quick dish to make, and it adds a splash of color to your table.

ZESTY CARROT & GINGER LOAF

Zesty carrot & ginger loaf image

Lovers of ginger cake and carrot cake should enjoy this one. It mellows and improves over a couple of days

Provided by Jane Hornby

Categories     Afternoon tea, Treat

Time 1h25m

Yield Cuts into 8 slices

Number Of Ingredients 14

100g unsalted butter , plus extra for the tin
100g dark muscovado sugar
50g black treacle
50g golden syrup (or use more black treacle if you like your ginger cake really dark)
zest 1 orange
zest and juice 1 lemon
1 large carrot , grated (you will need 140g/5oz flesh)
5 balls stem ginger from a jar, finely chopped
175g self-raising flour
¼ tsp bicarbonate of soda
2 tsp ground ginger
¼ tsp freshly ground black pepper
2 eggs
140g icing sugar

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter then line a 900g loaf tin with a strip of baking parchment. Put the butter, sugar, treacle, syrup and half the zests into a large saucepan. Heat gently until everything has melted together.
  • Add the carrot, ¾ of the chopped ginger, all the flour, bicarb, ¼ tsp salt, the ground ginger, pepper and eggs to the pan and stir well until you have a smooth batter. Pour into the tin and bake for 45 mins, or until dark brown and risen and a skewer inserted into the middle comes out clean. Cool for 20 mins in the tin, then turn out onto a wire rack.
  • Sift the icing sugar into a bowl, add the remaining zests, then stir in enough lemon juice (about 4 tsp should do it) to make a smooth, thick icing. Cover the surface of the icing with cling film until ready to decorate the cake.
  • When the cake is completely cool, spread the icing over the top and let it dribble down the sides. Scatter with the reserved chopped ginger. Allow to set, then cut into slices and serve.

  • First, scrub/clean your carrots* well. I tend to do this immediately after buying them, so I don't have to do this each time I want to use a carrot.
  • To prepare the ginger, first, scrub it well to clean it ( optionally, you can peel it- though organic ginger can be left unpeeled).
  • If you want to make this juice with a (high-speed) blender, then you'll need to peel and chop the carrots into 1-2" pieces, add the chopped, peeled ginger, and then add around 1/4-1/2 cup of water to the blender too ( to help it blend without diluting the juice TOO much).Blend it until pureed. It will look like a thick smoothie consistency.
  • Carrot juice is best consumed immediately for the highest amount of nutrients. Though you can store leftover carrot ginger juice in an airtight container in the fridge for up to two days if needed. You can freeze the juice too - though it separates when thawing so is then best used for culinary uses like dressings, etc. You could also pop a few of the carrot ginger juice ice-cubes into smoothies.
