2 cups carrots, peeled and shredded *(see first note)
2 cups red cabbage, shredded
1/2 cup green onions, thinly sliced
1/3 cup curly-leaf parsley, finely chopped
1/4 cup plain Greek yogurt (preferably 0% fat)
2 tbsp apple cider vinegar
2 tbsp pure maple syrup
1/2 tsp sea salt
1/4 tsp freshly cracked black pepper

Steps:

  • Place the prepared coleslaw ingredients in a large bowl.
  • Add the dressing ingredients to the coleslaw ingredients.
  • Give the ingredients a good toss to evenly distribute.
  • Taste and adjust for flavour preferences such as adding more Greek yogurt for additional tanginess or more apple cider vinegar for more acidic flavour. Enjoy!

Easy Apple-Carrot Coleslaw image

This delicious, creamy coleslaw is kind to your waistline because the dressing has been lightened a bit. The addition of apples (Granny Smiths and Macintoshes are great!) and carrots sweetens the salad nicely.

1 (12 ounce) package shredded coleslaw mix
4 ½ cups shredded red cabbage
3 tablespoons coarse kosher salt
2 tablespoons apple cider vinegar
2 large apples, cored
2 large carrots, grated
½ cup fat-free mayonnaise
½ cup fat free sour cream
1 teaspoon celery seed
ground black pepper to taste

Steps:

  • Place a large colander into the sink. Place the coleslaw mix and red cabbage into the colander. Sprinkle lightly with salt, toss, and allow to stand 15 minutes.
  • Pour the vinegar into a large bowl. Grate apples into the bowl and toss with vinegar to keep from turning brown. Stir in the grated carrots, mayonnaise, sour cream, and celery seed until evenly coated. Season with black pepper to taste.
  • Rinse the coleslaw mix and cabbage with very cold water; drain, pressing out as much water as possible. Taste, and if still too salty, repeat the process. Pat dry with paper towels. Stir coleslaw and cabbage into apple mixture, and toss to coat evenly with dressing. Chill until ready to serve; stir before serving.

1 cup shredded carrot
¼ cup low-fat creamy salad dressing (such as Miracle Whip Light®)
1 teaspoon white sugar
salt and ground black pepper to taste

Steps:

  • Place zucchini in a colander and let drain thoroughly, about 30 minutes. Toss with carrot in a large salad bowl; stir in creamy salad dressing and sugar. Chill the coleslaw for 1 hour to blend flavors, stir again, and season with salt and black pepper.

Pinch kosher salt
1/3 cup sugar
1/2 cup canned, crushed pineapple, drained thoroughly of all liquid
1/2 cup raisins
2 teaspoons curry powder
1 teaspoon minced garlic
Pinch celery seed and/or caraway seed, optional

Steps:

  • Wash the carrots and peel, if necessary. Using a vegetable peeler, cut the carrots into wide noodle-shaped strips.
  • In a large mixing bowl whisk together the mayonnaise, salt, sugar, pineapple, raisins, curry powder, garlic, and celery seed and/or caraway seed, if using. Add the carrots and toss to combine. Serve immediately or refrigerate for 1 hour to serve cold.

1 medium onion, finely minced
1 carrot, minced (or grated)
1/2 bell pepper, finely minced
1/4 cup sweet pickle juice
1/4 cup white vinegar
1 tablespoon dill pickles, minced or 1 tablespoon pickle relish
1 cup mayonnaise
2 tablespoons sugar
1/4 teaspoon black pepper
1 teaspoon salt

Steps:

  • Mix all ingredients in large bowl. Chill till ready to serve. Serves 10-12.
  • Note: I slightly change the amounts of ingredients for my personal preference and a tarter flavor. I use ½ medium sweet Vidalia onion instead of 1 medium onion and ¼ cup apple cider vinegar instead of ¼ cup white vinegar. Also, I increase other ingredients as follows: 2 carrots, ½ teaspoon black pepper, ¾ cup sweet pickle juice, 1 ½ cups of full fat mayonnaise. I strongly recommend using only full fat mayonnaise and not light mayonnaise because the acid in the pickle juice and vinegar break down the light mayonnaise into a watery consistency which is not desirable.
