Steps:
- Peel and dice the rutabaga.
- Place a cup of water in the bottom of your Instant Pot. Add the steamer shelf (trivet), then the steamer basket and then place your diced rutabaga into the basket.
- Season the rutabaga with salt and pepper.
- Place the lid on your Instant Pot, set the valve to sealing and then cook for 4 minutes on manual.
- When the Instant Pot beeps manually release pressure.

- Place the peeled and diced carrot and swede in the bottom of the Instant Pot.
- Pour over the stock.
- Place the lid on the Instant Pot and set the valve to sealed.
- Press Pressure Cook and set the timer for 8 minutes.
- When the timer goes off, turn off the Instant Pot.
- Quick release the pressure from the pot.
- Drain the carrot and swede and return to the Instant Pot.
- Add the butter, salt and pepper and mash until relatively smooth.
- Serve straightaway, sprinkled with parsley if you like.

- Place sweet potatoes and carrots into Instant Pot insert. Add broth. Close lid (make sure release valve is set to “sealing”).
- Press Manual button and set time to 5 minutes. (Note: It will take about 15 minutes for Instant Pot to build pressure and heat before 5 minutes cook time begins).
- After 5 minutes, allow to slow release for 2 minutes before turning release knob to venting setting (quick release). Be careful to not burn yourself on the steam when releasing knob (use tongs).
- Carefully drain potatoes and carrots in a colander and place back into insert. Mash with until mostly smooth. Add, salt and pepper and stir well.
