CARROT AND CHEESE CRUSTLESS QUICHE



Carrot and Cheese Crustless Quiche image

This is a sneaky way to get kids to eat carrots! The mozzarella makes this taste so heavenly. You can also use zucchini in place or (or in addition to) the carrots. It makes 12 baby (12 month and up) servings and 4 adult servings. This recipe comes from Better Baby Food.

1 tablespoon butter or 1 tablespoon margarine
1/2 small onion, finely chopped
1 cup grated carrot
1/2 teaspoon salt
1/2 teaspoon curry powder (optional)
4 eggs
2/3 cup milk
1 cup shredded mozzarella cheese
paprika (optional)

Steps:

  • In a skillet, heat butter over medium heat. Add onion and saute for 5 minute
  • Add carrots, salt and curry powder. Cook for 5 minutes or until golden brown.
  • Remove from heat and cool.
  • In a medium bowl, whisk together eggs and milk. Stir into veggie mixture.
  • Pour into greased 8x8 pan. Bake at 300 for 20 minutes.
  • Top with cheese and paprika. Return to oven and bake for another 15 minutes or until custard is firm and cheese is melted.
  • Cut into square and serve.

This is a basic recipe that can be adapted to your tastes, or (more likely, in my case) what's getting old in the fridge. To make it easier, I use a bought pie crust, but homemade would definitely make it better!

1 (9 inch) pie crust
3 eggs
1 ½ cups milk
1 tablespoon all-purpose flour
½ cup chopped onion
½ cup sliced fresh mushrooms
½ cup chopped fresh spinach
½ cup broccoli florets, chopped
¼ cup crumbled Greek feta
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Line pie pan with pie crust, and place a double layer of aluminum foil over the crust. Bake in the preheated oven for 5 minutes, and then remove foil. Continue baking until crust begins to set, about 5 to 7 minutes; remove from oven. Reduce oven temperature to 350 degrees F (175 degrees C).
  • In a mixing bowl, beat eggs with milk and flour. Stir in onion, mushrooms, spinach, broccoli, and feta cheese. Season with salt and pepper. Pour mixture into hot crust.
  • Bake quiche at 350 degrees F (175 degrees C) for 45 minutes to one hour. Quiche is done when knife inserted in center comes out clean. Cover edges of crust with foil if crusts begin to brown too quickly.

This yummy savoury quiche is an adaption of a carrot herb quiche found in Christina Richon's Quiches, Cakes and Tartes Book. Its cheesy, but not too heavy with a wonderful fresh taste from the tomato sauce and carrot. The crust ist aromatic and crunchy. I hope youll enjoy this as much as we do! :)

Number Of Ingredients 21

150 g flour (I used spelt flour)
50 g whole wheat flour (I used whole spelt)
50 g cold butter, diced
100 ml tomato sauce (plain, nothing added)
2 tablespoons poppy seeds
1/8 teaspoon ground nutmeg
1/4 teaspoon herb infused salt
1 large carrot, grated coarsely
1/4 teaspoon dried rosemary
2 tablespoons chives (dried or fresh)
1/2 teaspoon curry powder
1/2 teaspoon garam masala
1/2 teaspoon cayenne pepper (use less if your heat tolerance is low)
1/8 teaspoon herb infused salt
black pepper
4 tablespoons cornmeal (or use semolina)
2 eggs (medium)
100 g tomato paste
250 g cream cheese (low-fat is fine)
250 g ricotta cheese (I used low-fat)
150 g cheddar cheese, grated coarsely (or use a mix of your favs)

Steps:

  • In a big bowl combine the flours. Rub in butter using your fingertips. Add tomato sauce, poppy seeds, nutmeg and salt and knead into a smooth dough.
  • Wrap in cling film and chill for 30 minutes.
  • Meanwhile put all of the filling ingredients into a big bowl and stir together with a spoon until well combined.
  • Remove dough from fridge and roll out to fit a 11 inch spring form pan. Pat into the greased pan making sure that dough also covers the sides of the pan.
  • Pour in filling and bake in the preheated oven at 200°C/400°F for 45 minutes covering the quiche after 25 minutes.
  • Allow to stand for 5-10 minutes before slicing. Enjoy! :).
