Hands down, this is the best quiche I've ever tasted! The family that I cook for call it "KizziQuiche"... from Allrecipies.com. I've tried it using low-fat ingredients also, with great success!

1/2 cup butter
1 teaspoon bottled minced garlic
1 small onion, chopped
12 ounces shredded sharp cheddar cheese, divided
1 cup milk
4 eggs, lightly beaten
salt & pepper, to taste
1 (10 ounce) box frozen chopped spinach, thawed & squeezed dry
6 ounces feta cheese with dried basil and tomato, crumbled
1 (4 ounce) jar sliced mushrooms, drained
1 frozen deep dish pie shell, slightly thawed

Steps:

  • Heat oven to 375°F.
  • In large skillet, saute onion and garlic in butter, app. 5 minuets or until just soft. Remove from heat.
  • Stir in 6 oz. cheddar, the feta cheese, mushrooms, and spinach. Mix well; place into pie crust.
  • In medium bowl, whisk together the eggs, milk, salt, and pepper. Pour over spinach mixture, poking holes to allow the egg mixture to seep inches.
  • Bake 15 minutes. Top with remaining 6 oz. cheddar, continue baking 40 minutes, or until knife inserted in center comes out clean.

This is a basic recipe that can be adapted to your tastes, or (more likely, in my case) what's getting old in the fridge. To make it easier, I use a bought pie crust, but homemade would definitely make it better!

1 (9 inch) pie crust
3 eggs
1 ½ cups milk
1 tablespoon all-purpose flour
½ cup chopped onion
½ cup sliced fresh mushrooms
½ cup chopped fresh spinach
½ cup broccoli florets, chopped
¼ cup crumbled Greek feta
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Line pie pan with pie crust, and place a double layer of aluminum foil over the crust. Bake in the preheated oven for 5 minutes, and then remove foil. Continue baking until crust begins to set, about 5 to 7 minutes; remove from oven. Reduce oven temperature to 350 degrees F (175 degrees C).
  • In a mixing bowl, beat eggs with milk and flour. Stir in onion, mushrooms, spinach, broccoli, and feta cheese. Season with salt and pepper. Pour mixture into hot crust.
  • Bake quiche at 350 degrees F (175 degrees C) for 45 minutes to one hour. Quiche is done when knife inserted in center comes out clean. Cover edges of crust with foil if crusts begin to brown too quickly.

Packed with antioxidants, carrots add crunch and natural sweetness to this dish. Low in calories and fat, this salad gets better as it sits and it doubles as a crunchy, fresh topper for a turkey sandwich.

3 medium carrots
2 tablespoons roughly chopped fresh cilantro
1 1/2 tablespoons extra-virgin olive oil
2 teaspoons honey
Kosher salt
Juice of 1 lime
1/4 cup crumbled feta cheese
2 tablespoons chopped toasted almonds
2 tablespoons finely chopped dates

Steps:

  • Thinly slice the carrots into ribbons using a vegetable peeler or mandolin, including any remaining "stubs" of carrot. Soak in ice water until the ribbons firm up and curl, about 15 minutes. Drain and pat dry.
  • Whisk together the cilantro, olive oil, honey, 1/2 teaspoon salt and the lime juice in a medium bowl. Add the carrots along with the feta cheese, almonds and dates, and toss until evenly combined. Serve immediately, or let the salad marinate a bit before serving.

3 cups all-purpose flour
1/2 teaspoon salt
8 ounces unsalted butter, cold,cut into small pieces
1 large egg
6 -8 tablespoons ice water
3/4 cup shredded gruyere cheese (or Swiss or whatever)
2 (10 ounce) packages frozen spinach, thawed
1 tablespoon unsalted butter
2 tablespoons olive oil
1/4 cup finely diced onion
1 cup diced scallion, green and white part
1 clove garlic, minced
2/3 cup chopped fresh dill
1 teaspoon fresh ground black pepper
3 large eggs
1 cup half-and-half cream
1/2 cup heavy cream
6 ounces feta
brined kalamata olive, for garnish
1 sprig dill, for garnish

Steps:

  • Pastry- put all the dry ingredients into the food processor.
  • Pulse a few times, then add the butter, then pulse a few more times until the butter is in pea sized chunks.
  • Beat the egg into 3 tbl.
  • of the water and add to the mix, pulsing a few more times.
  • Add more water as needed to get the dough to just come together, a tablespoon at a time, pulsing after each addition.
  • Turn the dough out onto plastic wrap, knead once or twice, pat flat and chill for about an hour.
  • Pull out of the fridge, roll out on a floured board until it will fit into the tart pan (or the standard springform pan, with 2 inches of dough going up the side).
  • Trim the edges, prick the bottom several times with a fork, and lay a piece of foil across the bottom weighted down with beans or pennies.
  • Blind bake at 425 degrees or about 8 minutes or so, remove the foil and beans, bake a few minutes longer or until the crust gets rid of any sheen and looks dull.
  • Remove from the oven, sprinkle with the gruyere, and set aside.
  • Decrease the oven heat to 375 degrees.
  • Filling: Drain the spinach and squeeze it dry.
  • Saute the onion and scallions and a small pinch of kosher salt in the butter and oil until soft.
  • Add the spinach and saute until completely wilted, (about 3 minutes or so).
  • Add the dill and pepper and saute another 2 minutes.
  • Set the mixture aside to cool completely.
  • Whisk the eggs, then add the half-n-half, the cream and mix well.
  • Crumble the feta into the spinach, then add to the cream mixture.
  • Mix until well combined, the pour into the prepared tart shell.
  • Place the tart pan on another baking sheet and bake until the filling is slightly puffed, light brown, and a tester inserted in the center comes out clean, about 40 minutes.
  • Remove from the oven and let stand 10 minutes before removing from the tart pan.
  • Garnish with olives and dill sprigs.

1 frozen puff pastry sheet
2 tablespoons oil
1 onion, cut into half and thinly sliced
2 bunches of rainbow chard leaves, washed and roughly chopped
4 eggs
3/4 cup heavy cream
fresh ground pepper
fresh ground nutmeg
8 ounces feta cheese

Steps:

  • Roll the puff pastry dough to fit the gratin dish and bake for 15 minutes at 400°F After it's done, lower the oven temperature to 375°F and place the pie pan on a wire rack to cool.
  • Saute the onion and the chopped chard stem with olive oil over a medium heat for about 8 minutes or so until the onion is soft and starting to caramelize.
  • Add the chopped chard leaves, cook for 8 more minutes over a medium high heat until the liquid is evaporated.
  • Add a third of the cheese on the bottom of crust until it's all covered, top with the vegetable mixture and then cover with the remaining cheese.
  • Mix together the eggs with the heavy cream and season with freshly ground pepper and nutmeg.
  • Pour over the vegetable mixture and cheese.
  • Bake for 30-35 minutes and cool on a wire rack for about 10-15 minutes before slicing.

3 cups all-purpose flour
1/2 teaspoon salt
16 tablespoons chilled unsalted butter, cut into small pieces
1 egg
6 -8 tablespoons ice water
3/4 cup swiss cheese, shredded
frozen spinach, thawed and chopped
1 tablespoon unsalted butter
2 tablespoons olive oil
1/4 cup yellow onion, finely chopped
10 green onions, chopped
1 garlic clove, minced
2/3 cup dill, chopped
1 teaspoon fresh ground pepper
3 eggs
1 cup half-and-half
1/2 cup heavy cream
1/4 lb feta cheese
1/4 cup kalamata olive, pitted and chopped

Steps:

  • To make the pastry, in a bowl, stir together the flour and salt. Add the butter and, using a pastry blender, cut it in until the mixture resembles coarse meal. In a small bowl, using a fork, beat the egg with 2 Tbs. of the ice water. Make a well in the flour mixture and pour in the egg mixture and 2 more Tbs. ice water. Using the fork, mix lightly, adding more ice water as needed until the mixture holds together. Pat into a ball, wrap in plastic wrap and refrigerate for 1 hour.
  • On a floured pastry board or other work surface, roll out the pastry into a round about 13 inches in diameter. Transfer to an 11-inch tart pan with a removable bottom, turn under the edges to make them flush with the pan rim, and prick the bottom in several places with a fork. Press a piece of aluminum foil, shiny side down, onto the crust, and freeze for about 30 minutes.
  • Preheat an oven to 425°F
  • Bake the foil-lined pastry shell for 8 minutes. Remove the foil and continue baking until the crust looks dull, about 4 minutes more. Remove from the oven, sprinkle with the Swiss cheese, and reduce the oven temperature to 375°F
  • Meanwhile, make the filling: Drain the spinach and squeeze dry. In a large sauté pan over medium heat, melt the butter with the olive oil. Add the yellow and green onions and garlic and sauté until soft, about 4 minutes. Add the spinach and sauté, stirring, until completely wilted, about 3 minutes. Add the dill and pepper and continue sautéing for about 2 minutes more. Taste and adjust the seasonings; the mixture should taste peppery. Let cool for 5 to 6 minutes.
  • In a pitcher or bowl, whisk the eggs until blended, then whisk in the half-and-half and cream. Crumble the feta cheese into the spinach and stir in the egg mixture. Pour into the prebaked shell.
  • Bake until the filling is puffed and light brown and a knife inserted into the center comes out clean, 35 to 40 minutes. Remove from the oven and let stand for 5 to 10 minutes. Garnish with the olives and serve.
  • Serves 6.

1 1/2 cups green peas (about half a 1-pound bag)
1 bunch fresh mint leaves
3/4 cup feta cheese, crumbled (about 6 ounces)
1 unbaked 9-inch deep dish pie pastry
6 large eggs
3/4 cup milk
1 tablespoon unbleached all-purpose flour
1/8 teaspoon salt
fresh ground black pepper
3 tablespoons green onions, finely minced

Steps:

  • Preheat the oven to 375°F.
  • Place the peas in a colander and run them under room-temperature water for about 30 seconds to defrost. Shake to drain, then leave the colander in the sink for a few minutes to drain further.
  • Pull about 10 mint leaves from the bunch, and cut them into tiny strips with a sharp knife. Set aside the rest of the bunch - you'll need it a little later.
  • Scatter the crumbled feta into the pie crust. Shake the peas in the colander a couple more times, then dump them into the crust on top of the cheese. Tilt and gently shake the pie pan a few times to evenly distribute the peas.
  • In a medium bowl, whisk together the eggs, milk, flour, salt, and a few grinds of black pepper. Stir in the scallions and minced mint.
  • Pour the egg mixture carefully over the feta and cheese - filling right up to the top of the crust. (If it doesn't all fit, don't force it inches Maybe save it and add to your scrambled eggs for tomorrow's breakfast.).
  • Carefully transfer the pie to a baking tray (this is your insurance policy against possible spills) and place the tray in the center of the oven. Bake for about 1 hour, or until the crust is golden, the filling is puffed up and the top surface feels tender but solid when you (carefully!) touch it with a finger tip. If the edges of the crust become too dark before the hour is up, cover the quiche very loosely with aluminum foil to protect it.
  • Remove the tray from the oven and let the quiche rest for 10 minutes before serving. During this time, cut the remaining mint leaves and use these to top each serving.

1 leek, sliced, rinsed, and thoroughly drained

  • Bake for 35-45 minutes, or until set.
