1 Large Rutabaga
Salt & Pepper

Steps:

  • Peel and dice the rutabaga.
  • Place a cup of water in the bottom of your Instant Pot. Add the steamer shelf (trivet), then the steamer basket and then place your diced rutabaga into the basket.
  • Season the rutabaga with salt and pepper.
  • Place the lid on your Instant Pot, set the valve to sealing and then cook for 4 minutes on manual.
  • When the Instant Pot beeps manually release pressure.

Carrot and Swede Mash is an incredibly versatile vegetable dish. It is very satisfying and a great option if you are avoiding heavy carbs. Using the Instant Pot is a great way to make Carrot and Swede Mash as you can get it on the table in just 20 minutes.

1 swede (800g)
500 g carrots (peeled and chopped roughly)
250 ml chicken stock (or vegetable stock or water)
50 g unsalted butter
¼ teaspoon kosher salt
¼ teaspoon ground black pepper

Steps:

  • Place the peeled and diced carrot and swede in the bottom of the Instant Pot.
  • Pour over the stock.
  • Place the lid on the Instant Pot and set the valve to sealed.
  • Press Pressure Cook and set the timer for 8 minutes.
  • When the timer goes off, turn off the Instant Pot.
  • Quick release the pressure from the pot.
  • Drain the carrot and swede and return to the Instant Pot.
  • Add the butter, salt and pepper and mash until relatively smooth.
  • Serve straightaway, sprinkled with parsley if you like.

3 carrots , diced
25g unsalted butter

Steps:

  • Place the potatoes, swede and carrots in a large pan of salted water. Bring to the boil and cook for 20-25 mins until tender. Drain and mash with a potato masher. Add the butter and a generous amount of seasoning.

  • Press Manual button and set time to 5 minutes. (Note: It will take about 15 minutes for Instant Pot to build pressure and heat before 5 minutes cook time begins).
  • After 5 minutes, allow to slow release for 2 minutes before turning release knob to venting setting (quick release). Be careful to not burn yourself on the steam when releasing knob (use tongs).
  • Carefully drain potatoes and carrots in a colander and place back into insert. Mash with until mostly smooth. Add, salt and pepper and stir well.
