THAI CURRY TACOS

Thai Curry Tacos image

These tacos take a traditional Mexican staple and puts a Thai twist on them with a traditional curry, bean sprouts, and Thai Basil leaves. Easy to cook, and easy to impress!

Provided by thestarvingasian

Categories     Curries

Time 2h30m

Yield 6 serving(s)

Number Of Ingredients 25

6 flour tortillas
1 lb beef chuck or 1 lb beef brisket
1/2 regular size can coconut milk
1 stalk lemongrass, roughly chopped
1 onion, peeled and roughly chopped
4 garlic cloves
1 knob galangal (can substitute with ginger)
3 red chilies, remove seeds
3/4 tablespoon tamarind paste
1 tablespoon dark soy sauce
4 tablespoons fish sauce
1 tablespoon brown sugar
1 pinch turmeric
1 tablespoon ground coriander
1 tablespoon ground cumin
1 1/2 teaspoons ground cinnamon
1 pinch nutmeg
1 pinch clove
1 teaspoon shrimp paste (can substitute with 1 additional tbsp of fish sauce)
salt and pepper
2 -3 bell peppers, deseeded, sliced thinly
1 onion, sliced thinly
bean sprouts
Thai basil
lime

Steps:

  • Place all the curry ingredients into a food processor/blender (except the meat). Blend until the ingredients turn into a smooth paste and a fragrant scent is released. Taste test the sauce to see if the seasoning is to your liking. If too sour, add more brown sugar; if not salty enough, add more fish sauce; if not spicy enough, add more chili, etc.
  • Season all sides of the beef with salt and pepper. Make sure to season aggressively because the beef has a large surface area, so you need more seasoning to create a solid foundation of flavor.
  • Take a medium sized pot (or a pot just large enough to fit the beef) and put it over high heat. Put around ¼ cup of olive oil in the pot, and wait until you can see smoke from the oil. That means the oil is hot enough to start searing the beef. Put the beef in the pan, and sear on all sides (around 1 minute on each side).
  • Once your beef is seared, pour in the curry paste. If the paste does not cover the beef, add water until the beef is covered. Turn the heat down to low and simmer for 1 hour, or until the beef is tender. You'll know when the beef is tender when you can pull it apart with a fork with ease.
  • Once the beef is tender, take the beef out and shred the beef with 2 forks. Pull the beef apart to create these strands of beef, which is going to create a great texture to your beef. Once the beef is done, place back into the pot and simmer until your curry thickens a bit and darkens in color (around 30 minutes). This lets the meat and curry flavors really intensify and develop.
  • Saute the peppers and onions in a pan over medium - low heat with ¼ cup of olive oil. Season with salt and pepper. The peppers and onions will be done when the onions are a translucent color, around 20 minutes.
  • Take your flour tortillas (use however many you want to eat) and put them in a dry pan over medium heat. Flip them after 1 minute so that they heat up and get a bit of color on them. Take them off the heat.

PUMPKIN SOUP WITH CURRY AND BASIL

Pumpkin Soup With Curry and Basil image

My sis and me came up with this soup one day, cause we had to use up some fresh basil so that it would not go to waste. Its an unusual combination, but very tasty. Spicy and warming with a fresh green touch from the basil. I hope youll enjoy it! :) You may use any pumpkin/squash you like, but please note that hokkaido squash has an edible peel. If your squash does not, make sure to peel it.

Categories     Vegetable

Time 50m

Yield 4 serving(s)

Number Of Ingredients 9

2 tablespoons oil
1 teaspoon sesame oil
4 -6 teaspoons curry powder (use as much as you feel youd like)
1 big garlic clove, minced
3 small spring onions, sliced
1 medium hokkaido squash, diced (ca. 950 g prepared)
1 1/3 liters hot water, might need more
salt and pepper
10 leaves fresh basil, chopped

Steps:

  • Heat oil and sesame oil in a big cast iron pan.
  • Add curry powder and garlic. Saute for a minute or so until curry is fragrant and garlic lightly browned. Add onions and squash/pumpkin and saute a little longer.
  • Pour over enough hot water to cover veggies. Let simmer covered for about 30 minutes until squash/pumpkin is tender (This step might take longer depending on what type of squash/pumpkin you use).
  • When everything is done, puree soup to desired consistency using a hand-held blender. You might need to add more water.
  • Season with salt and pepper to taste.
  • Just before serving add a tbs or so of the chopped basil to each bowl of soup.

EASY BEEF CURRY

Easy Beef Curry image

The beef curry I make is kind of a mix between Indian curry and Thai curry. It sounds a little odd, but we absolutely love it! It reheats well, too, and it can be made ahead and kept hot in a crock pot. It is a very saucy curry; if you don't like a lot of sauce, then cut back to one can of coconut milk. The toppings are only suggestions--pick and choose what you like or try something new!

Provided by Halcyon Eve

Categories     Curries

Time 1h30m

Yield 6-8 serving(s)

Number Of Ingredients 13

3 -4 tablespoons vegetable oil
2 onions, peeled and thinly sliced
2 -3 lbs beef top round steak, cut into 1-inch cubes
3 -4 tablespoons Madras curry powder (we prefer Green Ship brand, which we buy at the local Indian market)
water
2 (14 ounce) cans coconut milk (light or regular, but not coconut cream)
hot jasmine rice (or whatever kind of rice you like) or basmati rice (or whatever kind of rice you like)
chutney (I like mango chutney)
chopped hard-boiled egg (separate white and yolk for a nicer presentation)
chopped green onion
raisins (we use golden raisins)
chilled canned mandarin oranges, drained
roasted peanuts or roasted cashews

Steps:

  • In a large, deep skillet or chef's pan, heat oil over medium-high heat until hot but not smoking. Saute onions until tender. Add curry powder, toss to coat, and cook 1-2 minutes longer.
  • Add beef and brown 3-4 minutes, scraping pan often. If curry powder sticks to bottom, add a little water to deglaze whenever needed to prevent scorching.
  • Add about 1 pint of water and mix in, scraping any bits off the bottom of the pan in the process. Bring just to a boil, reduce heat to low, and simmer, uncovered, for about 45 minutes to 1 hour, or until most of the water has cooked off.
  • Remove from heat and stir in both cans of coconut milk. Return to heat and heat over medium-low heat until just beginning to simmer.
  • Serve in bowls over rice, with desired toppings.

CHICKEN AND THAI BASIL DUMPLINGS

Chicken and Thai Basil Dumplings image

I love these dumplings, though not authentic Thai food, they still taste fantastic. You can find Thai basil usually at your local asian market, it has purplish stems. This recipe originates from a restaurant in New York famous for dumplings.

Categories     Chicken

Time 1h

Yield 3 1/2 dozen dumplings, 4-6 serving(s)

Number Of Ingredients 20

1 lb ground chicken breast
2 ounces bean thread noodles, blanched and chopped
1 cup grated carrot, squeezed dry
1/4 cup loosely packed fresh Thai basil, chopped
1/4 cup scallion top, cut on the diagonal
1 garlic clove, finely chopped
1 tablespoon green curry paste (preferably Maeploy brand)
3 tablespoons fish sauce
2 1/2 tablespoons sugar
coarse salt
fresh ground black pepper
3 tablespoons coconut milk
1 (42 count) package round white dumpling wrappers
1/2 cup smooth peanut butter
1/4 cup sriracha sauce
1 (14 ounce) can coconut milk
2 tablespoons fish sauce
1/4 cup dark brown sugar
coarse salt
fresh ground black pepper

Steps:

  • 1. Prepare the filling; Combine all of the ingredients listed above the dumpling wrappers in the ingredients list, in a medium bowl. Bring a small saucepan of water to a boil. Add 1 teaspoon filling, and cook until no longer pink. Taste, and adjust the seasoning, if necessary.
  • 2. Place a dumpling skin on work surface. Using your finger, wet around the edges with water. Place 1 ½ tablespoons filling in the center. Fold dumpling skin over to enclose. Pinch the edges together to form a half moon. Pleat the rounded edge. Set aside. Repeat with remaining filling and wrappers.
  • 3. Prepare dipping sauce; Combine all the ingredients after the dumpling wrappers in the ingredients list in a small saucepan. Heat gently, whisking, until emulsified. Be sure not to boil. Set aside to cool.
  • 4. Just before serving, bring a large pot, fitted with a steamer insert lined with lightly oiled parchment paper with a few holes poked in it, to a simmer. Add dumplings and simmer until cooked through, 5 to 7 minutes.

CARIBBEAN CARROT-GINGER SOUP

Caribbean Carrot-Ginger Soup image

I developed this recipe while in the Dominican Republic. Living in a small, rural beach town, I had to be resourceful with ingredients that were available and affordable. Carrots grow like crazy there, so this was an easy, delicious recipe that I used to make for my friends during the rainy season. It's the first recipe I really ever developed myself, and I still love it. Garnish as desired with microgreens, chopped chives, toasted sliced almonds, or chia seeds.
